Pretzel Bites with Cheese Dip

water (lukewarm)

instant rise yeast ((1/4 ounce packet))

butter

brown sugar

salt

flour

baking soda

egg (beaten)

salt (for sprinkling)

milk

unsalted butter

Sharp Cheddar Cheese (grated)

salt + pepper

Cheese Dip (recipe above)

jalapeno (ribs & seeds removed, diced)

hot sauce

cayenne

Tablespoon mustard

horseradish

Dissolve the yeast in the lukewarm water. Whisk well until combined, about 1 minute. 

To a mixing bowl add the butter, brown sugar, salt, and yeast mixture. Stir until combined. Slowly add in 3 cups of flour, 1 cup at a time. Mix by hand or use mixer fitted with dough hook, until dough is thick. Add 3/4 cup more flour and stir. If dough is still sticky, add flour, and additional 1/4 cup at a time, until no longer sticky, and dough bounces back when poked with your finger.

Turn dough out onto a lightly floured surface. Knead for 2 minutes and shape into a ball. Place in a large mixing bowl that has been lightly coated with nonstick spray. Cover and let rest for 10 minutes. 

Meanwhile, bring a large pot of water to a boil with the baking soda, preheat oven to 425 degrees, and line two large baking sheets with parchment paper. 

Section dough into six equal parts and roll each section into long ropes. Then, cut into 1-1/2 inch bites.

Once water is boiling, drop 10 pretzel bites into water and boil 20 seconds. Remove with a slotted spoon and place onto prepared baking sheets, making sure that pretzel bites do not touch. Repeat with remaining pretzel bites.

Brush beaten egg over each pretzel bite and sprinkle with salt. Bake for 12-15 minutes, until golden brown, rotating the sheet pans once halfway through cooking.

Heat milk in a small saucepan over medium heat until small bubbles form on the top.

Meanwhile, melt the butter in another saucepan over medium heat. Add flour and whisk until lightly browned, 2-3 minutes.

Add the warm milk to the flour butter mixture in a slow, steady stream, whisking constantly. Cook until the mixture thickens, about 5 minutes. Add the cheese and stir until smooth. Season with salt and pepper, to taste.

Pretzel Bites with Cheese Sauce

Crispy, chewy and delicious pretzel bites made with sourdough discard. Perfect for a crowd or a snack. Top with your favorite toppings and enjoy!

Pretzel Bites with Sourdough Discard

sourdough discard (or bubbly sourdough starter, 145 grams)

water (175 grams)

sugar (5 grams)

instant yeast (7 grams)

salt (5 grams)

all purpose flour* (285 grams,

water

Tablespoon baking soda

Tablespoons unsalted butter (melted)

salt (for topping)

parmesan cheese (if desired)

cinnamon sugar (if desired)

To a large bowl or to bowl in a stand mixer, mix together the sourdough discard, water, sugar, instant yeast, salt and flour.

Knead by hand about 5-8 minutes or knead in a stand mixer for about 5 minutes until it comes together and forms a smooth ball. Add a little more flour as needed. The dough will still be sticky, but not overly sticky. Pinch off a piece of dough and roll it into a ball in your fingers. If it forms a ball with minimal sticky residue left on your fingers, you can stop adding flour. Check out a few other tips for kneading dough here.

Lightly oil a bowl or container (affiliate link) and turn the dough around in the bowl to cover it lightly with the oil. Drape a kitchen towel or some plastic wrap over the bowl and let dough rise for 1-1 ½ hours.

Line a baking sheet with parchment paper.

Once dough has doubled in size, flour a counter with 1-2 Tablespoons flour and punch down the dough. Turn it out onto the floured surface and separate into 4 sections.

Roll each section into a long strand and cut each strand into 6-8 pretzel pieces. Place each pretzel bite on the parchment paper.

Heat ½ cup of water in the microwave until almost boiling. Add 1 Tablespoon of baking soda (it will bubble up a little) and mix together. Make sure the baking soda is completely dissolved before proceeding.

Using a pastry brush, brush each pretzel bite with the baking soda/water mixture.

Preheat the oven to 500 degrees. Let the pretzel bites rise for about 10-15 minutes (usually the amount of time it takes for the oven to preheat) before baking.

Bake the pretzel bites for about 8 minutes until crisp and lightly brown on the outside.

While the pretzel bites are baking, melt the unsalted butter and prepare any toppings (salt, parmesan cheese, cinnamon sugar).

As soon as the pretzel bites are baked through, remove them from the oven and brush with melted butter. Continue adding butter until all of the butter is on the pretzel bites. It may seem like a lot of butter, but keep adding it for the best taste and flavor.

Top with salt, cinnamon sugar or parmesan cheese and enjoy immediately.

STUFFED PRETZEL BITES

14 oz tube refrigerated pizza dough ((or about 1 pound of homemade pizza dough))

cocktail smoked sausages, (sliced

Preheat oven to 375F degrees. Grease a cake pan with cooking spray and place a ramekin (or other small oven-safe bowl) in the center of the pan.

Unroll the pizza dough into a rectangle and slice into 24 squares.

Place a halved sausage on the center of each square and roll the dough together to form a ball, pinching the seams to seal.

Heat the water in the microwave for one minute until just starting to boil. Stir in the baking soda until dissolved.

Dip each dough ball into the boiled water mixture and then place into the greased pan.

Once all pieces have been added, bake in the oven for 22-25 minutes or until the dough crust is golden brown.

When the pretzel bites have finished baking, remove from the oven and allow the pan to cool.

If you prefer, spray the tops of the pretzel btes with nonstick cooking spray and sprinkle a bit more of the coarse salt on top.

Pour the honey mustard dip into the ramekin and serve immediately.

