Griddle Steak Recipe

boneless ribeye steak 10 oz

salt

cooking oil

Remove the steak from the refrigerator

Pat the steak dry with paper towels on both sides

Season both sides of the steak with salt

Allow steak to rest on a wire rack with a plate underneath for 1 hour at room temperature

15 minutes before cooking, preheat your griddle to medium-high heat, 400-425F

Begin cooking by patting the steak dry a second time with paper towels on both sides

Pour half the oil on your griddle and spread around with a spatula

When the oil begins to sheen and just prior to smoking place your steak on the oiled griddle area

Cook for 2 minutes without moving the steak

Add the remaining oil to the griddle. Spread evenly and allow it to preheat for 30 seconds

Flip the steak into the new oil and cook for an additional 2 minutes

Remove the steak from the griddle and allow it to rest for 5-10 minutes covered loosely with foil

Serve immediately

Pat both the scallops and shrimp dry with multiple layers of paper towels

Melt the butter on the griddle

Place the shrimp in the butter and begin to cook

Blackstone Fajitas

avocado oil

lime juice

chile powder

sea salt

garlic powder

cumin

yellow onions (sliced)

tortillas (corn or fajita-sized flour)

For Serving: shredded cheddar cheese (sour cream, lime wedges, tomatoes, cilantro

Combine the avocado oil, lime juice, chili powder, salt, garlic powder, cumin, and cayenne pepper in a mason jar or blender.

Shake or blend until well mixed..

Place the chicken in a shallow dish and pour the marinade over it.  Allow to marinate in the refrigerator for 2 hours.

Remove the chicken from the marinade and discard.

Heat your Blackstone griddle to medium-high heat.

Brush with avocado oil.

Add the onions and peppers to one side of the griddle and the chicken to the other.

Cook for about 6 to 9 minutes, until the chicken is cooked through and the vegetables are lightly charred.

Remove from the heat.

Heat the tortillas until warmed through, about 1 minute.

Serve the meat and veggies with the warm tortillas and desired toppings.

Shuck corn. Take care to make sure all silk has been removed

Use a sharp knife and the two bowl method to remove the corn kernels from the cob

Stack the bacon slices on top of each other

Make a slice down the center of the bacon and then cut across the bacon to dice. The diced bacon should be about a half-inch in length and not much wider than the width of a pencil

Dice your sweet onion

Roughly chop the jalapeno rings to break them up slightly

Preheat your Blackstone Griddle to medium-high and set it for two-zone cooking

Render the bacon first, cooking it to about 80% done

Slide the bacon to the cool side of the griddle

Saute the onion in the bacon grease for three minutes

Add the jalapenos to the onion and cook for an additional three minutes

Slide the jalapeno and onion to the cool side of the griddle

Add the corn to the warm side of the griddle and saute for two minutes, stirring constantly

Add a tablespoon or two of water or oil if the corn seems to be sticking to the griddle

Saute the corn for about 5 minutes, then combine it with the bacon, jalapenos, and onions.

Cook for an additional two or three minutes to combine the flavors

Serve in a bowl and optionally garnish with Cojtilla cheese, lime juice, and Tajín Clásico Seasoning

An easy way to cut corn off of the cob, this two bowl method is simple and makes clean up easy. 

Simply use two bowls. One much larger and wider than the other. Place the corn on the small bowl and slice away. The corn practically falls off of the cob and there is such less mess than any other methods I have tried. 

After discovering this method I fly through multiple ears of fresh corn at a time.
