Hamburger Soup is a quick and easy meal loaded with vegetables, lean beef, diced tomatoes and potatoes.  It’s great made ahead of time, reheats well and freezes perfectly.

Hamburger Soup

Brown onion, ground beef and garlic until no pink remains. Drain any fat.

Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.

Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

This hearty hamburger soup is loaded with ground beef, potatoes and  an assortment of vegetables, all in a savory broth. The perfect easy dinner option that the whole family will love!

carrots (peeled, quartered and sliced)

celery (thinly sliced)

beef (I use 90% lean)

garlic

can diced tomatoes (do not drain)

Heat the olive oil in a large pot over medium high heat. Add the onion, carrots and celery to the pot.

Cook for 5-6 minutes or until softened.&nbsp;

Add the ground beef to the pot and season with salt and pepper to taste.

Cook, breaking up the meat with a spoon, until browned and mostly cooked through. Add the garlic and cook for 30 seconds more.

Add the tomatoes, tomato sauce, Italian seasoning, beef broth and potato to the pot; bring to a simmer.

Cook for 25-30 minutes or until potatoes are tender. Taste and add salt and pepper as desired.

Stir in the corn and green beans and cook for 5 minutes more. Sprinkle with parsley and serve.

A hearty soup loaded with flavorful lean ground beef, nutritious vegetables, and it&#x27;s full of rich, satisfying flavor. It&#x27;s easy to throw together and a perfectly comforting, homestyle soup! Makes about 10.5 cups.

(15 oz) can fire roasted tomatoes

Worcestershire

Russet potatoes ((cut about 1/2-inch thick))

tsp dried oregano, (or 1 Tbsp fresh)

tsp dried thyme, (or 2 tsp fresh)

Salt and black pepper

Heat olive oil in a large pot over medium-high heat. Crumble in beef, then cook and break up beef until no longer pink, about 6 - 7 minutes. Transfer to a plate lined with paper towels, leave 1 Tbsp fat in pot drain of excess.

Add onion, carrots, and celery and saute 5 minutes. Add garlic and saute 1 minute longer.

Pour in beef broth, tomatoes, tomato sauce, Worcestershire, browned beef, potatoes, oregano and thyme. Season with salt and pepper to taste.

Bring mixture to a light boil, cover then reduce heat to low and let simmer, until potatoes are tender, about 25 - 35 minutes.

Stir in peas and let heat through. Stir in parsley and serve warm.

While it may sound rather ordinary, hamburger soup is a flavorful crowd-pleaser that&#x27;s easy to make.

A variety of starchy and non-starchy veggies combine with broth, seasonings and tender chunks of ground beef to make this hearty, thick and healthy slow cooker hamburger soup. Each serving provides 3-4 servings of vegetables, 7 grams of fiber and 24 grams of protein.

Slow Cooker Healthy Hamburger Soup

(14 oz.) cans fire-roasted diced tomatoes

beef broth + additional if needed

In a large skillet over medium heat add the oil. Once hot add the ground beef, onion, green pepper and garlic cloves. Saute until ground beef is no longer pink. 

Next add everything to the slow cooker except for green beans and kale. 

Cook on low for 8-9 hours or on high for 5-6 hours. 

With about two hours of cooking time left, add the green beans and kale. If you prefer your soup to be thinner, feel free to add additional broth at this time. Cook until the green beans are tender.

Taste and season as needed before serving. 

Select ‘Saute’ on the Instant Pot and add the oil. Once the oil is hot, add ground beef, garlic, onions, and bell pepper, sauté for 5-7 minutes or until meat is cooked and no longer pink.

Add the rest of the ingredient except for the kale and green beans if using frozen. Note: add 2 cups of broth vs. 1 quart. Lock the lid into place and flip valve to sealing position.

Cook on high pressure for 10 minutes. Allow for 5-7 minutes of natural pressure release before flipping value to venting position to release any remaining pressure.

Remove lid. Turn the instant pot to sauté and stir in the kale and frozen green beans. Continue to cook until kale is tender.

In a large pot or Dutch oven, over medium-high heat, brown ground beef, breaking up large pieces, until no longer pink, about 5 minutes. Add celery and onion; cook, stirring, until the vegetables are softened, about 5 more minutes.

Add broth and potatoes; bring to a boil. Reduce heat to a simmer, partially cover and cook, stirring occasionally, until the potatoes are tender, about 10 minutes.

