Roasted Lemon Chicken with Potatoes and Rosemary

baby red potatoes

lemons (1 sliced and 1 juiced)

olive oil

garlic (minced)

rosemary

red pepper flakes

salt

pepper

Preheat oven to 400 degrees F.

Spray a glass 13-in. x 9-in. baking dish with cooking spray. Arrange chicken pieces (skin side up), potatoes, sliced onion and lemon slices evenly in pan.

In a small bowl, whisk together lemon juice, olive oil, garlic, rosemary, crushed red pepper flakes, salt and pepper.

Pour mixture over chicken, making sure all the chicken is covered. Toss a bit if necessary.

Sprinkle generously with additional salt and pepper.

Bake uncovered for about 1 hour, or until chicken and potatoes are fully cooked.

Are you more likely to use ground beef or turkey in meatloaf?

This meatloaf was very bland. Ketchup was good so I made more just to give the meat some flavor. Definitely could use some more seasonings.

Made this today using ground turkey instead of beef. It turned out AMAZING. I was little weary about the ketchup but that was also excellent!!!

also I didn’t print out the pages, and saved a tree! I followed the recipe on my phone instead! 👍🏻

This Classic Meatloaf Recipe Will Make You Actually Want to Eat Meatloaf.

Chicken and vegetables seasoned with sage, rosemary and balsamic vinegar, then baked in the oven. A delicious healthy meal-in-one.

Balsamic Chicken With Roasted Vegetables

4 oz each boneless skinless chicken thighs, trimmed of fat

black pepper (to taste)

cooking spray

asparagus

red bell peppers

red onions (chopped in large chunks)

carrots (sliced in half long, cut into 3-inch pieces)

oz sliced mushrooms

balsamic vinegar

extra virgin olive oil

garlic

tsp sugar (omit for whole30, keto, paleo)

tbsp dried oregano or thyme

sage (chopped)

Balsamic Chicken with Roasted Vegetables

Preheat oven to 425°F.

Season chicken with salt and pepper. Spray 2 large baking sheets with oil.

Combine all the ingredients together in a large bowl using your hands to mix well then arrange everything onto the prepared baking sheets spread out in a single layer.

The vegetables should not touch the chicken or it will steam instead of roast.

Bake about 20 to 25 minutes, rotating the pan top to bottom, or until the chicken is cooked through and the vegetables are roasted and tender.

90-93% turkey (may substitute ground chicken)

apples (any variety will work)

Turkey Sausage Patties with Apple

Combine turkey (or chicken), diced apple, spices, salt, and pepper in a mixing bowl. Mix thoroughly with a large spoon or your hands.

Using wet hands, form meat mixture into 12 small patties (Thin is good because they will shrink and fatten up in the pan a bit).

Heat a large skillet over medium-high heat. When the skillet is hot, add oil/fat (about ½ Tbsp. per batch of patties, depending on the size of your pan and whether or not it&#8217;s non-stick).

Add the patties to the pan, being careful not to overcrowd them or it&#8217;s difficult to flip them and they won&#8217;t brown as well. Cook for about 4-5 minutes per side until browned and no longer pink in the center.

Remove patties to a plate lined with a paper towel and repeat with remaining oil and turkey mixture.

Store in a covered container in the refrigerator for up to 4 days – may be frozen for longer storage.

Got this recipe emailed to me right on time! With my husband being sick, and me working two jobs, there was no time to go grocery shopping. And this recipe allowed me to utilize the stuff we already had at home to make an all-thumbs-up breakfast for, not only my ailing husband, but my roller-derby-bound daughter! Both were astounded at how successful "my" creativity turned out, especially with our limited ingredient supply! I did substitute pears for the apples (again, no time to shop), and all our ground turkey is blended with lean ground beef.  Still turned out DELICIOUS though! After devouring the sausage and eggs, my husband said he felt better than he had been in the prior days, and I felt really good knowing my daughter had an excellent breakfast in time to serve up the hits on the derby track!

