This easy ground beef skillet is a flexible, family-friendly meal that comes together in just 30-minutes. Perfect for a busy weeknight or to add to your weekend meal prep menu.

Ground Beef Skillet

spaghetti squash (cut in half and seeded)

olive oil

salt, pepper, + garlic power (to taste)

lb. lean ground beef, (preferably grass-fed)

onion, (diced)

bell pepper, (diced)

garlic,

baby bella mushrooms (chopped)

tomatoes

tomato sauce

Italian seasoning

Salt and paper

basil

parmesan cheese (optional)

Preheat oven to 400.

Cut spaghetti squash in half lengthwise and seed. Season each half with a teaspoon of olive oil and a sprinkle of salt, pepper and garlic powder. Place skin side up on a rimmed baking sheet and cook in for 35-40 tender until tender. Cool and gently scrap out the squash. This will be the base of your dish.

Brown beef in a large cast iron skillet over a medium-high heat. Continually stir with a wooden spoon or spatula to make sure the meat is broken into small crumbles.

Once the meat has browned, push it to one side of the pan and add in the onion and pepper. Cook for about 5 minutes until veggies begin to soften and then mix them imntothe beef and push to the side.

Stir in the mushrooms and the garlic, season with salt and pepper,  and allow to cook for another couple of minutes until the mushrooms have softened and then mix all the veggies and beef together.

Add in diced tomatoes, tomato sauce, Italian seasoning, and salt and pepper to taste. Cook for another 15-20 minutes until all the flavors have come together and then top with fresh basil or parsley.

Serve over the top of a pile of spaghetti squash (or zoodles, rice, pasta, etc.)  and enjoy!

EASY GROUND BEEF SKILLET

INSTRUCTIONS

Serve over the top of a pile of spaghetti squash (or zoodles, rice, pasta, etc.) and enjoy!

Skillet Sweet and Sour Chicken (Whole30)

1½ lbs. boneless, skinless chicken breast,

salt

black pepper

1½ Tbsp. arrowroot starch

pineapple

medium bell peppers, any color, cut into small chunks

Place a large skillet over medium-high heat. While the skillet heats up, place chicken chunks in a bowl and toss with 1/2 Tbsp. arrowroot starch, salt, and pepper.

When skillet is hot, add 1 Tbsp. oil and reduce heat slightly. Add chicken and cook for 2-3 minutes without stirring. Flip chicken pieces when they release easily from the pan and are lightly browned. Continue cooking until chicken is almost cooked through. Transfer chicken to a plate and return pan to medium-high heat.

Add 2 tsp. oil to hot pan then add sweet onions and carrots. Sauté, stirring frequently, 4-5 minutes or until vegetables start to soften.

Add bell peppers and continue to cook an additional 5-6 minutes, stirring frequently.

While the veggies are cooking, combine ketchup, rice vinegar, garlic powder, and dried ginger. In a separate bowl, whisk 1 Tbsp. arrowroot starch into pineapple juice, then whisk this into the ketchup mixture to make the sauce.

When veggies are crisp-tender, add chicken and pineapple chunks to the pan. Add sauce and cook, stirring, 1-2 minutes or until sauce thickens.

Remove from heat, sprinkle with sliced green onions and sesame seeds, if using.

Delicious!  We also got two meals out of it!

Like it overall. I added zucchini and broccoli to it. The only thing the that seemed to be missing was coconut aminos. The second time we ate it we add coconut aminos to it and liked it better. Next time, I would try to add the coconut aminos in when cooking. Thanks for the recipe!

Cajun Honey Butter Salmon is a delicious sweet-spicy seafood recipe with a buttery and flavourful sauce that's ready in under 20 minutes! The cajun seasoning adds boldness and boastful flavor to the dish, while the honey butter serves up a sweet dainty twist. Serve as part of a main or entree and pair with veggies, grains or potatoes!

Cajun Honey Butter Salmon

Salmon Fillets

tbsp Olive Oil (divided)

tsp Cajun (or creole seasoning)

tsp Garlic Powder

tsp Onion Powder

tsp Smoked Paprika (or regular paprika)

tsp Dried Parsley Flakes

tbsp Honey

Parsley (or cilantro for garnish, as desired)

Preheat oven to 400°F (200°C). Then in a small bowl, combine all the dry seasonings - dried parsley flakes, garlic powder, onion powder, smoked paprika or paprika, cajun seasoning, black pepper, and salt and set aside.

In another bowl, combine butter and honey, mix until well combined, set aside.

Pat dry salmon, then add a drizzle with olive oil on each fillet. Season both sides of salmon generously with dry seasoning, a add a squeeze of fresh lemon juice.

