Chicken Tikka Masala

yogurt

tomato puree

heavy cream (sub a 14-ounce can of regular coconut milk)

rice and cilantro

onions (about 3 cups when chopped)

garam masala

chili powder, turmeric, and cumin

cloves

cayenne pepper

MASALA PASTE

Pulse all ingredients into a food processor until smooth. Set aside about 1/4 cup of the paste for this recipe &#8211; freeze the rest for your next batch! Boom!

Chicken Tikka Masala Step 1

MARINATE CHICKEN

Cut the chicken into bite sized pieces. Marinate with 1-2 tablespoons of masala paste and the yogurt for about 30 minutes in the fridge.

COOK CHICKEN

Heat a large, deep nonstick skillet over medium high heat. Heat 1-2 tablespoons of oil. Cook the chicken in batches, undisturbed, until each piece is nice and browned on the outside. Remove from pan and set aside. (Chicken does not need to be fully cooked at this point.)

SAUCE

Add 2-3 tablespoons of masala paste to the same skillet. Stir fry for a few minutes. Add the tomato puree and browned chicken; simmer for 10-15 minutes. (Chicken should now be fully cooked.)

FINISH

Stir in cream or coconut milk. Season with salt. Let stand for a while so the sauce will thicken up a bit. Serve over rice with cilantro. HEAVEN.

Looks like you are using 1/4 cup of masala paste in the 5-ingredient recipe.   About how many 1/4 cup servings of the paste do  you end up with if you make the paste recipe as listed?

The veggie meatballs with the masala sauce were awesome!  My entire family loved them.  They froze great.

Heat oil in a large skillet over medium heat.Add seasoned chicken thighs to the skillet, smooth side down; cook for 5 minutes or until you can easily flip over the chicken. Flip and continue to cook for 6 to 7 more minutes, or until no longer pink.

Quick and easy skillet seared chicken topped with a creamy garlic and onions white wine sauce that’s sure to please any crowd!

Skillet Chicken in White Wine Sauce

boneless (skinless chicken breasts)

salt and fresh ground pepper (to taste)

unsalted butter

onion

dry white wine

thyme

half and half/heavy cream/or evaporated milk

chopped parsley

Heat olive oil in a large skillet over medium heat until the oil shimmers, about 2 to 3 minutes.

Season chicken with salt, pepper and garlic powder.

Add chicken to the skillet and cook until golden brown, about 6 minutes. DO NOT move it around.

Using tongs, flip the chicken over and continue to cook for 6 more minutes, or until cooked through.

Remove chicken from skillet to a plate; cover and set aside.

FOR THE CHICKEN

DO NOT wipe the skillet.

Add butter to skillet and melt over medium-high heat.

Add onions and cook for 3 minutes, or until softened.

Stir in garlic, salt, and pepper; cook for 30 seconds, or until fragrant.

Add wine and bring to a simmer, scraping the bottom of the skillet to mix the brown bits into the liquid; cook for 4 to 5 more minutes, or until half of the wine has reduced.

Stir in thyme and half-and-half.

Reduce heat to slowly bring to a boil; place chicken breasts back in the skillet and leave to simmer and thicken for about 4 minutes.

Remove skillet from heat.

Garnish with fresh chopped parsley.

Serve.

A retro/nostalgic &amp; easy MIYM (Melt In Your Mouth) chicken recipe that is in constant rotation in my house!

Melt In Your Mouth (MIYM) Chicken Breasts

sour cream

black pepper

Parmesan cheese, divided

chicken breasts, trimmed of excess fat

Preparation

Preheat oven to 375°F. Lightly coat a 9&#215;13 baking dish with nonstick spray and set aside.

Combine coating ingredients

In a medium bowl, mix together the sour cream, garlic powder, seasoned salt, pepper, and 1 cup of Parmesan cheese.

Spread coating on chicken breasts

Place the chicken breasts evenly into the pan. Spread the sour cream mixture on top of the chicken. Sprinkle with the remaining Parmesan cheese.

Bake

Bake for 25-30 minutes, or until the chicken is cooked through. Turn the oven to broil and place the pan under the broiler for 2-3 minutes until lightly browned on top.

It’s pretty good. I added garlic seasoning to the chicken as well for extra flavor while cooking. I suggest chopping up the pineapple into small bits so you get the flavor with each bite. I would make this again.

So so good!!! My very picky 16 year old has declared this her favourite dish. I added an additional pepper and used 1/8 cup of soy sauce instead of 1/ 4 cup soy sauce. Absolutely perfect!

It was okay. The sauce was awesome, though; if I made it again, I would double the sauce recipe. I had a whole pineapple sitting in my fridge along with some thawed chicken and this recipe was pretty easy to make. I sliced up half of the pineapple and grilled it alongside the chicken, then juiced the other half of the pineapple for the recipe and put the leftover juice in the water to steam the rice. My suggestion would be to add more flavor- maybe season the chicken more, add chopped onions, and more garlic.