I made these this morning and they are great!!!  I didn't have sage, so I used italian seasoning and followed directions.  I used ground turkey breast 97% fat free.  I will double or triple recipe next time!

Found this recipe in the midst of a frustrating stop in front of the breakfast sausage section of the grocery store, and it was exactly what I needed! Simple and delicious. I knew I didn't have fennel or onion or garlic powder at home, but I decided real garlic could work - totally did! The sausage patties turned out great, and I definitely recommend using sage. Thanks!

I loved the flavor of the sausage, however it turned out a bit dry for my taste. Perhaps I just overcooked it, but perhaps adding some fat or an egg to the mix would help with this?

NOTE: If you don’t like reviews by people who don’t follow recipes exactly, move on. 

I made these with some significant changes. First, I added carmelized red onions and chopped, steamed kale along with the apples. I doubled the spices, using both sage and Italian seasoning, but omitting the fennel. I also added half an egg. (I was baking apple oatmeal bread at the same time and had leftover egg wash, which I threw in with the sausage. Guess who went apple picking!) Lastly, I roasted a tray of these under the broiler, which solved the baking wan color problem discussed in a prior review, and allowed me to cook a whole batch at once. My broiler was set at 550, and I flipped them when they started to brown. 

These were phenomenal. The family reactions were “WOW!” And “It tastes like Fall on a plate!” I will definitely make these again. Next time I may try adding a bit of Dijon mustard to the mix instead of the Italian seasoning.

I had to remove the garlic due to allergies, but they came out great. I've just made them for the second time they have become a fast favourite in our house. I even doubled up the recipe to freeze extras.

This is one of my favorite go-to AIP (seasonings adjusted) breakfast sausages. Love love love these!

Whole30 BBQ Sauce

tomato sauce

c. balsamic vinegar

tbsp. coconut aminos

dijon mustard

Good. However, I backed off the vinegar just a little and added 2 Tbs powdered Swerve for sweetness. BBQ sauce should be a little sweet.

This was delish :) there is a lot of vinegar, but cooked down it lessens it, and makes it sweeter

Tender, flaky Whole30 Salmon. Flavored with cilantro and lime and topped with an easy avocado sauce, this baked salmon recipe is quick and delicious!

Whole30 Salmon

salmon

garlic (chopped, about 2 teaspoons)

lime

cauliflower rice (optional for serving)

avocados

hot sauce (to taste)

garlic (finely minced or grated)

cilantro (plus additional for serving)

tomato (seeded and small-diced, or 1 cup halved cherry or grape tomatoes)

Place a rack in the center of your oven and preheat the oven to 400 degrees F. Line a large rimmed baking sheet with aluminum foil or parchment paper. Arrange the salmon fillets in the center of the sheet.

In a small bowl or large measuring cup, whisk together the olive oil, garlic, lime zest, lime juice, salt, and pepper. Drizzle and brush generously over the salmon. (You will have some run off and down the sides, but brush what you can onto the fish.) Let the salmon stand at room temperature for 10 minutes while the oven finishes preheating.

Bake until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F, about 16 to 20 minutes.* Cover and let rest 3 minutes.

While the salmon bakes, prepare the avocado salsa: In a large bowl, stir together the avocado, lime juice, hot sauce, garlic, salt, pepper, and cilantro. With a fork, gently crush pieces of the avocado and stir. You want them to break down a little and make the salsa creamy, but you should have plenty of chunkiness remaining. Stir in the tomatoes. Taste and adjust seasoning as desired.

Transfer the salmon to serving plates. Serve hot, topped with avocado salsa and a sprinkle of fresh cilantro.

Whole 30 Salmon Recipe

Mouth wateringly delicious Roasted Potatoes and Asparagus is the BEST side dish! Herbed and roasted to perfection, nutritious and filling!

Roasted Potatoes and Asparagus

Cups Baby yellow potatoes, (halved (1.5 lbs))

Tbsp Olive oil ((divided))

tsp Rosemary leaves ((not fresh))

Salt

tsp Fresh garlic, (minced (divided))

tsp Ground thyme

Paprika

Bundles Asparagus

Tbsp Fresh parsley, (minced)

Pre heat your oven to 425 degrees.

