How To Make No-Churn Ice Cream

sweetened condensed milk

Pour the sweetened condensed milk into a large bowl.

Mix the vanilla extract, or other flavoring extract, into the condensed milk, if using. (See Recipe Notes for other flavoring ideas.)

Whip the heavy cream: Pour the heavy cream into a mixing bowl or the bowl of a stand mixer. Use a hand mixer, stand mixer, or immersion blender to whip the cream until it holds stiff, billowy peaks, about 3 minutes.

Lighten the condensed milk: Gently mix a scoop of the whipped cream into the condensed milk. This lightens the condensed milk and makes it easier to fold into the rest of the whipped cream.

Fold the whipped cream into the condensed milk: Transfer the rest of the whipped cream to the bowl with the condensed milk. Gently begin folding the whipped cream into the condensed milk. At first, it will look very lumpy. As you continue to fold, the mixture will smooth out and become soft and silky. Stop when you see just a few small lumps here and there — be careful not to deflate the mixture too much or over-mix.

Transfer the ice cream base to a freezer container: Use a spatula to scrape all the ice cream base into your freezer container. Smooth the top, then press a piece of wax paper against the surface to prevent ice crystals from forming.

Freeze for at least six hours, or up to 2 weeks: The ice cream will become more firm the longer you let it freeze. For best texture and flavor, eat within two weeks.

Perhaps you’ve made classic nice cream before by blending frozen bananas to a soft serve-like consistency. Now consider the flavor boost you’ll get from coating those bananas with spices and grilling them for smoky richness before freezing them. Coat grill rack with nonstick spray. Preheat grill to medium-high heat or prepare medium-high fire.

Cut each banana in half crosswise; cut each half in half lengthwise. Arrange bananas cut side up on a sheet pan; coat bananas with nonstick spray. In a small bowl, combine sugar, cinnamon, and cayenne pepper; sprinkle over bananas.

Arrange bananas, spiced side down, on hot grill rack. Grill until well marked, 2 to 3 minutes. Carefully turn bananas over and cook 2 more minutes. Remove from grill. Cut into 1-inch pieces and arrange on sheet pan. Freeze until completely firm, about 3 hours.

How To Make Ice Cream Without Eggs

Make the cornstarch slurry: Place a 1/4 cup of the milk and cornstarch in a small bowl and whisk until the cornstarch is fully dissolved. You can reach into the bowl and rub out any lumps between your fingertips if you want to be really sure.

Smooth out the cream cheese: Place the cream cheese and 1/4 cup of the milk in another small bowl and whisk until smooth. Whisk in the salt.

Simmer the milk: Place the remaining 1 3/4 cups milk, cream, sugar, and honey in a medium saucepan and whisk to combine. Lay the vanilla bean flat on a cutting board and slit it open lengthwise. Use the tip of a teaspoon (or the knife) to scrape all the vanilla beans into the saucepan, then toss in the whole vanilla bean pod as well. Bring to a simmer over medium heat, whisking frequently. Reduce the heat and simmer for 4 minutes. Remove from the heat.

Thicken the ice cream base: Whisk about 1/2 cup of the hot milk mixture into the cornstarch slurry. Slowly pour this back into the hot milk, whisking constantly. Return to the medium heat and cook, whisking frequently, until it comes to a boil. Boil for 1 minute, then remove from the heat. Whisk in the cream cheese mixture. Remove the vanilla bean husk. Whisk in the vanilla extract.

Chill the ice cream base: Chill this ice cream base for at least 4 hours or overnight in the refrigerator. You can also pour your ice cream mix into a bag and submerge it in ice water. This will chill your base very fast and very thoroughly, although it is a bit of mess and hassle to deal with. (Make sure your ice cream maker base is frozen at before proceeding to the next step.)

