Garlic Butter Frozen Vegetables

Heat chicken broth in a medium saucepan or large skillet oven medium heat until simmering. Add vegetables and cook for 5-10 minutes, stirring often, until heated through. Drain and return vegetables to the pan.

Add butter and garlic to the pan and cook over medium heat for several minutes, stirring often, until butter is completely melted and coats the vegetables.

Remove from heat. Season with salt and fresh cracked black pepper if desired, and stir in fresh minced parsley and sprinkle on some Parmesan cheese, if desired.

It’s quick and easy to make great tasting frozen broccoli. Start with a bag of broccoli, add garlic and lemon and you’ll soon enjoy a flavorful side.

How to Cook Frozen Broccoli

(12 ounce) bag frozen broccoli, florets or cuts

Thaw broccoli

Place broccoli in a microwave-safe container. Add water. Cover. Microwave until broccoli until thawed but not hot, about two minutes. Drain and set aside.

Cook garlic.

Heat olive oil in a cast iron or nonstick skillet over medium-high heat until oil shimmers but does not smoke. Add the garlic. Cook, stirring frequently, until garlic is light brown.

Cook broccoli

Add the drained broccoli to the skillet. Toss the broccoli to coat with oil and garlic. Cook until broccoli is hot and bright green, about three to four minutes. Add the lemon zest and juice. Toss to combine. Season with salt to taste.

Add cheese.

Preheat oven to 425 degrees F and lightly grease an 8x8-inch baking dish.

In a large bowl, combine the sour cream, soup, swiss cheese, and pepper.

Fold in the defrosted vegetables and transfer mixture to the prepared baking dish.

Sprinkle the crushed crackers on top and then pour the melted butter over them.

Bake for 23-25 minutes or until top is golden brown. Serve hot.

Whip up a hearty bowl of soup in next to no time, perfect for a quick lunch or warming supper

Bring the stock to the boil with the tomatoes, then add the spaghetti and cook for 6 mins or until done. A few minutes before the pasta is ready, add the vegetables and bring back to the boil. Simmer for 2 mins until everything is cooked.

My homemade mashed potato recipe is perfect for this recipe, you’ll make a half batch to end up with 3 cups. While the potatoes boil, prepare the filling.

Prepare the Potatoes.

Preheat oil in a large pan over medium-high heat. Add the diced onions and celery. Saute for 3 minutes. Add the garlic and cook for 1 minute.

Increase heat to high. Add the ground beef. Cook and crumbled until cooked through. Drain all excess grease.

Reduce heat to medium-high. Sprinkle in the flour and toss to coat. Add the Tomato Paste and thyme. Cook for 1-2 minutes.

Deglaze the pan with the Chicken broth. Use a silicone spatula to scrape up any brown bits from the pan, this adds flavor to the filling.

Add HALF of the brown gravy. Stir in the vegetables until heated through.

Season with salt/pepper and add more gravy if desired. Taste and adjust seasoning as needed. Remove from heat.

Prepare the Filling

Transfer to a lightly greased 9-inch pie pan or 7 x 11 casserole dish. Carefully spread warm mashed potatoes on top.

Use a fork to “rake” lines into the mashed potatoes.

Assemble

Set the oven rack about 5 inches away from the broiler. Set to a high broil, 550 degrees.

Broil for about 5 minutes watch it after 2 minutes, it will go from perfectly browned to burned quickly.

Remove from heat and serve.

In a large soup pot, sauté onion until soft. Add remaining ingredients along with 7 cups of the water or broth. Cook until turnips and other vegetables are tender, about 1 hour, adding more liquid as needed. Check seasoning, adding more Creole seasoning and salt to taste.

On the Stove:

Using the sauté setting on your Instant Pot or medium heat on your stove-top pressure cooker, sauté the onion until soft. Add all ingredients and 5 cups of water. Seal the cooker and set it for 2 minutes at high pressure (or bring to pressure and cook for 2 minutes.) When the time is up, allow the pressure to come down naturally for 15 minutes and then quick-release the pressure. Check the seasonings and the amount of liquid and add more as needed.

Just made this tonight--easy and delicious! We used large lima beans, as the baby ones were not available. I guess I don't recall ever using them before, but I surely intend to in the future. Creamy and very flavorful (a bit like garbanzo beans). We also added some chopped chard at the end of cooking to boost the nutrition. Winged it on the spices as well, as I don't think you can go too wrong so long as you don't overdo it. Adding lemon in the bowl is also a great perk!

This quick and easy ground chicken stir fry is made with frozen veggies and a tasty orange ginger stir fry sauce. It&#39;s AIP, Paleo, gluten-free, dairy-free, etc. and it can be made with or without soy sauce.

Ground Chicken Stir Fry No Soy Sauce

tbsp coconut oil

oz bag frozen stir fry vegetables

coconut aminos

tbsp orange juice ((use 100% juice))

tbsp honey (or maple syrup)

Make the stir fry sauce by combining all the sauce ingredients in a small bowl. Set aside.

Heat about 1 tbsp of oil in a wok or stainless steel pan over medium-high heat. Add the ground chicken, break it up in the pan, and cook it until no longer pink. Remove it from the pan, put it in a bowl, and set it aside.

In the same pan, heat 1 tbsp of oil over high heat and allow it to get nice and hot. Add the frozen stir fry veggies to the pan and cook for 3-5 minutes or until heated through.

Reduce the heat to medium-high. Add the ground chicken back to the pan. Add the sauce in as well. Mix them together. Continue cooking for just 1-2 more minutes then remove it from the heat. Serve over cauliflower rice, sweet potato glass noodles, or side of choice.

Turn your day-old rice into this delicious Chao Fan. This Chinese-style vegetable-studded fried rice is super easy to make and is as good as anything you&#039;ve had at your fave Chinese restaurants!

Chaofan (Chinese Fried Rice)

rice

butter (or margarine)

soy sauce

oyster sauce

oil (or butter)

eggs (beaten)

onions

sesame oil (- optional)

Mash the rice gently with your hands to break apart lumps and loosen each grain. Set aside.

In a large pan or wok, heat butter or margarine over high heat until melted.

Add garlic and saute until golden. Add the frozen mixed vegetables and cook for 2 minutes or until no longer frozen and liquid evaporates.

Add the cooked rice, soy sauce, and oyster sauce and toss to mix. Cook for another minute, stirring from time to time.

Move everything to the sides and make room in the middle. Add a tablespoon of oil or butter then add the beaten eggs and stir and cook until scrambled. Make sure there are no big lumps.

Toss everything together several times to combine. Season with salt and pepper and stir. Cook for another minute or two without stirring.

Then add green onions and sesame oil and stir one last time before removing from heat.

Transfer to a serving plate.

Instant Pot Stir Fry

lbs (2 large) chicken breasts (fresh or frozen)

+ 4 tbsp cold water

soy sauce (I used Bragg's liquid aminos)

maple syrup

ginger (grated)

cornstarch

stir fry vegetables (frozen)

Green onion and sesame seeds (for garnish)

Brown rice or quinoa (for serving)

Start by cooking rice or quinoa on the stove or second Instant Pot as per package instructions.

In Instant Pot, add 1 cup water, soy sauce, maple syrup, garlic, ginger and place chicken breasts on top.

Close the lid, set pressure vent to Sealing and press Pressure Cook on High or Manual: fresh chicken - 10 minutes, frozen chicken - 15 minutes.

When display says OFF, let Instant Pot bring pressure down on its own for 10 minutes and then turn steam release valve to Venting position until the float valve drops down (if it hasn't dropped down already).
