Slow-Cooker Pho With Eye of Round Recipe

For the Soup:

oxtails

white onion

ginger,

cinnamon

coriander seeds

fennel seeds

star anise

cloves

cardamom pod

water

beef base,

fish sauce

sugar

Kosher salt

rice noodles

red onion, very thinly sliced

For the Table:

limes,

cilantro,

basil

mint

jalapeños 6 Thai Bird chiles, thinly sliced

bean sprouts

Adjust oven rack to upper position and preheat broiler on high. 

Bring a large stockpot filled with water to boil over high heat. Add the oxtail and boil for 10 minutes. Drain bones into a colander and rinse thoroughly with cold water. Placed bones in slow-cooker.

Meanwhile, place onion and ginger on a foil-lined baking sheet and transfer to the oven. Cook until the ginger and onion achieve a nice char on both sides, about 8 minutes total. Remove from oven and add ginger and onion to slow-cooker. 

Add cinnamon, coriander seeds, fennel seeds, star anise, cloves and cardamom to a medium sauté pan over medium-high heat.  Toast until fragrant, transfer to cheesecloth and seal into a packet. Place spices in the slow-cooker, along with water, beef base, fish sauce, sugar and 1 teaspoon salt. Set slow-cooker on lowest setting, allowing broth to cook for 10 hours. 

When soup is nearly done, par-cook noodles, stopping 30 seconds short of  package directions. Drain and place in the bottom of four large, individual soup bowls.

Discard spice pack and bones from broth. If there happens to be any scum or fat on the surface, skim and discard it.  Taste broth and adjust seasoning, if necessary.

Place slices of raw beef and shards of onions on top of noodles and ladle piping-hot broth into bowls; this should cook meat through and soften onions. 

Serve with lime, herbs, jalapeños, bean sprouts, Sriracha and hoisin.

These hoisin-glazed cocktail meatballs are sticky, tangy, and perfect for your next holiday party.

Hoisin-Glazed Cocktail Meatballs Recipe

For the Meatballs:

pork (230 grams)

beef (230 grams)

hoisin sauce (15 milliliters)

soy sauce (30 milliliters)

garlic

scallion, minced

sesame oil (5 milliliters)

honey (15 milliliters)

panko breadcrumbs (1 ounce; 30 grams)

egg, lightly beaten

black pepper

For the Hoisin Glaze:

hoisin sauce (60 milliliters)

ketchup (30 milliliters)

unseasoned rice vinegar (30 milliliters)

soy sauce (15 milliliters)

To Serve:

scallion, finely chopped

sesame seeds (2 grams)

For the Meatballs: Adjust oven rack to center position and preheat oven to 375°F (190°C). Place all the meatball ingredients into a large mixing bowl and, using your hands, mix together until blended (but don’t overmix).

With wet hands (to keep the meatballs from sticking), form 1 to 1 1/2 tablespoon-sized meatballs. (Using a 1/2 ounce portion scoop makes this easier but you can also do it by eye). Place balls about an inch apart on a parchment-lined baking sheet. Bake meatballs until just cooked through, 15 to 20 minutes.

For the Glaze: Meanwhile, combine all glaze ingredients in a small saucepan. Bring to a simmer over medium heat, stirring frequently, and cook until mixture is slightly thickened, 5 to 7 minutes. Set aside and let cool.

To Serve: Brush glaze onto meatballs and top with scallions and sesame seeds. Serve with extra hoisin glaze on the side for dipping.

Char Siu doesn't refer to a sauce particularly, but the final product after this "Chinese barbecue sauce" is applied to pork that is hung onto fork skewers and roasted. Still, there's a fairly common base set of ingredients including hoisin, honey, soy sauce, sherry, Chinese five spice powder that imparts the ubiquitous flavor and glossy sheen to Char Siu.

Pistachio can be expensive but it&#39;s so delicious and crunchy on this tofu. It can be served with rice or pasta and a little sauce on top goes a long way – I used hoisin sauce.

Pistachio Crusted Tofu

tofu

pistachios

bread crumbs (I used seasoned)

Tablespoons of soy sauce

Tablespoons of Hoisin sauce

sriracha

Preheat the over to 400

Cut the tofu into fillets, and brush on 2 tablespoons of soy sauce on both sides.  Allow to sit and marinate for about 10 minutes

Using a food processor or similar device, pulse the pistachios into fine crumbs.  Place them in a bowl with the bread crumbs and pepper and mix.

In another shallow bowl add the 1/2 Tablespoon of soy sauce, hoisin sauce, and sriracha.

Dip the tofu fillets into the mixture, then into the bread crumb mixture, and place on a lightly oiled baking sheet.  You may want to add more bread crumbs to the fillets by gently pushing it down on top.

Bake for about 20 minutes or until the bread crumbs turn golden brown.  Serve with pasta or rice and add a bit of sauce to the top - i used hoisin.

In the large pan over high heat, heat the olive and sesame oils. Add the garlic, ginger, and red pepper flakes and stir-fry for 1 minute.

Add the onions, shallots, asparagus, and mushrooms and stir-fry for 2 minutes.

Add the tofu and soy sauce and stir-fry for 3 minutes until tofu goldens.

Optionally, serve over rice.

Homemade Hoisin Sauce Recipe - How to Make Hoisin Sauce

INGREDIENTS

4 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons peanut butter (Or try it with tahini or black bean sauce - peanut butter is more readily available and easier)
3 cloves garlic minced - 1 teaspoon garlic powder is good instead
2 tablespoons honey (you can use brown sugar instead)
1/2 teaspoon Chinese Five Spice Powder use more as desired
2 teaspoons Sriracha (or use any Chinese hot sauce, red chili sauce, chili paste or try your favorite hot sauce)
1 teaspoon cornstarch

Cooking Directions

Add all of the ingredients to a small pot, except for the cornstarch.
Heat to medium heat and warm through, stirring, until the ingredients combine.
In a small bowl, whisk the cornstarch with 2 tablespoons of cold water, until the cornstarch dissolves.

Recipe Notes

Crispy Tofu with Hoisin Sauce Recipe! A quick &amp; easy, high-protein meal! Serve with your favorite stir-fried veggies for the perfect dinner! Vegan and gluten-free!&nbsp;

Crispy Tofu with Hoisin Sauce

oz extra-firm tofu (drained)

garlic powder

ginger

salt

¼ tsp pepper

TBS peanut oil

TBS hoisin sauce*

Place your tofu in a fine-mesh strainer or colander and rinse. Set aside.

In a small bowl, mix together garlic powder, powdered ginger, salt and pepper. Set aside.

Cut the tofu into 1” cubes.

Add peanut oil and sesame oil to a non-stick frying pan and heat over medium heat.

Add cubed tofu pieces to the pan and stir to coat with oil.

Cook tofu for 5 minutes or until browned on one side.

Sprinkle with your seasoning mix and stir until coated.

Continue cooking until all sides are light-medium brown. (about 10-15 minutes)

Evenly pour hoisin sauce onto the browned tofu pieces and stir until all your cubes are evenly coated with sauce.

Cook for 5 more minutes, or until the tofu becomes dark brown and crispy.

Remove from heat and serve immediately over stir-fried veggies or your favorite rice/noodles!
