Step 1

In a bowl, add the chicken pieces and the cornstarch and toss to coated.

Step 2

In another bowl, add the honey, the chicken broth, the soy sauce, the apple the cider vinegar, and the garlic powder and whisk together.

Step 3

Heat 2 tablespoons of the oil in a skillet over medium-high heat.

Step 4

Add the chicken pieces, in batches if needed, to the hot oil and cook until browned on two sides, about 3-5 minutes per side. Add more of the extra oil, as needed.

Step 5

Transfer the seared chicken pieces to a plate.

Step 6

Transfer the skillet from the heat.

Step 7

Pour the sauce in the same skillet and use a wooden spoon to loosen the browned bits from the bottom.

Step 8

Add the chicken back to the skillet and return it to the stove-top over medium heat.

Step 9

Cook the honey chicken until the sauce has thickened and the meat has reached an internal temperature of 165 degrees F, about 5-7 minutes.

Step 10

Serve the honey chicken garnished with the scallions.