Churn the ice cream base: Now comes the centerpiece of the ice cream action — freezing the ice cream! The goal of churning the ice cream is to freeze the base while agitating or stirring the ice cream constantly so that large ice crystals don&#x27;t form in the ice cream. More professional-quality ice cream makers will also beat a quantity of air into the ice cream as it freezes. But most home ice cream makers are not going to add a great deal of air to ice cream, which means that nearly all homemade ice cream is really closer to premium ice creams and traditional gelato, which have much less air by volume.

Stir in mix-ins: If you&#x27;re adding something extra to ice cream, like chocolate drizzle, fruit sauce, or cookie bits, it&#x27;s best to do this at the very end of the ice cream churning process. You can drizzle your sauce or mix-ins straight into the ice cream and let the ice cream maker mix them in, or if you&#x27;re doing a more hack-type method, just stir in these mix-ins by hand. Sometimes if I am using something really delicate, or adding a sauce I want swirled in distinctly (instead of really combined), I&#x27;ll scrape the ice cream out of the maker, then fold in carefully by hand before ripening the ice cream.

Harden the ice cream in the freezer: No matter what kind of ice cream maker you use, the freshly churned ice cream will still be very soft and even runny after it has been churned. In order to get that scoopable texture, and to let the flavors meld and bloom, it&#x27;s best to freeze the ice cream for at least a few hours before eating. Scrape the ice cream into a shallow container (to help it freeze faster) and, just like when making custard or pudding, cover the surface of the ice cream completely with plastic wrap or waxed paper. Seal with a lid and freeze for a few hours. Then scoop and enjoy!

Homemade "Drumstick" Ice Cream Cones

semisweet chocolate, roughly chopped

Melt the chocolate in a medium saucepan over low to medium-low heat, stirring frequently with a silicone spatula to prevent burning. Remove from heat. Stir the oil into the melted chocolate and transfer the mixture to a small bowl.

Remove the ice cream from the freezer to soften. Meanwhile, drizzle about 2 teaspoons of melted chocolate into the bottom tip of each waffle cone; place each cone in a short drinking glass or mason jar to hold upright. Transfer cones to the freezer for a couple of minutes to let chocolate harden. 

Working quickly, fill up a cone with softened ice cream, using an offset spatula to press it in and smooth the surface once it reaches the rim. Add a large, rounded scoop on top of the cone, smoothing out and filling the edges with more ice cream if needed. Return the cone to its glass and place it in freezer immediately; continue with remaining cones. Allow the cones to harden for about an hour. 

Remove the cones from the freezer. Dip a small silicone pastry brush into the chocolate mixture. Working quickly, spread the chocolate over the ice cream as well as the top 1-inch of the cone. Immediately sprinkle chopped peanuts over the chocolate layer. (I found it easiest to work in small sections, brushing on the chocolate in 1 - 2 inch strokes, adding some peanuts, and then coating another section.) Be sure to fill in the gaps between the ice cream and the cone with plenty of chocolate to prevent any ice cream from leaking down the sides. 

Freeze again until the chocolate has hardened, at least 15 - 20 minutes. (These can be made up to 24 hours in advance. Once the chocolate has hardened, wrap the cone and top loosely in plastic wrap and keep in the freezer until serving.

For the record: Sherbets may contain some dairy, unlike sorbets, which do not.

Roasted Strawberry-Buttermilk Sherbet

Preheat oven to 425°. Combine strawberries and sugar in a 13x9x2 inches baking pan. Scrape in seeds from vanilla bean and add pod; toss to combine. Roast berries, stirring occasionally, until juices are bubbling, 15–20 minutes. Let cool.

Discard pod. Purée berries, buttermilk, sour cream, and salt in a blender until smooth. Process mixture in an ice cream maker according to manufacturer's instructions. Transfer sherbet to an airtight container and freeze until ready to serve.

DO AHEAD: Sherbet can be made 1 week ahead. Keep frozen. Let soften at room temperature 15 minutes before serving.

