I found this cooking guide on Lindauer Family Farms website when I ran out of gas for my grill. If you like how yor steak is prepared at Outback Steakhouse, then you will love this recipe.

Broil a Perfect Steak

steaks

kosher salt

fresh coarse ground black pepper

olive oil

ADDITIONAL ITEMS - Cast Iron Skillet, Spatula or Tongs.

Bring your 1 to 2 inch steaks to room temperature and use a clean cloth to remove excess moisture.

Move oven rack 6 inches from heating element.

Pre-heat oven and skillet by setting the oven to broiler for 15 to 20 minutes.

Rub steaks with olive oil, kosher salt and coarsely ground pepper. NOTE: Use any seasonings of your choice.

Once the skillet is pre-heated, pull out the oven rack and carefully lay steaks on the skillet. NOTE: Pan is Extermely Hot and will spit and splatter.

Close oven and sear the steaks for 3 minutes on one side, turn and sear the opposite side for 3 minutes. DO NOT USE A FORK TO TURN STEAKS!

Once seared, set the oven to 500F and cook using this Time Chart. Turn steaks half way through the remaining cooking time.

Rare (120-130F)1&quot; 0-1 minute,  1 1/4&quot; 2-3 minute,   1 3/4&quot; 4-5 minute

Medium (140-150F) 1&quot; 2-3 minute, 1 1/4&quot; 4-5 minute,  1 3/4&quot; 6-7 minute

Medium Well(150-160F)    1&quot; 4-5 minute,  1 1/4&quot; 6-7 minute,   1 3/4&quot; 8-9 minute

Remove steaks from the oven and let rest for 5 minutes.

Serving on warm plates is recommended to maintain meat temperature.

I can not stress this tip enough -- Keep the fork in the drawer until ready to eat. Never pierce the meat during cooking.

I was really happy to have this recipe during the winter when we couldn't use our grill.  Steaks got a great sear on the outside, but stayed nice and pink on the inside.  My only problem is that our house usually got pretty smoky and set off the smoke alarm.

This is a great recipe for a simple, thin crust pizza.  It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co.  The recipe was printed in New York Magazine (Jul 12, 2009).  If you don't have a pizza stone, this works well in a cast iron skillet.  The recipe requires very little time and effort but the dough must be started the day before.

Jim Lahey’s No-Knead Pizza Margherita

all-purpose flour

instant yeast

salt

water

tomatoes (about 5 oz.)

extra virgin olive oil

tomato sauce

buffalo mozzarella (about 1/4 ball)

basil leaves

To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.

Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.

Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.

To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.

To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about &frac12; inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

Amazing pizza recipe! I made it just as directed and the dough was well worth the wait time!

When I was in college, I worked at Pappasito's as a waitress. I LOVED their brochette shrimp and I asked the cook for the recipe. He didn't give me the exact measurements, but he did give me the list of ingredients. I went home and played around with the quantities of the ingredeints and came up with what I think is very close to the real thing!

Pappasito's Brochette Shrimp - Copycat Recipe

shrimp

bacon,

jalapeno

monterey jack cheese, thick

paprika

cayenne pepper

black pepper

butter

white wine

wooden skewer, soaked in water

Clean and devein shrimp, leaving the last section and tails intact.

With a paring knife, carefully slice each shrimp from tail to tip.

Wash and seed jalapeno, and cut into a pieces about 1/2-inch X 1/2-inch squares.

Cut slice of cheese into 12 small pieces.

Stuff one small piece of cheese and one small piece of jalapeno into each shrimp.

Wrap a half slice of bacon around each shrimp.

Repeat this process until all shrimp have been placed on skewers.

Place in refrigerator for a few minutes while you prepare the rest of the recipe.

Mix the paparika, cayenne pepper and black pepper together.

In a small skillet, heat butter and white wine until butter is completely melted.

~note~I use my indoor grill, but these can be made on an outdoor grill too, but I would use a low flame!

Remove shrimp from fridge and brush completely with melted butter.

Grill on each side until shrimp are done.

these are great - the best we've had - they are a bit time-consuming to prepare, but well worth it. Bigger shrimp are key so you have the room for the cheese and pepper. Sam's Club - U15 shrimp - 2lb bag $22 - gives you about 30 nice size shrimp and they are excellent

Coat large broiler-pan rack with nonstick vegetable-oil cooking spray.

Mix brown sugar, allspice, black pepper, onion powder, thyme, salt and cayenne in bowl.

Whisk in oil, molasses and lime juice until smooth.

Cover and refrigerate for 10 minutes, stirring after 5 minutes.

Arrange shrimp in single layer on broiler-pan rack.

Broil about 4 inches from heat for 2 minutes.

Broil 1-2 minutes  or until shrimp are cooked through.

Serve shrimp immediately with white rice if desired.

Pour drippings from broiler pan over shrimp, if desired.

These shrimp were quick and easy to prepare. The flavor was good, maybe a little spicier than what I anticipated, so be careful.

