Preheat oven to 375 degrees.

Spray 8-inch baking dish with nonstick cooking spray. Set aside.

You will start by coring, peeling, and dicing the apples into into bite size pieces.

Then place cored, peeled, diced apples in a large bowl and toss with lemon juice.

In a medium mixing bowl combine, 1/2 cup flour, oats, 1/2 cup brown sugar, 1/2 tsp baking powder, 1/2 tsp cinnamon, and salt. Whisk until well combined.

Cut in 3 Tbsp of light butter into flour/oat mixture with pastry blender or fork until mixture forms into small crumbles. Refrigerate for 10 minutes.

Meanwhile, combine water, sugar substitute, cornstarch, cinnamon, salt, and nutmeg into a medium saucepan.

Whisk to combine then bring to a boil over medium heat. Stirring often.

Once it starts to boil, let it boil for a full two minutes-this will thicken the sauce.

Pour sauce into the bowl with the sliced apples. Stir to evenly coat apples in sauce.

Then place coated apples into prepared baking dish.

Sprinkle crumble topping evenly over apples.

Bake for 15-18 minutes or until apples are tender and topping is golden brown.

Let it cool for 5 minutes before serving.

Serve warm over light ice cream and drizzled with sugar free caramel sauce for additional points, if desired.
