Roasted Chicken & Red Potatoes

red potatoes,

(9 ounces) fresh spinach

onion,

olive oil

garlic cloves,

salt, divided

thyme

pepper, divided

chicken leg quarters

paprika

Okay first, I think where some people went wrong is that this is NOT a casserole - don't use a casserole dish. This is a sheet pan dinner. The sheet pan allows room for the air to flow around the chicken to allow it to bake thoroughly.  (Of course you may have to adjust depending on altitude.) That being said it is an excellent, easy recipe.  I like some of the additions that other reviewers used such as rosemary, kale, carrots.  So easy to tailor to your taste.  I will definitely make this again and again.

My new go-to for a quick, delicious and healthy meal for the family! Kids love it! The juices from the chicken marinate the veggies and create the most delicious flavor. I've tried many different vegetables and they all turn out great, Carrots need longer roasting time, but that's it. Excellent and easy meal!

Great recipe for a busy night!  So simple to put together and the results are yummy.  I used chicken drumsticks, since that's what I had on hand.  I used smoked paprika and substituted dried parsley for the thyme.  Baked a bit longer than an hour.  Next time I might add some seasoned salt, too.  One pan prep!  Love that!

I made adjustments I use garlic salt instead of minced garlic and sprinkledad on potatoes and chicken I also covered the dish with foil so chicken stayed moist. Instead of olive oil I used coconut oil. Dish was amazing all 6 kids liked it.

My mom makes this quite often so she’s got me wanting to try it. If she doesn’t have spinach she uses fresh kale out of her garden. She let me try some and it was amazing. Now I’m making it today.

Delicious recipe and very easy to prepare.  I had to extend the cooking time another 30 minutes and I mixed the spinach, onions and  garlic with the thyme and oil before I put it in the pan.

We loved this recipe.  And it was so easy.  Next time, I would add chicken broth because potatoes were a little dry.  I did add carrots and I used Trader Joe's everyday seasoning on the chicken.  I also added a little more paprika on the chicken.

Overall, this was Ok to good.  Knowing our family expects more intense flavors, I added rosemary (always good with potatoes and chicken) and even a bit of Cajun seasoning.  I increased the spinach for more nutrition.  Even so, it was a tad bland.  Like a few other reviewers, I also had to cook the casserole for an additional 20 minutes to finish cooking the potatoes.  I used both white and dark meat chicken to please different members of the household and with the extra time added, the white meat came out dry.  If I make this again, I will precook the potatoes for a few minutes in the microwave before mixing with the other veggies.  Yes, there was quite a bit of liquid at the bottom of the dish but I had removed chicken skin, so it was just cooking juices.  I just used a slotted spoon to dish out the veggies--that was no biggie.  Not sure if I'll make again or not!

I needed way more salt than listed. I must be missing something, but this tasted so bland and sad I feel bad wasting so many chicken quarters with this recipe. Will not be making again, sorry!

I was surprised how flavorful the chicken was with such simple seasoning.  Found that 60 minutes wasn't quite long enough to cook the chicken quarters all the way through.  The leftovers reheated well.  It looks pretty in the casserole, too!  Definitely making again, but adding more spinach.

I made this for dinner this evening, and it was delicious and so easy.  My husband loved it.  Instead of chicken quarters, I used just the legs, and they were nicely browned and crispy.  Will definitely make it again.

Followed the instructions and it was nothing great.. Something is missing inthis recipe.. Very colourful but disappointing as far as flavor.. Will not be making again??

I was surprised at how flavorful such a simple recipe could be.  The whole family enjoyed it.  I will make this again and again!

LOVED this recipe. Very flavorful and so quick and convenient. You get a flavorful main dish with very little prep. I cut the recipe in half for me and my husband - used three leg quarters, approx 1-lb. potatoes, and half of the remaining ingredients. Used all of the spinach as we enjoy spinach. I put all the ingredients, except the chicken, on a half-size baking sheet, tossed to coat then placed the chicken on top. One pan from prep to cook. Can't be any easier than that!

I made this for dinner  because my store had leg quarters on sale and I had fresh spinach from my garden. I thought it was a very tasty ,easy ,economical meal. I think you could vary the vegetables depending on what you had on hand. The juice cooking out of the chicken made the potatoes and spinach very flavorful!

We found this recipe way too water/greasy.  Followed directions but ended up with about 1/2 to 3/4 inches of watery chicken grease on the bottom.  The taste was okay - but potatoes were barely done and I left it in the oven an extra 20 - 25 minutes and turned the heat down to 350 deg. after one hour was up.    But, won't make this again, too much water/grease on the bottom on the pan I used.  I used a lasagna pan, but didn't take the skin off the leg quarters.  That might have made a difference.

This is a nice recipe for during the week. I did add some chicken broth since my potatoes were not cut too small and took a long time to get soft. I also used boneless, skinless chicken breasts cut in half and it was delicious!!!

Deliciious!!!  I found that the leg quarters had to be trimmed of lots of fat, but once that was done, it was easy to assemble this for roasting.  I increased the amount of spinach because we really like spinach.  I used Trader Joe's 21 Seasoning Salute in place of the dried thyme.  I would definitely make this recipe again.
