Fettuccines Alfredo au poulet

350 g (¾ lb) de fettuccines

demi-poitrines de poulet désossées et sans la peau, coupées en lanières

60 ml (¼ tasse) de beurre

gousse d’ail, hachée finement

180 ml (¾ tasse) de crème 35 %

180 ml (¾ tasse) de fromage parmigiano reggiano râpé

Sel et poivre

Dans une grande casserole, fais bouillir beaucoup d’eau salée (environ 3 litres / 12 tasses). Ajoute les pâtes et remue jusqu’à ce que l’eau recommence à bouillir. Cuis les pâtes environ 10 minutes ou jusqu’à ce que la texture soit légèrement al dente. Égoutte les pâtes dans une passoire, mais mets de côté 125 ml (½ tasse) d’eau de cuisson. Mélange les pâtes avec un peu d’huile d’olive pour éviter qu’elles collent ensemble. Mets-les de côté. 

Entre-temps, dans une grande poêle antiadhésive, fais dorer le poulet à feu élevé dans la moitié du beurre. Sale et poivre. Ajoute l’ail et poursuis la cuisson 1 minute. Réserve sur 
une assiette.

Dans la casserole qui a servi à cuire les pâtes, ajoute la crème, le fromage et le reste du beurre et porte à ébullition en remuant à la cuillère de bois. Ajoute les pâtes, le poulet et 60 ml (¼ tasse) d’eau de cuisson. Réchauffe les pâtes en remuant jusqu’à ce qu’elles absorbent le liquide. Au besoin, ajoute de l’eau de cuisson si les pâtes sont trop collantes. Goûte et ajoute du sel et du poivre au besoin.

Hankering for a comforting bowl of pasta in creamy sauce? This sumptuous Italian dish is for you. It takes just 25 minutes so it's an easy midweek meal

Fettuccine alfredo

tub clotted cream

butter(about 2 tbsp)

tsp cornflour

parmesan,grated

nutmeg

fresh fettuccineor tagliatelle

snipped chivesor chopped parsley, to serve (optional)

In a medium saucepan, stir the clotted cream, butter and cornflour over a low-ish heat and bring to a low simmer. Turn off the heat and keep warm.

Meanwhile, put the cheese and nutmeg in a small bowl and add a good grinding of black pepper, then stir everything together (don’t add any salt at this stage).

Put the pasta in another pan with 2 tsp salt, pour over some boiling water and cook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and drain the pasta, but not too thoroughly.

Add the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese and gently fold everything together over a low heat using a rubber <a href="https://www.bbcgoodfood.com/content/test-best-spatulas">spatula</a>. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: keep stirring until the water is absorbed and the sauce is glossy. Check the seasoning before transferring to heated bowls. Sprinkle over some chives or parsley, then serve immediately.

Chicken Margherita Pasta (One Pot Recipe!)

Pound Boneless Skinless Chicken Breasts (- sliced into ¾’’ pieces (SEE NOTES))

TBS Unsalted Butter (DIVIDED)

TBS Olive Oil

Yellow Onion (- chopped)

Roma Tomatoes (- seeded, small dice & divided in ½)

Garlic (- minced (SEE NOTES))

tsp Dried Italian Seasoning ((SEE NOTES))

¼ tsp Crushed Red Pepper Flakes (- plus more for garnishing)

TBS All Purpose Flour

Cups Chicken Broth

½ Cups Half-and-Half

¾ Cup Parmesan Cheese (- freshly grated)

Salt & Black Pepper (- to taste)

¼ Cup Fresh Basil (- thinly sliced)

Cup Ricotta Cheese

Cook chicken:  Melt 1 tablespoon of butter in a large straight sided skillet, or Dutch oven, over medium high heat.  Add the chicken and season generously with salt and pepper.  Cook until golden brown, but not cooked through, about 4-6 minutes total.  Remove chicken to a plate.

Cook onions:  Reduce heat to medium low and add in the oil and remaining butter.  Once melted, increase heat to medium and add in the onions and season with salt and pepper. Sauté for 4 minutes, stirring occasionally.

Add tomatoes, then aromatics: Add in half of the tomatoes and continue to cook for 1 minute.  Add in the garlic, Italian seasonings and crushed red pepper flakes.  Cook until fragrant, about 30 seconds.

Add flour: Sprinkle the flour over the vegetables. Cook, stirring, for another 1-2 minutes.

Add the liquids:  Add in the chicken broth and half-and-half, whisking constantly to combine.  Bring to a simmer.

Add browned chicken + pasta. Add the chicken, along with the pasta, to the pan. Bring to a slow boil, stirring occasionally, then immediately reduce to a simmer.

Cover and cook for 10-15 minutes, or until the pasta is just al dente - Uncover the pan and stir once or twice during cooking to prevent the pasta from sticking together.

Reduce heat to low and stir in the parmesan cheese until melted.  Stir in the remaining tomatoes.  Taste and adjust for seasoning with salt and pepper.

To serve:  Remove the pan from the heat and stir in the fresh basil and dollop with the ricotta.  Stir to combine.  Garnish with more basil, parmesan and red pepper flakes if desired.  Serve and Enjoy!

Fettucine Aglio e Olio

lb. Fettucine

garlic cloves, sliced

red pepper flakes

pasta water

parmigiano reggiano, grated

lemon, juiced

fresh parsley, minced

black pepper,

In a large pot of boiling salted water, cooking fettuccine until al dente. Reserve 3/4 cup of salty pasta water and drain.

Place empty pot over medium heat with olive oil, garlic and crushed red pepper flakes. When garlic starts to turn golden, add in cooked pasta, pasta water and parmigiana.

Reduce heat to low, toss pasta until sauce comes together and coats each noodle.

Finish with lemon juice, parsley and black pepper.

Directions:
