This peanut butter balls recipe has been passed down in our family for several generations. There&#x27;s not a Christmas that goes by that we don&#x27;t make them.

Peanut Butter Balls

crispy rice cereal

peanut butter

sugar

butter

chocolate chips

Place cereal in a baggie and use a rolling pin to crush it.

In a medium bowl, add peanut butter, butter, powdered sugar and crushed cereal. Mix until completely combined.

Roll into small balls. Place in fridge for at least 2 hours.

Melt chocolate chips in the microwave 2/3 cup at a time. Add a splash of corn oil to melted chocolate, if needed, to thin it out.

Roll balls in melted chocolate and place on parchment paper.

Add the sprinkles and gingerbread men candy while the chocolate is still wet.

Ready to eat when chocolate is set!

Classic Recipe for Peanut Butter Balls -- also known as Buckeyes in many areas. This is a great cookie for Christmas.

Classic Peanut Butter Balls

This recipe for buckeye balls is the classic peanut butter balls dipped in dark or white chocolate.

Buckeye Balls

butter (at room temperature)

chocolate chips chocolate

vegetable shortening

holiday sprinkles

Place the peanut butter, butter and powdered sugar in a large bowl. Mix until the ingredients are incorporated, then knead with your hands until a smooth dough forms.

Shape the dough into tablespoon sized balls and place on a sheet pan that's been lined with parchment paper.

Refrigerate the peanut butter balls for at least 30 minutes.

Place the chocolate chips and shortening in a medium bowl. If using 2 types of chocolate, place 4 ounces of each chocolate with 1 tablespoon shortening into 2 bowls.

Microwave the chocolate in 30 second intervals or until melted. Stir until smooth and thoroughly combined.

Remove the buckeye balls from the fridge. Use a toothpick to pick up each ball and and dip it into the melted chocolate. Quickly roll the ball in sprinkles if using (optional). Repeat with each ball. Use your finger to smooth over the top of each ball to remove the mark from the toothpick.

Refrigerate for 30 minutes or until set, then serve.

These buckeye balls are no bake peanut butter balls dipped in chocolate and sprinkles.

Peanut Butter Balls are sweet treats that are made with creamy peanut butter and coated with a layer of melted, semi-sweet chocolate.

vegetable oil, (as needed for thinning chocolate)

or finely chopped peanuts, (for topping (optional))

Make filling. Beat peanut butter and butter until creamy.

In the bowl of a stand mixer with a paddle attachment (or in a large bowl using a handheld mixer), beat the peanut butter and butter until creamy (about 2 minutes).

Add confectioners&#39; sugar, beating on low and increasing to high.

Working 1/2 cup at a time, add the confectioners' sugar. Beat on low for about a minute and then increase to high until smooth and creamy (about 3 minutes).

Cover bowl with plastic wrap and place peanut butter mixture in the refrigerator to chill for at least an hour.

Line a baking sheet with parchment paper and remove filling from the refrigerator.

When ready, line a baking sheet with parchment paper and remove the chilled peanut butter mixture from the refrigerator.

Scoop out peanut butter mixture with a tablespoon scoop and roll it into a ball. Repeat with all the filling.

Place peanut butter balls in the freezer to chill.

PEANUT BUTTER FILLING

Melt chocolate. Let it sit for a few minutes before coating.

While the peanut butter balls are in the freezer, melt the chocolate. Add the chocolate pieces and oil to a microwave-safe bowl. Heat in 20-second increments, stirring after every 20 seconds, until the chocolate is melted and creamy. Let it sit for about 5 minutes to cool before dipping the peanut butter balls.

CHOCOLATE COATING

Coat each peanut butter ball.

Remove the peanut butter from the freezer. (It&#039;s helpful to only remove a few peanut butter balls at a time to prevent melting.) Working one at a time, gently drop the balls into the melted chocolate, making sure they are completely covered in chocolate.

Place coated balls on parchment lined baking sheet.

Using a fork, lift out the chocolate-covered peanut butter balls. Use a toothpick or another fork to slide the peanut butter balls onto the parchment-lined baking sheet. (You may need to reheat the chocolate to keep it a thin mixture.) Add the nuts at this point, if using.

Place in the refrigerator until chocolate has set.

Place in the refrigerator for about 30 minutes, or until the chocolate has set.

