Spaghetti Carbonara is an Italian pasta dish with creamy egg, diced bacon, grated cheese, and copious amounts of black pepper–a Roman dish reminiscent of an American breakfast.

Spaghetti Carbonara

Delallo spaghetti (or gluten-free spaghetti)

bacon

chicken broth

baby arugula or frisée lettuce (chopped)

tbsp Italian parsley (chopped)

kosher salt and ground black pepper

Parmigiano Reggiano cheese

Pecorino Romano (preferably Locatelli)

eggs

water

tbsp white vinegar

tsp kosher salt

Bring a large pot of generously salted water to a boil.

In a deep skillet or medium pot, egg-poaching liquid to a boil over high heat, then leave on low heat.

Heat a large (12-inch) skillet over medium-high heat, cook bacon until fat renders and meat is slightly crisp, about 10 minutes. Set aside with a slotted spoon and transfer to a plate, leaving the fat in the skillet.

At the same time, add the pasta to the salted water, and add the broth to the bacon fat and simmer the broth to reduce by 1/3, about 8 to 10 minutes.

Cook the pasta until al dente, under-cooking by 2 minutes, about 8 to 10 minutes. Drain pasta but do not rinse.

To the broth add the arugula, parsley and 1/4 teaspoon salt and black pepper.

Add drained pasta, raise heat to high, and toss to coat with sauce.

Finish cooking the pasta in the broth for 2 minutes, then remove from heat, stir in cheese, and toss. The spaghetti will soak up any liquid.

Working one at a time, carefully crack each egg into a small bowl and very gently slide into barely boiling poaching liquid. Cook until whites set but yolks are still runny, about 2 to 3 minutes. Using a slotted spoon, lift each egg out of the water.

Evenly divide pasta between 4 warm bowls. Place each egg atop each bowl of pasta. Top generously with black pepper.

Serve immediately, mixing up the pasta to spread the egg and yolk throughout the bowl.

Spaghetti Carbonara is my favorite! Especially with a poached egg on top so the yolk is already warm when mixed with the noodles! This lighter version also hassome greens to the mix, so good!

Healthy-ish Spaghetti Carbonara

Do right by pasta night by whipping up our best-ever, 30-minute carbonara recipe!

Pasta Carbonara (The Best)

lb (115 g) pancetta, diced (see note)

olive oil

tsp black peppercorns,

lb (225 g) spaghettoni

(75 g) Parmesan cheese, finely grated

(75 g) Pecorino cheese, finely grated

In a large skillet over medium-high heat, brown the pancetta in the oil. Add the pepper and cook 1 minute longer. Set the pancetta aside, leaving the cooking fat in the skillet.

In a pot of lightly salted water, cook the pasta for 5 minutes or until slightly tender but still firm at the centre. Reserve 1½ cups (375 ml) of the pasta cooking water. Drain the pasta.

In a bowl, combine the egg yolks with both cheeses and ¼ cup (60 ml) of the pasta cooking water. Set aside.

Meanwhile, in the same large skillet you used to cook the pancetta, continue to cook the pasta with 1/2 cup (125 ml) of the pasta cooking water, stirring constantly, until al dente and the liquid has evaporated. Add more pasta cooking water if it evaporates before the pasta is properly cooked.

Off the heat, add the egg yolk mixture and the pancetta to the pasta. Stir continuously to prevent the eggs from coagulating. Add more pasta cooking water to thin out the sauce as needed. Serve immediately. Generously season with pepper.

Simple Steps for Perfect Pasta

One Pan Carbonara is rich, decadent, and made easy in one pan!  This traditional pasta dish is made with an amazing sauce of egg, cheese, and bacon or pancetta!

One Pan Carbonara

Ounces Spaghetti Noodles (Uncooked)

Pound Pancetta

Cloves Garlic (Minced)

Cup Parmesan (freshly grated)

Cup Romano Cheese (freshly grated)

Large Eggs + 2 Egg Yolks (whisked)

Salt

Black Pepper

Cook the pasta in a medium size soup pot or a deep skillet according the instructions on the package. Once cooked, set aside ½ cup of the pasta water, then drain the pasta and set it aside.

Place the pan back on the stove over medium heat. Add the chopped bacon and cook until slightly crispy. Add the minced garlic and cook until it becomes fragrant.

While the bacon is cooking, add the parmesan cheese, Romano cheese, whisked eggs, salt and pepper to a medium bowl, stir and set aside.

Once the bacon has cooked, remove the pan from the heat and add the drained pasta and stir to mix with the bacon.

Pour in the cheese mixture and stir for 3-4 minutes so that the pasta will start to become creamy and the eggs can cook from the residual heat from the pan. (Don’t let the pasta sit or the eggs will start to scramble.)

If the pasta is too thick, pour in two tablespoons of the reserved pasta water at a time until it reaches your desired creaminess.

Once the pasta is ready, garnish with fresh basil or parsley leaves and serve.

My 16 year old made this for his 1st recipe outside of what our family normally makes or eats. During the pandemic, he cooks on Tuesdays! I am so excited about his choices. He made is all happy and he was proud.

