Cheesy Scalloped Potatoes

lbs Russet Potatoes peeled and sliced in 1/8 inch rounds

lbs Yukon Gold Potatoes peeled and sliced in 1/8 inch rounds

onion

butter

garlic

all purpose flour

chicken broth

2% milk

sharp cheddar (reserve 1/2 cup for top)

freshly grated white cheddar (reserve 1/4 cup for top)

Preheat oven to 400 degrees.  Spray 9&#215;13 inch casserole with olive oil or nonstick cooking spray.

In large skillet over medium low melt butter. Add minced garlic and saute for 1 minute;  stirring constantly. Slowly whisk in flour; cook for 3 to 4 minutes whisking constantly.  Whisk in onion powder, paprika, dried parsley, salt and freshly ground black pepper.  Slowly whisk in chicken broth and milk; alternating between the two.  Whisk until smooth; simmer for 5 minutes. Turn heat to low and slowly whisk in 1/2 cups sharp cheddar and 3/4 cup white cheddar.  Simmer while you layer the potatoes.

Layer 1/2 of the potatoes and 1/2 of the onions in the casserole dish.  Pour 1/2 of the cheese sauce over the potatoes.  Layer the rest of the potatoes and onions and and pour the rest of the cheese sauce over. Top with the remaining reserved cheese. Cover with foil and bake for 30 minutes.  Uncover and bake for another 30 minutes or until it is nicely browned on the top and bubbly.

3-4 Large Russet Potatoes

Cup Whole Milk

Cup Heavy Cream

Cup Sharp Cheddar Cheese *Divided

Scalloped Potatoes and Ham

Wash and Peel your potatoes

Slice Potatoes into 1/4 inch thick rounds and place in a bowl

Toss them with Garlic and set aside

In a saucepan set to medium heat, melt butter

In a separate bowl mix Cornstarch with 1/4 cup milk and stir

Add remaining whole milk and cream to melted butter and stir

Whisk cornstarch slurry into mixture and continue to stir over medium heat until thickened.

Add 1 cup of cheese and stir

Your sauce will continue thicken

Once the cheese has been completely added and your sauce is nice and thick, remove from heat.

Mix sauce with slice potatoes and cubed ham and stir

Place potatoes into a springform pan or a 2 tier pan

add 1 cup of water to your Pressure Cooker / Instant Pot

Place pan on trivet

Set to Manual High Pressure for 25 minutes with a 5 minute natural release

Sprinkle your remaining cheese over the top and place under the crisp lid at 350 degrees for 2 minutes. You can also choose to put it in your oven under broil for 1-2 minutes. Just watch it closely as the cheese melts quickly.

Easy Cheesy Scalloped Potatoes

yellow potatoes

cream of mushroom (chicken or celery soup)

Preheat oven to 375°F.

Wash potatoes and slice ¼″ thick (no need to peel). Drop into boiling water for 5 minutes. During the last minute, add sliced onions to the water. Drain.

Meanwhile, combine soup, milk, pepper and garlic powder in a bowl. Microwave until hot.

Put a little bit of the soup mixture in the bottom of a greased 2 QT casserole dish, a 9×9 pan, or an oven-safe pan. Layer ½ of the potatoes, ½ of the soup mixture, and ½ of the cheese. Repeat layers ending with cheese.

Bake at 375°F for 45-55 minutes or until hot and bubbly.

Peel the potatoes if you'd like. Slice the potatoes into very thin 1/8'' slices.

In a small saucepan over medium heat, melt butter and stir in flour until smooth.&nbsp;Cook 1-2 minutes, stirring constantly.

Slowly stir in the milk, cream, minced garlic, dried onions, and season with salt and pepper. Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.

Reduce heat and stir in 2 cups of shredded cheese until melted and smooth. Tastes sauce and add additional salt, pepper, garlic or onion flakes, if desired.

Place half of the sliced potatoes in a lightly greased 8x8 inch (or similar size) casserole dish.&nbsp;Pour half of the cheese sauce over potatoes.

Layer the remaining potatoes on top. Spoon the remaining cheese sauce over the potatoes. Sprinkle remaining cheese on top.

Cover with tinfoil and bake at 350 degrees F for 30 minutes.&nbsp;

Remove tinfoil and continue baking, uncovered, for another 20-30 minutes more or until potatoes are cooked, cheese is browned and sauce is bubbly.&nbsp;

Preheat oven to 400 degrees F. Lightly grease a 1 1/2  to 2-quart casserole dish with baking spray. Set aside.

