Step 1

Position an oven rack in the center of the oven.

Step 2

Preheat the oven to 425 degrees F.

Step 3

Line a large, rimmed baking sheet with parchment paper.

Step 4

Place the rolls, cut-side up, on the prepared baking sheet.

Step 5

Divide the turkey evenly among the rolls.

Step 6

Top the turkey layer with an even amount of the provolone cheese, about 2 half pieces per roll.

In a medium bowl, add the lettuce, the baby peppers, the tomatoes, the onions, and the parsley.

In a small bowl, add the mayonnaise, the vinegar, and the Italian seasoning and whisk to combine.

Pour the dressing over the lettuce mixture and toss to combine.

Allow the salad to stand for 5 minutes.

Bake the sandwiches on the middle rack of the oven until the cheese is melted, the turkey is warmed, and the roll tops are toasted, about 8 minutes.

Transfer the sandwiches from the oven and top each sandwich with about 1 cup of the salad mixture.

Close the sandwiches, then cut them in half crosswise.