In a large bowl, toss the potatoes with 1 Tbsp of olive oil until well coated. Add in the rosemary, salt, 1 1/2 tsp of the garlic, thyme and paprika and toss to coat.

Place onto a large baking sheet, cut-side down, and cover with tinfoil. Bake for 15 minutes.

While the potatoes cook, toss the asparagus with 2 tsp of olive oil and the rest of the garlic.

Once 15 minutes is up, spread the asparagus onto the pan. Additionally, drizzle the potatoes with the remaining oil and toss with a fork to coat.

Cover the pan and bake another 10 minutes. Then, uncover the pan and bake for 10-15 minutes, until the potatoes are soft and golden brown.

Sprinkle with fresh parsley and DEVOUR!

 Grilled Flank Steak Summer Salad Cilantro Lime Vinaigrette - the perfect meal that is healthy and bursting with flavor! Ready on your table in 30 minutes!

Grilled Flank Steak Summer Salad Cilantro Lime Vinaigrette

garlic (finely diced)

Teaspoon kosher salt

Teaspoon black pepper

cilantro

juice of 1 lime

oz flank steak

salt and pepper

avocado

purple onion (diced)

sugar snap peas

cherry tomatoes (halved)

yellow pepper (diced)

romaine lettuce

Combine Vinaigrette ingredients in food process and blend for 20-30 seconds.

Taste and make any necessary adjustments per your specific taste.

Place in refrigerator.

Season flank steak with salt and pepper.

Grill your steak on high heat for approx. 2 minutes per side and then move to a cool side and cover the grill.

Let steak continue cooking until it reaches your preferred doneness.

Remove from grill and let rest.

Add lettuce, asparagus, tomatoes, peas, onion, yellow pepper and avocado to your salad bowls.

Cut your steak into strips and place on salad.

Cover with your desired amount of vinaigrette.

Preheat oven to 400

In small bowl combine oil, chili powder, cumin, chili flakes, garlic, salt and pepper.

Toss chicken, veggies and oil mixture together on a large sheet pan with one inch edge.

Spread out evenly.

Bake for 25-30 minutes until chicken is cooked and the veggies are soft with a crispy edge.

Serve with tortillas, sour cream, avocado and all your favorite fajita fixins!

These all purpose turkey meatballs are perfect for a light weeknight dinner, an amazing snack, or even us for your weekly meal prep recipe. These are Paleo, Keto, Whole30, and Gluten Free.

Turkey Meatballs

Preheat oven to 375 F. Coat a rimmed baking sheet with nonstick cooking spray.

In a large mixing bowl, add the ground turkey, almond flour, salt, garlic, onion powder, oregano, pepper, and parsley. Stir well to combine.

In a small bowl, beat the egg, then add it along with the coconut aminos, onions and tomato sauce to the meat mixture. Mix together with hands until evenly combined.

Using a spoon, scoop the meat and shape into 1 1/2-inch meatballs (size of a golf balls).

Transfer and arrange on the prepared baking sheet. You should have about 18-20 meatballs total.

Brush the tops of the meatballs with the olive oil.

Bake for 15-20 minutes, or until the internal temperature of the meatballs read 165 F on a meat thermometer.

Serve as an appetizer or add a veggie and turn this into a complete meal. I love adding this on top of salads for a great meal-prep lunch option.

These were great. I’m new to keto so it’s been a challenge finding good recipes. This is a keeper! The meatballs are so tasty and moist. Just as good as real Italian meatballs.

This recipe is so easy, flavorful and a family favorite!

Delicious! I made some adjustments for what I had and they were fantastic. Made almond flour in my vitamix using smokehouse almonds from blue Diamond and a can of tomato sauce with oregano, garlic, and basil. Simple, holds together well, and definitely a new favorite. We served them over zoodles with some extra tomato sauce.