The best frozen yogurt is also the easiest to make. It's just full-fat yogurt and sugar, and churns up into a creamy yet fresh-tasting frozen dessert that does justice to all of yogurt's natural tangy flavors.

The Best (and Easiest) Frozen Yogurt Recipe

Whisk yogurt, sugar, and salt together in a mixing bowl until sugar has completely dissolved. Chill in an ice bath or refrigerate until yogurt registers at least 45°F on an instant-read thermometer.

Churn yogurt in ice cream machine according to manufacturer's instructions. Transfer ice cream to airtight container and chill in freezer for at least 4 to 5 hours before serving.

We have gotten totally spoiled by living near a bunch of really good ice cream shops with all sorts of great flavors. A favorite of mine is malted ice cream -- in ice cream form, not in shake/frappe form. It may not be terribly sophisticated, but I adore malt (and malted milk balls), probably because we had a malt shop in town that made insanely thick malts -- complete with whipped cream, a wafer, and a cherry on top -- when I was growing up, and it was where we went for treats on warm summer evenings. Anyhow, back to the present. Earlier in the summer, our neighborhood ice cream shop (a.k.a. our after-dinner destination almost every day) had both malted vanilla and a chocolate ice cream with pretzel pieces. I had a scoop of each together, but what I really wanted was to have them combined into one flavor (plus the pretzel bits weren&#39;t coated in anything to keep them from getting soggy, and something definitely needed to be done about that!). So, ta-da! This is basically a malted version of Cook&#39;s Illustrated&#39;s vanilla ice cream with homemade chocolate covered pretzel nubbins swirled in. I usually don&#39;t use corn syrup in anything, but I&#39;ve got to say, it does a nice job of keeping the ice cream from freezing too hard.

Malted Vanilla Ice Cream with Chocolate-Covered Pretzels

Line a rimmed baking sheet with wax paper. Gently melt the chocolate in a double boiler or in the microwave. Stir in the butter until the mixture is smooth and the butter has completely disappeared.

Drop the pretzel bits into the chocolate and stir until all the pretzel pieces are coated. Then, using a fork, lift the pretzel bits out of the chocolate several at a time and push them onto the lined baking sheet, trying to make sure the individual pieces are separated from each other, for the most part. Transfer to the refrigerator to chill until the chocolate has hardened. Store in an airtight container until ready to use.

Combine the cream, milk, 1/4 cup of sugar, corn syrup, and salt in a heavy-bottomed saucepan and heat to a bare simmer, then turn the heat down. Meanwhile, in a medium bowl, whisk together the egg yolks, malt powder, and the remaining 1/4 cup sugar.

When the cream mixture is hot, whisk a ladleful of the hot cream into the egg yolks (whisk vigorously!) to temper them. Repeat with one or two more ladlefuls. Then, pour the egg mixture into the pot with the rest of the cream mixture.  

Cook the custard mixture over medium-low heat, stirring constantly, until it has thickened to a custard texture and coats the back of a spoon (it will be around 180 F). Pour the custard through a fine mesh strainer into a large metal bowl, then stir in the vanilla.

You can chill your custard over an ice bath, but I have hated ice baths ever since organic chemistry (I don't like bain-maries much either for the same reason). I just stick mine, covered, into the fridge and leave it overnight or until it is completely chilled.

Transfer your custard to your ice cream machine and process according to the manufacturer's instructions until it reaches the consistency of soft serve, adding the pretzel bits in the last minute or so of churning.   

Eat immediately (mmmm, soft serve), or transfer to an airtight container and chill for a couple hours until firm.

Malted vanilla ice cream

The classic creamsicle gets an upgrade with tangy yogurt and a big jolt of orange zest to bolster the fruit's bittersweet citrus edge.

Orange Creamsicle Frozen Yogurt Recipe

Whisk together yogurt, orange juice, zest, and sugar in a mixing bowl until sugar has completely dissolved. Add lemon juice and salt in 1/4 teaspoon increments, until flavor tastes balanced between sweet and tart. Chill in an ice bath or refrigerate until yogurt registers at least 40°F on an instant-read thermometer. 

