Preheat oven to 350 degrees F. Spray a 9x5-inch loaf pan with cooking spray. Lay a sheet of parchment paper across the bottom and up the sides of the pan (see photo in post above).

Melt the butter in a large glass bowl in the microwave (or melt butter in a pot on the stove and transfer to a large mixing bowl).

Add the honey and mashed banana to the bowl and whisk to combine. Whisk in the eggs.

Add the baking soda, salt, cinnamon and vanilla to the bowl. Whisk until very well combined.

Add the flour and mix with a rubber spatula until just combined. You want all of the flour to be incorporated into the batter, but try not to over-mix.

Transfer the batter to the prepared baking pan. Bake for 55-65 minutes, until a toothpick inserted into the center of the loaf comes out clean. Check on the banana bread after 35 minutes and loosely cover with foil as needed to prevent the top from over-browning.

Let the bread cool in the pan for 10 minutes and then transfer it to a wire rack to finish cooling.

Whole Wheat Banana Bread

Tablespoons (90 grams) unsweetened applesauce*

(72 grams) honey*

(50 grams) packed light or dark brown sugar*

(80 milliliters) milk*

(67 grams) chopped walnuts

Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Lowering the oven rack prevents the top of your bread from browning too much too soon. Spray a 9&#215;5 inch loaf pan with non-stick spray. Set aside.

You can use an electric mixer or mix everything by hand. I like to use an electric mixer because I use it to mash the bananas. Using a handheld or stand mixer fitted with a paddle or whisk attachment on medium-high speed, beat the mashed bananas, applesauce, and eggs together until combined. (Or whisk by hand.) Add the honey, brown sugar, milk, and vanilla extract. Beat on medium-high speed (or whisk) until combined. Set aside.

Whisk the flour, baking soda, cinnamon, and salt together. Pour into the wet ingredients and beat on medium speed (or by hand) until combined. Fold in the walnuts.

Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, making sure to loosely cover the bread with aluminum foil halfway through to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs. This may be before or after 60-65 minutes depending on your oven, so begin checking every 5 minutes at the 55 minute mark or so.

Remove from the oven and allow the bread to cool completely in the pan set on a wire rack before slicing and serving.

Cover and store banana bread at room temperature for 2 days or in the refrigerator for up to 1 week. Banana bread tastes best on day 2 after the flavors have settled together.

Add dry ingredients to batter: Add whisked dry ingredients to batter, and gently fold together - don&#039;t over-mix batter. Fold in chocolate chips.

Bake: line a loaf pan with parchment paper. Then carefully add batter and sprinkle extra 2 tablespoons chocolate chips. Bake for 60-65 minutes - test with toothpick. Let loaf rest for 15 minutes before lifting edges of paper and removing bread. Slice and enjoy!

Bob's Red Mill Organic Whole Wheat Flour

bananas (about 4 medium bananas)

Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. Place in the oven and toast for 8 to 10 minutes, until very light golden and fragrant, stirring once halfway through. Set aside to cool. Line a 9 x 5-inch loaf pan with parchment paper so that two sides overhang like handles. Lightly mist with nonstick spray.

In a medium mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the toasted oats. Set aside.

Mash the banana in the bottom of a large mixing bowl and double check to make sure you have 1 1/2 cups. Whisk in the honey, melted butter, milk, and Greek yogurt. If the butter resolidifies, warm the bowl in the microwave in 10-second bursts, just until it melts. One at a time, whisk in the eggs. Whisk in the vanilla extract.

Add the dry ingredients to the banana-honey mixture. By hand with a rubber spatula, stir very slowly and gently, stopping as soon as the flour disappears. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the batter with remaining 1 tablespoon oats for decoration.

Bake for 30 minutes, then loosely cover the pan with foil, making sure that the foil shields both ends of the pan (because the bread is sweetened with honey, it will caramelize and become dark at the corners). Continue baking for 35 to 45 additional minutes (65 to 75 minutes total) or until a small, thin knife inserted in the center of the loaf comes out without any wet batter clinging to it. Repeat the test once or twice. An even easier way to tell is to use an instant-read thermometer. When the bread reaches between 200 to 210 degrees F at the center, it’s done.

Place the pan on a wire rack, and let the bread cool in the pan for 1 hour. Using the parchment paper handles, lift the bread and set it out on the rack to finish cooling completely. Slice and enjoy!

Best Ever Healthy Banana Bread Recipe

bananas, mashed (about 1 1/4 cup mashed banana)

eggs, at room temperature (very important to be at room temp)

maple syrup (do not use honey)

Preheat oven to 350 degrees F. Line a 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking.

In a large bowl mix together the mashed banana, eggs, maple syrup, greek yogurt and vanilla extract to a bowl until well combined. (OR if you prefer, you can add all the wet ingredients to a blender to combine -- I prefer to mix in a bowl.)

In a large bowl, whisk together the dry ingredients: whole wheat pastry flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix!

Next, mix in the melted and cooled butter (or coconut oil).  At this point you can fold in an of the following: ½ cup chopped walnuts or ½ cup chocolate chips (or both!).

Add banana bread batter into prepared pan. Optional but not required: split a banana down the middle vertically then add on top of the batter or just add banana slices on top, side by side. Bake for 50-60 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling.

Once bread is cool, cut into 12 slices. Serve with nut butter spread on top for a healthy snack or breakfast on the go.

This blueberry banana combination goes so well together and makes a super moist bread. Using lots of very ripe sweet bananas allows you to cut back on the fat without sacrificing the flavor and texture.

Add flour mixture and blend at low speed until combined, do not over mix.

Fold in the blueberries and pour batter into the prepared loaf pans; bake in the center rack for about 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

Preheat the oven to 325°F and grease a 9x5-inch loaf pan with coconut oil.  

In a large bowl, whisk together the dry ingredients: flour, oats, baking powder, soda, and salt. Set aside.

In another bowl add the bananas and roughly mash with a fork. Whisk in the coconut oil, honey, vanilla, and eggs.

Slowly add the flour mixture. Whisk just until combined, then fold in the chocolate chips.&nbsp;

Pour the batter into the prepared loaf pan and bake for 55 to 70 minutes until a toothpick inserted into the center comes out mostly clean.&nbsp;A few crumbs are fine, you do not want to see wet batter on the toothpick.

Preheat oven to 350 degrees F. Coat an 8 ½-inch Pyrex or ceramic loaf pan with cooking spray and dust with flour. Tap out excess flour and set aside.

Whisk white whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.

Stir eggs, bananas, dates, oil, maple syrup and vanilla in a large bowl. Add dry ingredients and stir to combine. Add ½ cup walnuts and stir to combine. Spread batter in the prepared pan. Sprinkle the remaining ¼ cup walnuts over the top.

This is delicious, and it was so easy to make. I baked 30 minutes in two small pans because I wanted to taste it before taking a loaf to a friend. I also only had one ripe banana, so I added one single serving cup of applesauce.