Meanwhile, in a medium saucepan, melt butter over medium heat. Whisk in flour. Slowly add milk, whisking or stirring constantly, and cook until thickened, about 2 minutes. Whisk in tomato paste, ketchup and mustard. Remove from heat.

Slowly stir the milk mixture into the soup; bring to a boil. Reduce heat to low and gradually stir in cheese. When cheese is completely incorporated into the soup, remove from heat and stir in chives. Don’t boil the soup after the cheese has been added.

Serve topped with tomatoes, onion and/or pickles, if desired.

This creamy Shepherd&#039;s Pie Soup is made with traditional Shepherd&#039;s Pie ingredients, including mashed potatoes, cheese, ground beef, and vegetables! You&#039;ll love watching a classic comfort food transform into a delicious soup with creamy broth that your family will love.

Shepherd's Pie Soup

russet potatoes (equal to 2 lbs.)

sour cream

lb. Ground Beef (85% lean)

Tablespoons salted butter (separated)

Prep Work: Shred the cheese from a block, measure out the sour cream and half and half. Let them all sit out at room temperature.

Cook the Beef: Cook and crumble the ground beef over medium-high heat until cooked through. Drain grease. Remove the ground beef from the pot and set aside.

Boil &amp; Mashed Potatoes: While the meat cooks, peel the potatoes and cut them into thirds. Add to a stock pot and cover the potatoes with 1 inch of water. Add the salt and boil gently for 10-15 minutes or until very fork tender. Drain, then gently mash with 1 Tablespoon of butter and sour cream. Set aside.

Prepare the broth: Melt 2 Tablespoons of butter over medium heat. Add the onions and cook until softened, about 5 minutes. Add the garlic and cook for 1 more minute.

Whisk in flour, use a silicone spatula to stir as the flour cooks for 1 full minute to remove the raw flour taste.

Add the chicken broth in splashes, stirring continuously. Use a silicone spatula to loosen any beef remnants from the bottom of the pot, this will add flavor.

Add the Worcestershire sauce, Italian seasoning, mustard powder, and sage. Slowly add the half and half. Bring to a boil, then reduce to a simmer.

Stir in the potatoes until well-combined into the broth. If possible, use an immersion blender to blend until creamy. You can also transfer it to a blender in batches.

Add the ground beef and frozen vegetables and allow them to heat through, about 5 minutes.

Remove from heat. Gradually sprinkle with shredded cheese and stir until combined. Make sure the base of the soup isn’t too hot or the cheese won’t melt creamy and smooth. The soup will continue to thicken as it sits.

Taste, season with salt/pepper if desired and serve!

Before serving, taste the soup after the simmer time and add additional salt as needed. I usually end up adding a little more.

Leftovers can be frozen for up to 3 months or stored in the fridge, in an air-tight container, for up to 5 days.

Preheat a 5 1/2 qt dutch oven or soup pot with olive oil over medium heat. Add the chopped onion, carrots, and celery into the pot. Sauté the veggies until softened.

Add the ground beef, breaking it apart as you go. Cook it until it turns golden brown.

Stir in the diced tomatoes, minced garlic, tomato paste, potatoes, and beef broth. Season with Italian seasoning, salt, and pepper.

Bring the soup to a boil. Reduce the heat and simmer for 30 minutes or until potatoes are tender. Season to taste and serve garnished with chopped parsley.

This easy, nourishing, Crockpot Split Pea soup is made with simple pantry ingredients but the flavor is so rich, layered &amp; comforting. Naturally vegan, or make it with ham or a ham bone, includes stovetop as well.

Crockpot Split Pea Soup

split peas (rinsed and picked over)

red wine vinegar (or fresh lemon juice)

Add the split peas, onion, celery, carrot, garlic, bay leaves, smoked paprika, salt, broth, water and the ham or ham bone (if using) to a 6-quart slow cooker, stirring to combine.

Cover and cook on high for 5-6 hours or low for 7-8. Do not remove the lid during the cooking time.

Uncover, add the red wine vinegar, and stir to combine. Remove the ham bone (if using) and discard. Taste and add additional salt or vinegar if desired. Serve with toppings of your choice.

Note that this soup may be on the thin side at first. In testing, I turned my slow cooker completely off at the end of the cook time, leaving it covered in the slow cooker for an hour. During that time it cooled slightly and was significantly thicker, making it the ideal thickness. For this reason, if you like a thicker soup, I recommend allowing an additional hour for cooling when making this recipe.

Cover, bring to a boil, then reduce to a simmer. Cook on low for 40-50 minutes, or until the peas are cooked through and the soup has thickened.