Few desserts are both rich and refreshing at the same time, but that's what pudding pops do best. They're as creamy as top-notch soft-serve, but light enough to feel just a little bracing on a hot summer's day. In fact, they turn out particularly nice with skim milk, which gives the pops an icy quality that I absolutely adore. If you like, dip 'em in melted chocolate cut with coconut oil to make a quick Klondike Bar–like treat.

DIY Pudding Pops Recipe

For the Pudding:

For the Pudding: Bring 10 ounces milk (1 1/4 cups; 280g), cream, and vanilla pod to a simmer over medium heat in a 3-quart stainless steel saucepan or saucier. Once the dairy begins to bubble, remove from heat, cover, and steep 30 minutes. 

Meanwhile, blend together vanilla seeds, sugar, tapioca starch, and salt until well combined, then whisk in eggs. Remove vanilla pod from dairy and discard, then pour into egg mixture, whisking all the while.

Return to saucepan and cook over medium heat, whisking constantly but not vigorously, until thick and just beginning to bubble. Immediately pour through a fine-mesh strainer into a quart-size measuring cup, then stir in remaining milk and rum (see note). Divide evenly between 10 three-fluid-ounce popsicle molds and freeze until just beginning to firm, about 30 minutes. Insert popsicle sticks and continue freezing until completely solid, about 4 hours. To unmold, place molds in hot tap water for a few seconds and jiggle sticks to release. Wrap individually in plastic and freeze up to 3 weeks, or arrange on a parchment-lined baking sheet and freeze while you prepare the chocolate shell.

For the Chocolate Shell (optional):  Microwave chopped chocolate with a few 15-second bursts, stirring well between each round, until fluid and warm. Stir in coconut oil with a flexible spatula and transfer to the smallest possible measuring cup or drinking glass that can accommodate a popsicle. Dip popsicles one by one, letting the excess run off. If you like, dip in sprinkles or other crunchy coating before chocolate starts to set. Return to baking sheet and freeze to ensure chocolate coating is completely hard, about 5 minutes. Transfer to individual sandwich bags and freeze up to 1 month.

Blackberry Brown Sugar Frozen Yogurt Recipe

(about 2 1/2 cups) blackberries

Combine blackberries, yogurt, sugar, and clove in a blender and purée on high speed until smooth, about 30 seconds. Pour through a fine mesh strainer into a mixing bowl, pressing on the purée with a ladle to strain out seeds. Stir in lemon zest. Add lemon juice and salt in 1/4 teaspoon increments until flavor tastes balanced between sweet and tart. Chill in an ice bath or refrigerate until yogurt registers at least 40°F on an instant-read thermometer. 

How To Make Frozen Yogurt

(about 3 cups) whole-milk plain yogurt

Freeze the bowl of your ice cream maker 24 hours in advance.

Whisk together all the ingredients: Combine the yogurt, heavy cream, and sweetener in a bowl. Whisk until heavy cream and the sweetener are fully mixed in, 1 to 2 minutes. If you&#x27;re using granulated sugar, then the mixture should feel smooth between your fingers, not gritty.

Refrigerate, if needed: If your yogurt mixture has warmed at all or if you want to wait to churn it for any reason, cover it and place it in the fridge until it has cooled to fridge temperature again. If your ingredients have only been out of the fridge a few minutes, another chilling isn&#x27;t necessary.

Churn the yogurt until thick: Pour the yogurt base into the ice cream machine. Churn until the yogurt has thickened to the texture of soft-serve or a thick milk shake (17 to 20 minutes on most machines).

Scoop into a freezer container: Smooth the top. Press a piece of parchment against the top of the yogurt to prevent ice crystals from forming.

Freeze until hard, at least 6 hours or overnight.

