Step 1
Cook potatoes in boiling water for 10-12 minutes or until just tender. Drain well.
Step 2
Heat a large frying pan over a medium heat. Add oil. When the oil is hot add onions and cook for 3-4 minutes. Add half the garlic and butter and heat until butter has melted.
Step 3
Combine cream and flour in a bowl and add to onions, stirring until combined. Pour in wine or stock. Bring to the boil, stirring continuously, until mixture has thickened then remove from heat.
Step 4
Whip remaining butter, remaining garlic, parsley and a generous pinch of salt in a bowl.
Step 5
Arrange a third of the potatoes in a baking dish. Pour over a third of the cream, scatter over a third of the cheese and dot over a third of the garlic butter. Repeat to make two more layers.
Step 6
Scatter over bread crumbs. Bake for 35-40 minutes or until the cheese is golden and bubbly.