This is the BEST recipe for hot wings and I have tried many others over the years ---I make these quite often for my parties and everyone loves them --- you may double all ingredients if desired, if you are doubling the ingredients, I suggest to just start with 2 tablespoons hot sauce such as Louisiana hot sauce then add more to reach the desired heat --- I have even prepared these on the grill instead of the broiler and then finished cooking them in the oven with the sauce, another idea is you may cook the wings hours in advance or even a day ahead cool slightly and just leave them in the fridge overnight, then the following day just coat them in the hot sauce and then bake them in the oven, you may even prepare the hot sauce a day ahead in fact it tastes even better if prepared in advance just refrigerate overnight,  preparing the wings and the sauce in advance is a great time saver if you are making them for a crowd,

lbs chicken wings,

ketchup (I have even used the hot ketchup

honey

white vinegar

Dijon mustard

Worcestershire sauce

soy sauce

hot sauce

-3 garlic cloves

onion

Fantastic Hot 'n' Spicy Wings

Prepare the wings on a shallow cookie sheet that is lined with foil, and spray with a non-stick cooking spray, or prepare a broiler pan.

Arrange the wings evenly in a single layer.

Place under the broiler until lightly browned (watch closely to not burn the wings) set wings aside.

In a saucepan combine all sauce ingredients, and bring to a boil; reduce heat and simmer for 15-20 minutes (adjust the hot pepper sauce to suit taste).

Up to this point, all above can all be prepared a day in advance and refrigerated.

Using long tongs, dip each wing in the hot sauce, and place evenly on a greased baking sheet.

Bake for 35-40 minutes (basting with remaining sauce during cooking).

To crisp up the wings, place under broiler for a couple of minutes.

This recipe is, in actual fact, excellent but it&#039;s word for word lifted from Best of the Best of Bridge, page 70, copyright August 1998, which also has loads of other terrific recipes.

Spicy Honey-Brushed Chicken Thighs

chili powder

boneless skinless chicken thighs

cooking spray

cider vinegar

Combine first 6 ingredients in a large bowl. 

Place chicken on a broiler pan coated with cooking spray. 

Combine honey and vinegar in a small bowl. 

Remove chicken from oven; brush 1/4 cup honey mixture on chicken. 

Remove chicken from oven and turn over. 

Brush chicken with remaining honey mixture. 

Broil 1 additional minute or until chicken is done.

Absolutly amazing! I loved every bite of this flavorful chicken. I used chicken breasts that I cut into halves. I put the spices in a bag and threw the chicken in it and shook it up, then let it marinade in the fridge for a hour to let the flavors really get in the chicken. I think I'd cut down on the salt next time cause it was a tad salty. This would be great in a sandwich with avocado!! UPDATE: I made this again served sliced on top of a spinich & arugula salad with orange segments, avocado chunks and with a orange honey vinaigarette...it was awesome! The chicken goes with oranges & avocado very well!!

A fine British tradition - and a meal to set you up for the day; there is a saying in the UK that goes like this: &quot;breakfast like a King, lunch like a Queen and have supper like a pauper&quot;! So, what does a typical full English breakfast consist of? One recipe in an Edwardian Cookbook listed a plethora of ingredients that would have graced the table of many a stately home at the turn of the century, to include 7 courses! A modern day FEB is likely to consist of the following: two sausages, two or three rashers of bacon, fried eggs, fried bread, tomato and lashings of mushrooms with black pudding and brown HP sauce to taste. In finer establishments you can even expect additional courses such as cereal, porridge, kippers, toast and jam or marmalade, kedgeree, or devilled kidneys.
Rumour has it that the term 'The Full Monty' is used to refer to these type of breakfasts because Field Marshal Montgomery was rather partial to them. Here is my basic recipe for an FEB, with optional extras! Grill or fry your FEB - and make sure you have acres of hot buttered toast and gallons of English Breakfast Tea! I am NOT suggesting this is what you should eat every morning - but it is a wonderful treat for the weekends, holidays and just when you feel like it.

The Full Monty - F E B -  Full English Breakfast

-2 ripe tomatoes

beans (optional)

potato, thinly sliced (optional)

Heat the flat grill plate over a low heat, on top of 2 rings/flames if it fits, and brush sparingly with light olive oil or vegetable oil.

Always buy sausages with a high meat content. Cook these first. Add the sausages to the hot grill plate/the coolest part if there is one and allow to cook slowly for about 15-20 minutes, turning occasionally, until golden. After the first 10 minutes, increase the heat to medium before beginning to cook the other ingredients. If you are struggling for space, completely cook the sausages and keep hot on a plate in the oven.

Choose between back or streaky, smoked or unsmoked bacon; generally, dry-cure has the best flavour. Snip a few small cuts into the fatty edge of the bacon. Place the bacon straight on to the grill plate and fry for 2-4 minutes each side or until your preferred crispiness is reached. Like the sausages, the cooked bacon can be kept hot on a plate in the oven.