Serve the frozen yogurt: When ready to serve, let the frozen yogurt sit on the counter for 20 to 30 minutes, until just soft enough to scoop. Use long, shallow strokes to form balls of frozen yogurt. Serve right away.

How To Make Sorbet with Any Fruit

Freeze the ice cream base if needed. At least 24 hours before making the sorbet, place the ice cream base in the freezer to freeze if your ice cream maker requires a frozen base.

Prepare the fruit. Wash and dry the fruit. Cut away or remove any rinds, peels, pits, seeds, stems, or other non-edible parts of the fruit. Slice the fruit into bite-sized pieces. You should have around 5 cups of chopped fruit, though a little more or less is fine.

Prepare the simple syrup. Combine the sugar and water in a small saucepan and bring to a simmer over medium-high heat, stirring gently once or twice. Simmer until the sugar is completely dissolved in the water, about 5 minutes. Remove from heat and allow to cool.

Prepare for blending. Combine the fruit and 1/2 cup of the cooled simple syrup in the a blender, the bowl of a food processor, or in a mixing bowl (if using an immersion blender). Reserve the remaining syrup.

Blend until the fruit is completely liquified. Blend the fruit and the syrup until the fruit is completely liquified and no more chunks of fruit remain.

Strain the juice. If your fruit contains small seeds (like strawberries or raspberries) or is very fibrous (like mangos or pineapples), strain it through a fine-mesh strainer to remove the solids. Gently stir with a spoon as you strain, but don&#x27;t force the solids through the strainer.

Test the sugar levels with the egg-float test. Wash and dry a large egg. Gently lower the egg, still in its shell, into the sorbet base. You&#x27;re looking for just a small nickel-sized (roughly 1-inch) round of shell to show above the liquid — this indicates that you have the perfect balance of juice and sugar. If you see less shell (dime-sized), stir in a little more sugar syrup; check with an egg and continue adjusting as needed. If you see more shell (quarter-sized), stir in a little water or fruit juice; check with an egg and continue adjusting as needed. (Store leftover simple sugar in the fridge.)

Stir in the lemon juice. Stir in 1 tablespoon of the lemon juice. Taste the sorbet base and add more lemon juice if it tastes too sweet and bland.

Chill the base. Cover the sorbet base and refrigerate until very cold, at least 1 hour or overnight.

Churn the sorbet. Pour the chilled base into the ice cream machine and churn. Continue churning until the sorbet is the consistency of a thick smoothie. This typically takes between 10 and 15 minutes in most machines.

Freeze the sorbet. Transfer the sorbet to pint containers or other freezable containers and cover. Freeze for at least 4 hours, until the sorbet has hardened. Homemade sorbet will generally keep for about a month in the freezer before starting to become overly icy.

Serve the sorbet. Let the sorbet soften for a few minutes on the counter, then scoop into serving bowls.

Vanilla Ice Cream, Philadelphia-Style

Pour 1 cup of the cream into a medium saucepan and add the sugar and salt. Scrape the seeds from the vanilla bean into the saucepan and add the pod to the pot. Warm over medium heat, stirring, until the sugar is dissolved.

Remove from the heat and add the remaining 2 cups cream (or the remaining 1 cup cream and the milk) and the vanilla extract.

Chill the mixture thoroughly in the refrigerator. When ready to churn, remove the vanilla bean, rinsing and reserving it for another use, and then freeze the mixture in your ice cream maker according to the manufacturer's instructions.

Homemade Klondike Bars

vanilla ice cream

milk chocolate (chopped)

Line a 9x9-inch square baking pan with foil or parchment paper; set aside.

If you are using homemade ice cream, churn the ice cream and then immediately spread it into the prepared pan. If you are using store-bought ice cream (or already-churned homemade ice cream), let it soften in the refrigerator for about 30 minutes, and then spread it in the prepared pan. Cover the pan with plastic wrap and place in the freezer for at least 6 hours, or preferably overnight.

