One Pot Cheesy Turkey Taco Chili Mac

garlic powder

14.5 oz can pink or red beans (drained)

tomato sauce

(8 oz fat-free refried beans)

15 chicken broth*

water

oz DeLallo Gluten Free shells

part-skim shredded sharp cheddar cheese*

tbsp fresh cilantro (chopped)

tbsp chopped scallions

Heat a large Dutch oven or pot with a fitted lid over medium-high heat and spray with oil, brown the turkey breaking it up with a wooden spoon as it cooks.

When cooked through, add the onions, garlic, pepper and taco seasoning; cook 2-3 minutes.

Add the canned tomatoes, beans, tomato sauce, refried beans, chicken broth and water.

Bring to a boil, cover and simmer about 15 minutes. Adjust salt to taste.

Stir in the uncooked pasta and simmer uncovered over medium heat until al dente, about 6 minutes or according to package directions.

Remove the pot from heat and top with the cheese, cover and let sit for about 2-3 minutes, until the cheese melts.

Serve immediately garnished with fresh cilantro and scallions.

Very good. Made this for a Sunday gathering, added a can of black beans, upped the ground beef to 2 lbs., the noodles (we use Muellers Jumbo Ridged Elbows for a lot of these recipes-perfect) to 1 lb, and substituted a packet of taco seasoning for the spices, upped the cheese until we thought it looked like enough-didn't measure-and set various hot sauces on the table. Served with cornbread. It has been requested again for  a "tweener"  dinner ("tweeners" is what we call the weekends between Thanksgiving and Christmas!)

This was really good, but definitely more chili than mac.

CHILI MACARONI (CHILI MAC)

macaroni

garlic (minced)

kidney beans (drained)

(14.5 oz) can diced tomatoes (undrained)

tomato paste

tbsp chili powder

salt & pepper (to taste)

cheddar cheese (for topping)

Boil and cook macaroni until tender.

While macaroni is cooking, cook ground beef along with onion.

Stir and cook until beef is browned and onion is soft.

Add in garlic during last couple of minutes of cooking (so it doesn't burn).

Drain excess grease from beef and put back into pot

After macaroni is cooked, drain.

Stir macaroni and remaining ingredients (minus the cheese) into beef mixture.

Heat to boiling, stir occasionally, then reduce heat and simmer covered for about 15-20 minutes.

Make sure to give it a taste test at this point. I usually find I need to season with a bit of salt.

Then serve and sprinkle each serving with shredded cheese.

How to make: THE BEST CHILI MACARONI

This one pot chili mac is a blend of ground beef, macaroni, beans, tomatoes and spices, all topped off with plenty of melted cheese. An easy dinner option that's family friendly and on the table in 30 minutes!

Chili Mac

olive oil

beef (I use 90% lean)

onion (finely diced)

chili powder

can diced tomatoes (do not drain)

beef broth

salt and pepper

dark red kidney beans (drained and rinsed)

elbow macaroni

cheddar cheese (grated)

Heat the olive oil in a large pot over medium high heat. Add the ground beef and cook for 5-6 minutes, breaking up the meat with a spatula.

Add the onion to the pot and cook for an additional 2-3 minutes. Add the garlic and cook for 30 seconds.

Add the chili powder, cumin, tomatoes, beef broth, tomato sauce, salt, pepper, kidney beans and macaroni to the pot. Stir to combine.

Bring to a simmer, then cover the pot and cook for 12-13 minutes or until pasta is tender. Uncover the pot and cook for an additional 3-4 minutes.

Sprinkle the cheese over the top of the pasta. Let simmer for 2-3 minutes or until cheese is melted. You can cover the pot if needed to help the cheese melt.

Top with cilantro, tomatoes and onion if desired, then serve.

Add olive oil to Instant Pot and set to sauté function for 1 minute to allow oil to heat up. Add onion, bell pepper, jalapeno pepper, chili powder, cumin, chipotle powder and salt and stir to combine. Set sauté function for 5 minutes. Add in garlic and set to sauté for 1 minute.

Add diced tomatoes, tomato sauce, black beans, kidney beans, elbow pasta and vegetable broth and stir to combine.

