Fonio is a gluten-free whole grain that grows in West Africa.  Similar to cous cous, it cooks quickly.  Combine it with fresh mango and crunchy cashews for this simple vegan salad.

West African Vegan Fonio Salad with Mango and Cashews

Fonio

water

¼ red onion (diced)

cherry tomatoes (halved)

cucumber

mango

parsley

lemon (juiced)

cashews

salt

black pepper

To cook the Fonio:  In a small pot, combine the fonio 2 cups of water.  Cover and bring to a boil.  Reduce heat to low for 1 minute.  Turn off the heat.  Keep covered for 4 more minutes.  Then, remove the lid and fluff with a fork.  Set aside to let cool.  While the fonio cooks, prepare the other salad ingredients.

To make the West African Vegan Fonio Salad with Mango and Cashews: In a medium bowl, combine all of the other ingredients: diced onion, cherry tomatoes, cucumber, mango, parsley, lemon juice, cashews, salt, and pepper.  When the fonio has cooled, add it to the bowl.  Toss to combine.  Taste to adjust seasoning.  Enjoy!

150 g Gorgonzola (Main)

Walnut halves

Watercress, (or a large punnet of picked leaves)

tsp Vincotto, (available from delis and some supermarkets)

Tbsp Extra virgin olive oil

Halve or quarter the figs, depending on size. Cut off the stems.

Arrange the watercress on a large platter and scatter over the walnuts. If not using fresh, lightly toast walnuts for 10 minutes in a medium-hot oven - 180C.

Arrange the figs and the cheese, then drizzle over the vincotto, olive oil, lemon juice and seasoning. Toss very gently with your hands and serve.

Put the frozen fruits and the peanut butter into the blender.

Blend the silken tofu, fruits, and peanut butter until the ingredients become a smoothie. You may need to stop the blender periodically to stir the smoothie or push down the fruits that cling to the sides of the blender to get an even blend.

Place the silken tofu on a plate. If you find the silken tofu is weeping, drain it using a paper towel to soak up the water or tilt the plate over the sink to pour out the excess liquid.

Cut the silken tofu into cubes. You may need to be careful when halving the block of silken tofu height-wise. Don&#x27;t cut your hands and avoid squishing the tofu.

Sprinkle the chopped green onions over the silken tofu.

Mix the soy sauce and sesame oil in a bowl. Pour the sauce over the silken tofu and green onions.

Garnish with sesame seeds (optional). Serve it with the chili oil or sriracha if you would like a touch of spiciness. Enjoy your silken tofu with green onion!

Salty sweet and refreshing watermelon feta salad iswhat you should be serving for every backyard BBQ party or picnic. Cubes of watermelon tossed with fresh basil leaves and crumbled feta is perfect summer salad. It’s colourful, healthy and easy to make.

Refreshing Watermelon Feta Salad

watermelon (seedless, chilled)

oz FETA cheese (crumbled – sheep’s milk feta)

basil (chopped)

extra virgin olive oil

lime (juice)

Cut out rind from watermelon. Chop the fruit into 1 inch cubes. Seedless watermelon works best for this salad. If you cannot find seedless watermelon, buy watermelon with seeds and while cutting them into cubes, remove the seeds from it. Remember this is going to be tedious job – removing seeds from watermelon.

In a small bowl whisk together olive oil, lime juice extracted from fresh lime, salt, pepper. This is the dressing for the salad.

In a large bowl combine watermelon cubes, crumbled feta and basil leaves. Toss gently until ingredients are combined well. Transfer to serving bowl. Sprinkle few basil leaves on top.

Drizzle the dressing over the salad. Stir gently to integrate the cheese, dressing into the salad.

Serve chilled.

This mi goreng instant noodle is so simple to make and goes perfectly with soft boiled eggs. The saucy egg yolks add an extra rich flavor to your noodles. Enjoy it as a snack or add vegetables to make it into a full meal.

Indomie Mi Goreng

Boil water

Boil at least 1 L (33 fl. oz.) water in a kettle. Transfer the boiled water to a saucepan and heat on high until the water is boiling.

Gather the ingredients

Boil the eggs

Add the eggs to the boiling water. Soft boil the eggs. (For my kitchen, at 5,328 ft. / 1.624 km elevation, it takes 7 minutes.) Use a timer for precision.

Add seasonings to a bowl

While the eggs are boiling, add the seasoning in the little packets to a bowl.

Prepare a bowl of cold water

Prepare a bowl with cold water to submerge the eggs when you remove them from the saucepan.

Move the eggs to cold water

Remove the eggs from the boiling water when the timer goes off. Add them to the bowl of cold water.

Peel the eggs

Cook the noodles

Add the noodles to the boiling water. Cook for 2 minutes. Use a timer.

Drain the noodles

When the timer goes off, drain the noodles through a strainer and discard the water.

Mix the noodles with the seasoning

Add the noodles to the seasonings bowl and mix thoroughly.

Add the eggs

Add the eggs to the flavored noodles. Break the soft-boiled eggs and mix the yolks with the noodles, if desired.

Garnish

(Optional) Top the noodles with a few pieces of green onion cut with kitchen shears for a garnish.

Easy recipe for mouthwatering shrimp and mango ceviche with avocado. This seafood ceviche is made with shrimp, mango, avocado, red onions, lime juice, orange juice, hot peppers, cilantro and salt.

Cut the cooked and peeled shrimp into bite sized pieces. You can also leave them whole if you prefer.

Rinse the diced onions in cold water to help remove the bitterness.

Peel and remove the pulp from mangos. Dice or cut into bite sized pieces.

Mix the cooked shrimp with the diced mango, diced red onions, diced hot peppers, chopped cilantro, lime juice (save 2-3 tablespoons of lime juice for the onion curtido salsa), orange juice and salt to taste.  Refrigerate and let marinate for about 30 minutes to 1 hour.

Use the thinly sliced red onions to make a marinated onion salsa or curtido to serve with the ceviche. Place the red onion slices in a bowl, sprinkle with some salt, and cover with cold water. Rinse well and drain. Sprinkle the washed sliced red onions with 2-3 tablespoons of lime juice. Sprinkle with additional salt to taste, and a little bit of chopped cilantro. For a spicy kick you can also add some diced hot pepper to the onion curtido salsa.

When ready to serve the ceviche, add in the diced avocado and 1 tablespoon of avocado oil (the oil is optional). Mix well, taste and add additional salt or more cilantro/hot peppers/lime juice if needed.

Serve topped with the onion curtido salsa, and with your choice of crunch side garnishes: green plantain chips (aka patacones/tostones) or chifles, popcorn, or tostado style corn.

Cup Korean radish ((무 moo))

Wash and peel the radish.

Peel and julienne the radish. One large radish should make about 6 Cups.

Put the cut radish into a large bowl and sprinkle with sea salt. Toss the radish pieces to distribute the salt evenly.

Add the vinegar, sugar and red pepper powder. You can add more or less to taste.

Prepare cold brew coffee according to package directions. Keep prepared cold brew coffee in a pitcher or carafe in the refrigerator.

Pour 1 cup (8-ounces) of coffee into a mug, cup or glass jar filled with ice. Stir in coconut milk and caramel syrup. Add sweetener, if desired. Serve immediately.

Repeat step 2 each day with remaining cold brew coffee.

150 Grams golden castor sugar

Place caster sugar, lemons and apples into the Thermomix bowl and chop *4 seconds/speed 5.*

Add 500 grams water and stir gently *20 seconds/speed 2.*