To avoid ending up with scrambled eggs, whisk  warm pasta water into the eggs before adding the eggs to the pasta. So the cheese doesn't clump alternate adding the eggs and cheese until it's all mixed in. I also used white pepper because my fam doesn't like the black specs.

My boyfriend is EXTREMELY picky, and I'm tired of the same old-same old... I asked him to find a recipe for me, of something he'd be willing to try. This was the recipe he chose, and I made it for dinner tonight. He cleaned his plate... I repeat, Mr. Picky absolutely CLEANED his plate!!! He said it was delicious, and I agree!

I made this the other day for my roommate and myself. I followed the recipe for the most part. I didn't measure the parmesan, so I probably ended up using more than the recipe called for. We were really excited to try this, and we ended up being quite dissapointed. I am definately an amature cook, so I may just have not done it right, but it ended up being really bland. It was still edible, but we were really dissapointed.

Followed the recipe step by step and l personally think it was too much bacon grease for the pasta. If I got rid of some grease I think the pasta would of came out perfect. Definitely wasn’t the time to get upset stomachs with no tp in stock anywhere lol.

Easy peasy and delicious!  I add sauteed mushrooms to mine. Super budget friendly!  Quick! And she loves it too!! :) Side note on not scrambling the eggs:  move noodle mixture to a hot pad or towel, let cool for 1 minute, then mix in half the cheese/eggs, stirring vigorously, repeat.

I consider myself a very seasoned cook...I tried this recipe tonight and followed it to the letter and I have to say it’s probably the worst thing I’ve ever tasted! Cook spaghetti to "al dente" in salted (2 Tbsp kosher salt per gallon) water.&nbsp; Dice guanciale into small pieces.&nbsp; Saute guanciale in a large pan with 1 tsp of olive oil for 7-10 minutes on medium heat.&nbsp; &nbsp;&nbsp;

While guanciale is cooking break 4 eggs into a bowl and mix with 1 cup of pecorino cheese.&nbsp;&nbsp;

Remove guanciale after cooked through and set aside.&nbsp; To the pan with the remaining fat add 2 ounces of pasta water and the pasta.&nbsp; Cook the pasta in the guanciale fat and water mixture for 1 minute then remove the pan from the heat.

Wait for 1 minute, then add the egg/cheese mixture to the spaghetti and mix quickly.&nbsp; A creamy sauce will form.&nbsp; If it is too dry add a couple tablespoons of pasta water at a time to get the perfect consistency.&nbsp; If it is too wet add a touch more pecorino.

Finally add the guanciale back to the spaghetti.&nbsp; Add the black pepper as well.&nbsp; Mix again and serve quickly while still creamy.&nbsp; Enjoy!

Authentic Pasta Carbonara is easy to make, full of bacon flavor, and smothered in a cheesy egg sauce that will make you crave more.

Authentic Pasta Carbonara

Cook pasta

Bring a large pot of water to a boil and season with salt. Cook pasta according to package directions. Reserve 1 1/2 cups of the pasta water before draining.

Cook bacon

In a large saucepan, cook bacon (or pancetta) over medium heat until crisp, about 7 to 10 minutes. Drain fat from bacon, reserving just 2 tablespoons of the grease.

Make egg and cheese mixture

In a mixing bowl, whisk together egg yolks, eggs, and 1 cup pecorino romano cheese.

Combine bacon and egg mixture with pasta

Toss drained pasta with cooked bacon, and 2 tablespoons of bacon grease. Pour egg mixture in, along with reserved pasta water and toss together with pasta 2 minutes.

Garnish and serve

Serve hot topped with remaining cheese, freshly ground pepper, and parsley to garnish.

20 Minute Pasta Carbonara

Meanwhile in a large skillet add cubed bacon and cook over medium high heat until golden brown. Add in garlic and cook for an additional minute. Turn off the heat and set aside.

In a small bowl whisk eggs and cheese together, set aside.

Add the pasta to the skillet with the bacon and garlic mixture. Add in the egg / cheese mixture and 1/2 cup of the pasta water. Slowly toss the pasta until the pasta is coated. Add more pasta water if needed.

Season with salt and pepper to taste. Serve immediately with fresh chopped parsley and additional cheese if desired.

Pasta Carbonara For One

In a small bowl, whisk together the egg, 1 tablespoon of grated Parmesan cheese, salt, and black pepper and set it aside to use later.

Add a little of the pasta water to the pan, stirring constantly to cool the pan off. When the pan stops sizzling, slowly add the egg and cheese mixture into the pasta a little at a time, whisking quickly until the eggs thicken, but do not scramble. The hot pasta and the gentle heat from the already warm pan is what sets the eggs to create the velvety sauce.

Thin out the sauce with a bit of the reserved pasta water, a little at a time, until it reaches your desired consistency. You will likely not use all of the saved pasta water to thin the sauce. If the heat from the pan and from the cooked pasta does not quite set the eggs, you can heat the pan again over low heat and toss the pasta until cooked.

Crumble the cooked bacon and add it to the pasta. Toss to distribute. Taste and add additional salt, if necessary. Transfer pasta to a bowl and top with additional Parmesan and chopped parsley. Enjoy hot.