Secure lid onto Instant Pot and set to pressure cook/manual for 5 minutes.

Use quick release valve to release steam.

Once pressure is released, open lid and stir in cheeses until melted and combined.

Optional: serve with chopped cilantro and dollop of Greek yogurt.

Set Instant Pot to saute function (normal level) and add olive oil through garlic above. Saute for 5 minutes.

Add diced tomatoes through vegetable broth and stir to combine.

Secure lid onto Instant Pot and set to pressure cook/manual on high for 5 minutes.

Use the quick release valve to release steam.

Once pressure is released, open lid and stir in cheeses until melted and combined. Serve warm.

Cook pasta according to the package directions and set aside.

In a large pot, add olive oil, onions, garlic and all spices, and saute until the onions have caramelized a bit (about 5-10 min on medium heat). Then add the peppers, spinach, corn, salt, diced tomatoes, black beans, kidney beans and saute another 5-10 min on medium heat.

Add half of the can of tomato sauce and stir to combine. Add the pasta into the pot and the cheese and stir to combine.

Depending on how &quot;saucy&quot; the mixture looks, add in the rest of the tomato sauce. If you need it to be even more &quot;saucy&quot; add 1/2 cup vegetable broth at a time until the consistency is what you desire. Serve and enjoy!

To Make This Without An Instant Pot

Instant Pot Chili Mac & Cheese

28 oz can crushed tomatoes

oz elbow macaroni (uncooked (½ lb)(2 cups))

Cabot Extra Sharp Cheddar (shredded)

Cilantro (finely chopped for garnish)

Sour cream (for topping)

Set Instant Pot to SAUTE, add ground beef and brown, about 5 minutes. Transfer with a slotted spoon to a paper towel lined plate. Drain fat.

Add olive oil to pot. One hot, add onion and saute until softened, about 3 minutes. Add red pepper, garlic, chili powder, cumin, oregano, salt, pepper and cayenne. Saute 1 minute longer.

Add broth and scrape browned bits from bottom of pot. Return ground beef to pot along with beans, tomatoes and macaroni. Stir, making sure that all pasta is covered with liquid.

Cover and seal the lid - turn the vent to sealing. Hit CANCEL then press the MANUAL (high pressure) button and set the timer to 4 minutes. It will take about 15 minutes for Instant Pot to come to full pressure, then the display will show a countdown timer.

When finished, quick-release the pressure before removing the lid. Stir in cheese and season with additional salt and pepper, to taste.

Serve garnished with cilantro and sour cream. Enjoy!

Add the hamburger and cook till it is no longer pink.

Add in about 1/2 cup beef broth, and using a wooden spoon, scrape the bottom of the pot to remove any little bits of food from sticking to the bottom of the pan. This is called deglazing the pan.

Stir in the kidney beans, the remainder of the broth, chili powder, cumin, oregano, salt pepper, and elbow macaroni.

Place the lid on the pot and make sure it is sealed.  Turn on high pressure and set the timer for 5 minutes.  It will take a bit of time to build up the pressure and this will help the noodles cook till soft.

Do a quick release (refer to the owner's manual).

Add the velveeta and shredded cheese and stir till melted and combined.

Let it sit for 5 minutes before serving.  Sprinkle with minced parsley.

Slow Cooker Chili Mac is an easy comforting dish made right in your crockpot!! Uses simple ingredients right from your pantry!

Slow Cooker Chili Mac

chili beans chili beans in chili sauce

(28 oz) can crushed tomatoes

(15 oz) can diced tomatoes

elbow macaroni, uncooked

Desired toppings: cheddar,sour cream, green onions, corn chips....

Brown ground beef and drain grease. Add to a 6 qt slow cooker or larger and stir in remaining ingredients except for the pasta.

Cover and cook for 4 hours on HIGH or 8 hours on LOW.  In the last 15 minutes of cooking stir in the uncooked pasta and cover.  Stir and test to see if pasta is to your liking.  However, even with the slow cooker off the pasta will continue to cook just from the heat of the chili and crock itself so unless your pasta is really chewy or crunchy I strongly suggest only cooking it for the last 15 minutes of cook time.

Serve immediately with desired toppings.
