Step 1
Rinse the rice in cold water until the water runs clear, at least 30 seconds. Then, put the rice and 2 cups of cold water in a saucepan and bring water to a boil. Immediately turn the heat to low, cover rice, and steam for 10 minutes. Remove from heat and let steam further while you prepare the other ingredients.
Step 2
In a small saucepan, dissolve sugar and salt in vinegar without boiling. Set aside. After the rice has rested for 10 minutes, fold in the vinegar solution.
Step 3
Let the rice cool to room temperature before proceeding to build the sushi.
Step 4
Place a sheet of nori on a cutting board. With moist hands, spread a thin layer of rice over the sheet. Spread cream cheese over the rice, then add a layer of smoked salmon. Add another sheet of nori and repeat the process, making three layers of rice, cream cheese, and salmon. Finish with a final nori sheet on top.
Step 5
Gently press the sushi to compress it. Slice off the rough edges, then cut the sushi into bite-sized squares like a sheet cake. Serve with optional pickled ginger and wasabi.