HOMEMADE SOFT PRETZEL BITES

water (100°F – 110°F)

Start yeast

In a large bowl, pour warm water and sugar, stir to mix, sprinkle with yeast and let sit for 5 &#8211; 10 minutes, yeast should become foamy. Alternatively, use the bowl of food processor or stand alone mixer, fitted with a dough attachment. Also, instead of using a spoon to mix, use a hand blender with dough attachment.

Make dough

Add 2 cups flour to yeast, mix until combined. Add salt and rest of flour, mix until combined, about 60 &#8211; 90 seconds. If using processor or mixer, beat on medium-low until dough pulls away from the sides of the bowl, about 1 1/2 minutes. If dough is too dry add more water 1 tablespoon at a time and if dough is too wet, add more flour 1 tablespoon at a time (this may all depend on weather conditions). Transfer to a lightly floured board and knead about 3 minutes, or until somewhat smooth.

Let dough rest

Sprinkle the top of the dough with a little flour and cover with a kitchen towel. Let rest for about 10 minutes, up to 1 hours. 

Grease baking sheet with olive oil, or line with parchment or silicone mat and lightly grease (this ensures your pretzels don&#8217;t stick), set aside.

Roll dough

Knead the dough three to four times, slice in half using a sharp knife or pizza cutter. Roll and shape each half into a log, about 10 inches long. Cut 1 inch pieces.

Baking soda bath

Fill a large pot (at least 4 quart) with 2 inches of water (about 8 &#8211; 10 cups). Bring to a boil. Add baking soda, it will foam up so be gentle when adding. Reduce to medium; place half of the bites in the water and poach for 30 seconds. They will sink and rise, once risen they should be ready. Use a slotted spoon to transfer pretzel bites to baking sheet. Continue until all pretzels are poached.

Bake

Using a silicone brush, coat the pretzel bites with olive oil or vegan butter, and add a sprinkle of salt over top. Bake until golden brown, 12 &#8211; 16 minutes (oven may vary).

Pretzels are best when eaten right away or the same day.

Serve plain or with your favorite accompaniment. I used dijon and whole grain mustard.

Store: You can keep leftover pretzels at room temperature, lightly covered, for up to 3 days. They may soften after storing.

The recipe was easy to follow! Pretzels turned out great!

Made these tonight with my ten year old and they were perfect. Easy to make, all the directions were thorough, flavor was spot-on! So soft and perfect amount of chew. We enjoyed them with some sweet honey mustard, but next time I'll look forward to making a vegan cheese sauce to dunk them in. They disappeared immediately! I may have to make a batch and a half next time for our family of five!

Turned out great, even better than expected!

Made these today, not sure whether I did something wrong but they were huge! They must have been about twice the height of the ones in the picture, very tasty though. 
As a tweak, I baked half with salt on as per the recipe, and when they came out of the oven, rolled the other half in cinnamon sugar meaning I had 10 savoury and 10 sweet bites.

I used instant yeast which eliminated the proofing step. Came out AMAZING!! Next time I will double or even triple the recipe.

These are fantastic! I love that they freeze well and you can just take out what you need and quickly heat in the toaster oven...they come out as good as, or even better than, fresh baked!

I made these for New Years Eve. My two kids helped and they didn't last long at all. My kids have already asked when we're making them again. Thanks for the great recipe!

Homemade Soft Pretzel Bites

active dry yeast (2 1/4 teaspoons)

unsalted butter (melted)

all-purpose flour

Vegetable oil

baking soda (for boiling the pretzels)

whole egg (beaten with 1 tablespoon cold water)

Coarse sea salt

Cheddar cheese (grated)

For the Pretzels: Combine the 1 1/2 cups water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. Let sit for 5 minutes.

Add the salt and flour and mix on low speed until combined. Increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. If the dough appears too wet, add additional flour, 1 tablespoon at a time. Remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.

Oil a bowl with vegetable oil, add the dough and turn to coat with the oil. Cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.

Preheat the oven to 425 degrees F.

Bring the 3 quarts of water to a boil in a small roasting pan over high heat and carefully add the baking soda. It will boil over, so add slowly and be careful!

Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites. Boil the pretzel bites in the water solution in batches. We did about 15 bites at a time. Boil for about 30 seconds. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching. Brush the tops with the egg wash and season liberally with the salt. Place into the oven and bake for 15 to 18 minutes until golden brown.

Remove to a baking rack and let rest 5 minutes before eating. Serve with cheese sauce.

Melt the butter in a medium saucepan over medium heat. Add the flour and cook 1 minute. Whisk in the milk and cook until slightly thickened. Remove from heat and stir in the Cheddar cheese until smooth and all of the cheese is melted. Season with salt and pepper, to taste.

In a heavy stand mixer, place all ingredients, except for Velveeta, and mix with paddle attachement until well blended. Change to dough hook and knead for 5 minutes, or until elastic and dough becomes less sticky. You may have to add a bit more flour to achieve this texture. If you don't have a mixer with a dough hook, mix all ingredients together and turn out on a floured surface and knead for 5 minutes.

Cover dough and let rest for 30 minutes. Punch down dough.

Preheat oven to 450 degrees. Line a baking sheet with parchment or grease. Mix the baking soda &amp; hot water. Set aside.

Break of 36 equal portions of the dough and slightly flatten. Put a cube of Velveeta in the center and seal well, forming into a ball. When all balls are formed, roll in the baking soda wash and place on prepared baking sheet.

Bake at 450 degrees for 10-15 minutes or until balls start to turn golden brown. You can brush with a bit of melted butter during the last 5 minutes of baking if you wish.

Makes 9 servings (4 each).
