Step 1
In a pot, add pig ears, Sichuan peppercorn, garlic, ginger, green onion, vegetarian oyster sauce, soy sauce, sugar, bay leaf, and star anise.
Step 2
Fill the pot with 4-5 cups of water, or enough to cover all the pig ears.
Step 3
Bring it to a simmer, put the lid on, and cook on medium heat for 30 minutes.
Step 4
Remove the pig ears, and let them cool down while you prepare the sauce.

For the sauce, in a large bowl, add vegetarian oyster sauce, soy sauce, chopped green onion, chopped garlic, Korean red chili flakes, sesame seeds, and homemade chili oil.
Step 6
Heat 4 tablespoons of oil, and once the oil is hot, drizzle the oil over the sauce mixture, let it sizzle, and mix well.
Step 7
Once the pig ears are safe to touch, cut them in half and into strips. Drizzle the garlic sauce all over the pig ears, toss everything together and garnish with cilantro.