Store in the refrigerator in an airtight container.

Store candies in the refrigerator in an airtight container for up to 2 weeks.

In a food processor, pulse the oats, peanut butter, honey, chocolate chips, cranberries, sunflower seeds and flax seeds until fully combined. Cover and refrigerate for 30 minutes.

Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on the baking sheet. Refrigerate for 30 minutes before serving.

Love this recipe.  I travel a lot for work, and these are always with me.  I usually add chia seeds and almonds for an extra crunch.  If you are like me and go a little overboard on the dry ingredients, add a few table spoon of water, they will still form up and hold their shape fine!

Now one of my go-to recipes!  Great in the afternoon to hold over til dinner.  Always have to make an extra batch because my daughter-in-law loves them - she’s lost 120 lbs so she’s doing things right &amp; she’s my inspiration!

Another winner for Trisha! I always make a new recipe just as the cook wrote it. After that I will make it my own. This recipe is perfect as it is written but I can add different ingredients like dried cherries or apricots. I eat two in the morning. Living alone things don’t get eaten as quickly as when my kids were home. So I freeze half the recipe and then make anew recipe when I take the half out of the freezer. Melt the peanut butter and butter together. (You can do it over low heat on the stove or in the microwave. I do mine 2 minutes in the microwave) Mix together the powdered sugar and the rice krispies.  Mix the sugar and krispies with the melted peanut butter and butter.  I just use a wooden spoon to mix them together. Form into balls about 1 inch in size or whatever size you like.

Cover a baking sheet with wax paper and place peanut butter balls on the sheet and chill in the refrigerator for about an hour.  Melt the chocolate and shortening either on the stove or in the microwave. I do it in the microwave for about 2 1/2 minutes and stir well.  Dip peanut butter balls into chocolate and place back on cookie sheet. Keep chilled until firm or about an hour. Makes 3 dozen depending on size you make them.

In a large mixing bowl, using a handheld mixer, beat the peanut butter and butter together until well combined. Add the powdered sugar, vanilla extract, and salt and mix until fully combined, stopping to scrape down the sides of the bowl as needed.

Using a one tablespoon measuring spoon or cookie scoop, scoop the peanut butter mixture, roll into balls, and place on the prepared baking sheet. Transfer the baking sheet with the peanut butter balls to the freezer for 20 minutes.

Place the chopped chocolate in a medium-sized microwave-safe bowl. Microwave in 20-30 second increments, stirring well after each increment, until completely melted and smooth.

Remove the baking sheet with the peanut butter balls from the freezer. Dip each peanut butter ball in the melted chocolate, then return to the baking sheet.

Once all of the peanut butter balls are coated in the chocolate, transfer the baking sheet to the refrigerator for 45 minutes to 1 hour or until the chocolate is hardened.&nbsp;

These no-bake bites taste like a cross between oatmeal raisin and peanut butter cookie dough. I use natural creamy peanut butter (like the kind from Smuckers) and it works really well. (Recipe updated slightly in June 2021 to ensure the best texture.)

Place the peanut butter and honey in a heat-proof container (such as a glass measuring cup) and warm for 15-30 seconds in the microwave.

Add to a medium bowl with the rest of the ingredients.

Stir thoroughly with a wooden spoon as much as you can. If the dough is at all stiff, mix with clean hands.

Use a tablespoon-size measuring spoon to portion and roll into balls. Squeeze the batter, then roll it into a ball to help it hold together easily.

Serve or store in the fridge in an airtight container for up to 2 weeks.

Line a baking sheet with parchment or wax paper and set aside.

In a large bowl, add the melted butter, powdered sugar, peanut butter, and vanilla. Beat on low with an electric mixer until fully combined.

Using a cookie scoop (or a spoon), scoop the mixture and roll into approximately 1&quot; to 1.5&quot; balls. Place on your prepared pan and repeat until you’re out of mixture.

Put the pan of balls in the fridge for at least an hour to firm up.

Melt the chocolate according to the directions (30 seconds, stir, 30 seconds, stir).

Use a toothpick to poke the balls, dip into the chocolate (I left the tops exposed), let any excess chocolate drip off, then place back on the parchment lined pan. Repeat until you’re done.

Place back in the fridge to allow the chocolate to set.

Once they were done, I removed all the toothpicks and smoothed over the hole marks.