Brush away any dirt using a pastry brush and trim the stalk level with the mushroom top. Season with salt and pepper and drizzle over a little olive oil. Place stalk-side up on the grill plate and cook for 1-2 minutes before turning and cooking for a further 3-4 minutes. Avoid moving the mushrooms too much while cooking, as this releases the natural juices, making them soggy. (Alternatively, you can slice your mushrooms, as shown in my photo.).

Cut the tomatoes across the centre/or in half lengthways if using plum tomatoes , and with a small, sharp knife remove the green 'eye'. Season with salt and pepper and drizzle with a little olive oil. Place cut-side down on the grill plate and cook without moving for 2 minutes. Gently turn over and season again. Cook for a further 2-3 minutes until tender but still holding their shape.

For 'proper' fried bread it's best to cook it in a separate pan. Ideally, use bread that is a couple of days old. Heat a frying pan to a medium heat and cover the base with oil. Add the bread and cook for 2-3 minutes each side until crispy and golden. If the pan becomes too dry, add a little more oil. For a richer flavour, add a knob of butter after you turn the slice.

Break the egg straight into the pan with the fried bread and leave for 30 seconds. Add a good knob of butter and lightly splash/baste the egg with the butter when melted. Cook to your preferred stage, season and gently remove with a fish slice.

Once all the ingredients are cooked, serve on warm plates and enjoy straight away with a good squeeze of tomato ketchup, Worcestershire sauce or brown sauce, and don't forget the toast and marmalade with a pot of good English Breakfast tea.

Cut the black pudding into 3-4 slices and remove the skin. Place on the grill plate and cook for 1&frac12;-2 minutes each side until slightly crispy.

Heat up the baked beans in a saucepan and serve on top of the fried bread, or on the side.

Fry the sliced cooked potatoes in a little butter until crispy and golden brown. Season with a little salt and black pepper.

Beyond euphoric! Totally the most prolific show of love for your dearest ones that clamber around your early morning breakfast table. I felt as though I had taken a quick flight cross' the pond and landed within another world, or quite possibly; another time in history. I really wanted to do something special for Dennis, and for no reason, or because I had to. I had everything right here in my kitchen to address the whole recipe, except; tomatoes. (Don't ask why a person who has a farm doesn't have tomatoes as this is a question I often ask myself?) I didn't have the pudding either, but I did add the optional potato on as suggested. The mushrooms were succulent, and oh so tasty. I fried a piece of whole wheat toast, and added fresh raspberry jam. The rest went together quickly and had quite a punch for the amazing little amount of time this took to put together. The only addition was putting the potatoes in come cold water for 1/2 hour along with some thinly sliced onions. Drained them, making sure the water was removed...and doing a wonderful potato fry following your suggestions. Will at least make this once a month for Dennis and family. After all; I am sure they will be sitting here waiting until I make it again. Wish I had those tomatoes though. Made for *FT* just for the heck of it. April 2008

I love making these appetizers at Christmas time. Always well received!! I'm guessing on the servings, depends on the size of the scallops.

Bacon Wrapped Scallops

lbs bacon (regular sliced, not thick)

lbs sea scallops (if very large, cut in half)

garlic

chicken broth

Wrap a piece of bacon around each scallop; secure with toothpick.

Arrange the wrapped scallops on a baking sheet.

Broil 5 inches from heat for 3 minutes per side, or until bacon is crisp.

In small skillet, melt butter; add garlic and saute 1 minute,.

Place scallops in large bowl; pour broth over, Gently toss to coat.

i make this often without the sauce. i made it this time as a dipping sauce, well received, as part of a new years buffet

This is a great summer meal and quick and easy to put together and tastes wonderful. Refreshing served with the cucumber sauce and is even low in fat. I think this came from Quick Cooking. It's a favorite in our house.

Ground Beef Gyros

(8 ounce) container plain yogurt

cucumber

onions

garlic clove,

sugar

lb beef

oregano

salt (optional)

pepper

pita breads

lettuce

tomatoes,

onion,

Cover and refrigerate. (If possible overnight).

In separate bowl, combine ground beef and seasonings.

Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.

To make this a little more authentic looking (and easier IMO) I put the meat, onions and seasonings in a food processor an pulse to a soft consistency, then pack it firmly into a loaf pan and bake it like a meatloaf. Let it cool and chill in the fridge a few hours or overnite. Then slice thinly and saute the slices in a skillet to get them nice and browned. I have made them many different ways and we like these the best.

Lazy Day Oatmeal Cake

vanilla

baking soda

cinnamon

nutmeg

cream milk

coconut

chopped nuts (optional)

In a shallow bowl soak oats in boiling water for 20 minutes.

Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.

Sift and measure flour, sifting again with the soda and spices.

By this time the oats will be soaked and cool.

Remove beaters from creamed mixture and fold in soaked oats.

Turn in a buttered 9x9" pan and bake at 350&deg;F for 40-50 minutes .

Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.

This has been one of my kid's favorite cakes for many years.