With a mandoline or sharp chef's knife, slice the potatoes into very thin slices, 1/8-inch-thick or less. Place the potatoes in a large bowl, drizzle with olive oil, then sprinkle with the minced garlic, salt, and pepper. Toss to coat the slices as evenly as you can.

Spread 1/3 of the potato slices in the bottom of the prepared dish. Crumble half of the goat cheese over the top. Repeat with the next 1/3 of the potatoes, then the remaining goat cheese, then finish by layering on the final third of the potatoes. The potatoes may discard some liquid as they rest in the bowl. If this happens, simply leave the liquid in the bottom bowl and shake the potato slices gently in your hands to remove excess liquid before layering them in the dish.

Pour the milk evenly over the top of the dish, then sprinkle with the Parmesan cheese. Cover the dish with foil, bake for 30 minutes, then uncover and bake for 15 additional minutes, until the top has browned. Scatter the rosemary over the top. Serve hot.

These Creamy Pumpkin and Cheddar Scalloped Potatoes are the perfect fall twist on a classic. Instead of simple scalloped potatoes, this version is packed with sweet pumpkin puree, savory cheddar cheese, and melt-in-your-mouth potatoes. Perfect for Thanksgiving or any holiday gathering.

Creamy Pumpkin and Cheddar Scalloped Potatoes

Preheat oven to 350 degrees. Butter or grease a 1-quart oval baking dish or equivilant size.

In a medium saucepan, melt butter over a medium heat. Add garlic. Cook 1-2 minutes until soft and fragrant. Whisk in flour. Slowly whisk in warm milk and salt. Bring the mixture to a boil and reduce to a simmer. Simmer until thickened, about 3-4 minutes. Season with salt and pepper to taste.

Spray aluminum foil with baking spray, cover the baking dish and bake until potatoe are fork-tender. In the last few mintues of cooking, turn the heat on to broil. Cook until the cheese is bubbly and golden brown. Cool for a few minutes before serving.

Crockpot Scalloped Potatoes

Generously coat the inside of a 6-quart slow cooker with cooking spray. (See recipe notes if using a smaller slow cooker.)

Layer

Place a layer of potato slices in the bottom of the slow cooker, alternating the Yukon Golds and sweets. Generously sprinkle with kosher salt and black pepper (do not skimp or the potatoes will be bland). Repeat with a second layer of potatoes, another sprinkling of salt and pepper, then another layer of potatoes, continuing until all the potato slices have been used.

Stir

Melt the butter in a medium saucepan over medium heat with the onion. Sauté until the onion is soft and beginning to turn translucent, about 4 minutes. Sprinkle the flour over the top, then whisk constantly until it turns a golden color and smells nutty, about 1 minute. Add the garlic and cook 30 seconds. Slowly pour in the milk a few splashes at a time, whisking constantly to smooth any clumps. As you add the milk, the mixture should begin to form a paste that becomes increasing golden. Finish adding the milk, then increase the heat to medium high. Let cook, stirring constantly, until the sauce bubbles and thickens, about 6-8 minutes. Remove the pan from the heat, then stir in the nutmeg, grated cheese, and half of the thyme. Continue whisking until the cheese melts and you have a smooth, rich sauce. Add 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper. Taste and add additional salt and pepper as desired.

Pour

Pour the sauce evenly over the potatoes, then jiggle the slow cooker gently so that the sauce seeps down to the various layers. Do not stir. Drape a triple layer of paper towels over the top of the slow cooker so that the sides of the paper towels overhang the edge, then cover the slow cooker with the lid over the top of the paper towels****. Cook for 2 1/2 to 4 hours on high, until the potatoes are tender, changing out the paper towels halfway through if they become soggy. The cooking time can vary widely depending upon your slow cooker, so adjust accordingly. Start checking at the 2 1/2 hour mark, then every 15 to 30 minutes afterward depending on how the potatoes are progressing.

Cook

Once the potatoes are tender, uncover and sprinkle with Parmesan cheese and remaining thyme. Cook on high, uncovered, for 10 minutes to allow the cheese to melt and the top to crisp. Serve immediately or keep warm in the slow cooker for up to 1 hour.
