Grilled Broccoli and Radish Salad with Garlicky Miso Dressing

Heat an outdoor grill to medium-high, direct heat (400 to 450ºF). Once hot, turn off one of the burners for indirect heat. (For charcoal grills, keep the hot coals on one side of the grill for indirect grilling.) Place both halves of the garlic head (from the dressing ingredients) in the middle of a piece of foil, drizzle with 1 tablespoon oil, and sprinkle with a big pinch of salt. Wrap the garlic in the foil and place on the grill over indirect heat. Cover and grill until a center clove of garlic is completely soft when pierced with a paring knife, 35 to 40 minutes.

Meanwhile, toss the broccoli and radishes with remaining 2 tablespoons oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. When the garlic is almost done, place the broccoli and radishes on the grill in a single layer over direct heat. Grill, turning occasionally, until charred in spots and crisp tender, 8 to 10 minutes.

Unwrap the garlic and squeeze the cloves into a large bowl; mash with a fork. Add the remaining dressing ingredients, season with salt and pepper, and whisk to combine. Transfer half the dressing to an airtight container. 

Add the broccoli and radishes to the bowl with the remaining dressing and toss to coat. Arrange on a platter and sprinkle with toasted sesame seeds or peanuts. Serve with more dressing, if desired. Save the remaining dressing for leftovers, or to use on other grilled veggies or chicken. 

How To Make a Basic Vinaigrette

Measure all ingredients into a bowl, blender, or jar.

Combine the vinaigrette: If using a bowl, use a fork or whisk to rapidly blend the vinaigrette together. If using a jar, top with the lid and shake until the vinaigrette is combined. If using a blender, blend until the vinaigrette is thoroughly combined.

Taste the vinaigrette: Dip a leaf of salad into the vinaigrette and give it a taste; tasting the dressing with the greens gives you a better idea of how the vinaigrette will taste with a salad than if you taste it on its own.

Adjust the taste: Add more olive oil for a more mellow flavor, more vinegar or lemon juice for more tartness, and more of any of the other ingredients to taste. Whisk, shake, or blend to combine.

Use the vinaigrette: For a side salad for 2 to 4, start with a tablespoon of dressing, toss, and continue adding until the greens are evenly coated and look glossy. Serve immediately.

Store the vinaigrette: Transfer leftover vinaigrette to a jar or other container with a lid (if it&#x27;s not already in a jar). If the vinaigrette contains any fresh ingredients, like lemon juice or minced shallots, store it in the fridge. Vinaigrettes will keep for 3 to 5 days; shake to recombine the vinaigrette before using.

lb Maple Sausage (ground sausage (Maple-flavored Jimmy Dean works great))

Onion (white or yellow onion works great)

Celery

Butter (salted)

tsp Poultry Seasoning

tsp Black Pepper

tsp Thyme (fresh, minced)

tsp Sage (fresh, minced)

Salt

Chicken Broth (Turkey Broth is fine too.)

Preheat the oven to 250 degrees

Cut the bread into cubes, about 1/2&quot; to 3/4&quot; cubed pieces, and lay them on a baking sheet. ( I like to find bread in the marked down or day-old section of the bakery. You can use a mixture of sourdough, white and wheat bread.)

Lay the bread cubes on a large baking sheet and bake in a 250-degree oven for about an hour.  You will want to toss them a few times in that hour to dry out all the bread.

Transfer the bread cubes to a very large bowl. Set aside while you make the rest of the stuffing.

How to make Homemade Bread Cubes for Stuffing

Preheat oven to 350 degrees.

Cut up your onions and celery. 1/2&quot; pieces work great.  Put them in a large pot with the butter.  Cook on medium heat, stirring frequently,  until your celery and onions are tender and translucent, about 8 minutes.

Add the sausage and using the bottom of the spoon, break the sausage up into small chunks.  Cook the mixture until the sausage is no longer pink.  Add the diced apples and cook for an additional minute.

Add the minced Parsley, Thyme, and Sage, Salt, Pepper and 1 1/2&quot; cups of the chicken broth.

Pour the chicken broth and celery mixture over the cubed bread.  Gently fold the ingredients together. (The stuffing should be moist but no standing water.  If it seems like it&#x27;s a little dry, add the additional 1/2 cup of chicken broth.)

Spray a 9 by 13&quot; baking dish with non-stick cooking spray.

Spread the stuffing evenly on the baking dish and bake at 350 degrees for 45-60 minutes, stirring gently every 15 minutes. When the stuffing is done, the top should be lightly brown.

Serve Immediately. Stuffing is best warm and fresh but will keep airtight in the fridge for up to 5 days.

Whisk the white wine vinegar and sugar until the sugar is mostly dissolved (it&#x27;s okay if there is still some undissolved sugar). Peel the shallot and grate it on a microplane or the smallest holes on a box grater directly into the bowl. Add the poppy seeds, salt, and ground mustard, and whisk to combine.

Whisking the dressing steadily, pour the olive oil into the dressing in a slow stream. Continue whisking until completely combined.

Transfer to a covered container and store in the fridge for several weeks. The dressing will separate as it sits; shake to recombine before using.