When ready to cut the ice cream, line a large baking sheet with parchment paper. Remove the pan from the freezer and, using the foil or parchment overhangs, lift the block of ice cream out of the pan and place on a cutting board. Working quickly, cut the ice cream into 9 even squares, using a biscuit cutter or a sharp knife. Use a flat stainless steel spatula to lift the squares onto the baking sheet lined with parchment. Place the baking sheet with the squares of ice cream in the freezer for at least 1 hour.

Meanwhile, prepare your chocolate coating. Set a medium-sized bowl over a small saucepan with about an inch of water in it. Turn the heat to low and place the chocolate in the bowl, stirring occasionally, until it is completely melted. Once the chocolate is melted, add the coconut oil and stir until it has been completely melted and incorporated into the chocolate. The mixture will be very thin. Turn off the heat, remove the bowl from the top of the saucepan and place on a wire cooling rack. Stir occasionally and allow it to cool to room temperature.

Once the ice cream squares have been in the freezer for at least an hour and the chocolate mixture has reached room temperature, remove the baking sheet from the freezer. Working very quickly, use a large fork to dip one ice cream square at a time into the chocolate mixture, ensuring that it is completely coated. Lift it out and place it back on the parchment-lined sheet. Repeat with all of the ice cream squares and then return the sheet with the chocolate-coated squares to the freezer for at least 30 minutes.

At this point, you can dip the squares again for a nice, thick chocolate coating (which is what I did), or you can be finished. If you dip them again, follow the same process as above, and again allow to freeze for at least 30 minutes following dipping. Once you are finished, you can wrap each square individually in plastic wrap, place in a zip-top freezer bag and store in the freezer.

This recipe makes rich, soft frozen custard like you'll find at Shake Shack, Kopp's, Leon's, and all sorts of custard shops around the South and Midwest.

Soft and Rich Chocolate Frozen Custard Recipe

Dutch processed cocoa powder

In a heavy-bottomed saucepan, whisk together egg yolks, sugar, corn syrup, and cocoa powder until well combined. Whisk in cream and milk until yolk mixture is fully incorporated.

Place pot over medium-low heat and cook, whisking frequently, until a custard forms on a spoon and a finger swiped across the back leaves a clean line, or until custard temperature reaches 170°F. Stir in salt and vanilla.

Strain custard through a fine mesh strainer and chill in either ice bath or refrigerator until it is very cold, about 40°F. Churn in ice cream maker according to manufacturer's instructions, then serve right away or transfer to an airtight container and chill in freezer for 1 hour to let custard firm up slightly. Serve custard within two hours of it being made.

This Homemade Ice Cream Cake recipe is better than store bought, guaranteed!! Filled with Oreos and hot fudge, this is the ultimate dessert.

Homemade Ice Cream Cake

chocolate ice cream

hot fudge sauce

OREO thins (crushed)

rainbow sprinkles (or other decorations as desired.)

Remove ice cream from the freezer and defrost about 15 minutes.

While ice cream is softening, line two 8-inch cake pans well with plastic wrap, leaving several inches of overhang.

Spoon soft ice cream into each prepared pan, pressing down to remove air bubbles as you go. Cover with plastic wrap and press down evenly to smooth the top. Freeze for 8-12 hours or until hardened.

1 hour before assembling cake, place serving platter into freezer. (Make sure your platter can freeze!)

Place heavy cream, sugar and vanilla into a large bowl and whip until stiff peaks form. Refrigerate.

To assemble cake: remove ice cream layers and serving platter from freezer. Unwrap the tops of the ice cream layers and using the excess plastic wrap, remove layers from pans. Place chocolate layer on the bottom. Smooth an even layer of hot fudge over the chocolate layer, leaving a 1/2 inch border. Sprinkle crushed OREO thins over hot fudge and press down gently. Add vanilla layer overtop. Spread whipped cream overtop of the entire cake, add sprinkles as desired and freeze until ready to serve.