Add a drizzle of olive oil to skillet or oven safe dish and place salmon fillets in the pan with a dollop of honey butter on each - do not overcrowd your pan. Set aside remainder of honey butter.

Depending on the thickness of your salmon, bake for 10 -15 minutes or until flaky and internal temp reads 145°F. When salmon near done, around the 7-8 minute mark, add remainder of honey butter to the skillet.

Remove from oven when done, spoon the sauce overtop of salmon, garnish with fresh parsley or cilantro and serve.

These Southwestern Stuffed Peppers  are flavored with taco seasoning. If you were never that impressed with the flavor of stuffed peppers you need to try this recipe. Add in some fresh Florida tomatoes, sweet corn and black beans and you have a perfect meal that cooks in one skillet and is on the table in less than 40 minutes.

Southwestern Stuffed Peppers

Florida Bell Pepper (halved and seeded)

Florida tomatoes (diced)

Colby jack or cheddar cheese

Saute

In a large skillet sauté the diced onion until translucent.

Add the ground beef and garlic to the skillet and sauté until the meat is cooked through.

Drain

Season

Add the taco seasoning and water to the pan.

Stir

Cool

Sprinkle

Stuff each pepper half. Place each pepper half on a cookie sheet that has been lined with aluminum.

Top each pepper half with the remaining cheese.

Bake

Bake in a 375 degree preheated oven for 10-20 minutes until cheese topping is melted.

Serve

Serve with sour cream, salsa and some crushed tortilla chips.

This ground turkey with butternut squash skillet is a delicious comforting and nourishing meal that is light and fresh. This recipe is a 30-minute one-pot skillet meal that is perfect for a busy weeknight!

Ground Turkey Butternut Squash Skillet

lb turkey

butternut squash, about 3 cups (cubed)

vegetable broth

Heat oil in a cast iron skillet. Add ground turkey, onion, garlic and bell peppers and sauté until meat is no longer pink. Season wtih salt, pepper and paprika

Add cubed butternut squash and vegetable broth. Give it a mix so most of the butternut squash is submerged in broth. Cover and turn heat down to a medium low. Cook for about 12 minutes or until butternut sqush has soften.

Remove from stovetop and top with gruyère cheese. Bake in 400F degreens oven for abut 5 minutes or until cheese has melted.

Garnish with fresh cilantro or parsley and serve.

30 Minute Zucchini Chicken Enchilada Skillet

Season chicken cubes with salt and pepper.

Heat a large skillet to medium hight heat.

Add avocado oil to the skillet and then add chicken breast. Saute for 3 minutes per side. Remove chicken from the skillet.

Immediately add garlic to the skillet and saute for 30 seconds. Then add onions and saute until translucent, about 2-3 minutes.

Add red pepper and poblano pepper to the skillet, saute for 3-4 minutes, stirring throughout.

Then add zucchini cubes, frozen corn and black beans to the skillet, saute for another 3-4 minutes.

Add chicken back to the skillet along with enchilada sauce. Stir to coat everything and cook for 2 minutes. Top with cheese and cover. Cook for 2 minutes or until the cheese is melted.

Serve. Optional: top with diced tomato, sliced jalapenos, sliced avocado or fresh cilantro.

Mexican Ground Beef and Cauliflower Skillet

Heat the avocado oil (or olive oil) over medium-high heat in a large skillet (I recommend using a 12 inch large non-stick skillet with a deep lip).

Add the yellow onion and cook, stirring occasionally, until it begins to soften, about 5 minutes.

Make room in the center of the pan for the ground beef then place the ground beef onto the skillet and brown for 2-3 minutes per side before breaking it up into smaller chunks using a spatula.

Mix in the chopped cauliflower, chopped red bell pepper, garlic, chili powder and sea salt until well-combined.

Add in the water (or broth or tomato sauce) and baby spinach, cover the skillet and reduce to medium heat. Cook for 5 minutes, or until the spinach has wilted. Give everything a big stir and continue cooking until much of the liquid has evaporated and the cauliflower has reached your desired level of doneness, about 5 to 8 minutes. Taste the recipe for flavor and add more sea salt, black pepper, chili powder, or lime juice to your personal taste.

Serve this main dish in big bowls with any additional side dishes such as rice, beans, avocado slices, and more. If you do cheese, sprinkle the ground beef and cauliflower recipe with grated cheddar cheese or jack cheese. You can even use this recipe for ground beef tacos using corn tortillas, low-carb tortillas, or grain-free tortillas. 

Using roughly 5 or so ingredients, you can throw together a delicious keto dinner using only one skillet!
