This speedy, kid-friendly supper is a great way of cramming a good variety of vegetables into one meal

Quick chicken chow mein

garlic cloves,crushed

good chunk fresh root ginger,grated

red chilli,deseeded and chopped

soy sauce

tomato purée

chicken breasts,cut into chunky strips

egg noodles

carrots,cut into thin sticks

pack beansprout

spring onions,halved and sliced into long strips

oyster sauce

Mix together the garlic, ginger, chilli, soy sauce and tomato purée, then add the chicken and leave it to marinate while you prep the rest of the ingredients.

Boil a large pan of water, add the noodles, broccoli and carrots, then cook for 4 mins before draining.

Heat the vegetable oil in a wok, tip in the chicken and its marinade, then stir-fry for 4-5 mins until cooked. Toss in the noodles, vegetables, beansprouts and spring onion to warm through, then mix the oyster sauce with 2 tbsp water and stir this in just before serving.

This delicious twice-cooked Chinese pork belly is really tender and packed with great flavours. Serve with green vegetables and steamed rice

Twice-Cooked Chinese Pork Belly

pork belly 1.5kg, skin removed and cut into big 5cm chunks

groundnut oil 1 tbsp

brown sugar 3 tbsp

garlic 3 cloves, crushed

Pork & noodle pan-fry with sweet & spicy sauce

Over a high heat, bring a pan of water to the boil (for the noodles). Chop the onions into chunky lengths. Heat the oil in a wok, tip in the broccoli and stir fry for 2 minutes until it starts to soften

Tip the noodles into the boiling water and boil for 4 minutes until softened. Meanwhile, add the pork strips to the wok and fry until the meat changes colour. Add the onions and mushrooms and cook for a minute or so until the mushrooms start to soften.

Stir in the sauce until everything is well coated. Drain the noodles and toss into the wok with the beansprouts and cashews. Heat until the beansprouts start to soften slightly then serve.

Chicken noodle soup

vegetable stock (or Miso soup mix)

boneless, skinless chicken breast(about 175 grams)

ginger

garlic clove,finely chopped

riceor wheat noodles

2-3 mushrooms,thinly sliced

mint or basil leaves

Pour the stock into a <a href="https://www.bbcgoodfood.com/review/best-saute-pans">pan</a> and add the chicken breast, ginger and <a href="https://www.bbcgoodfood.com/content/top-five-garlic-gadgets">garlic</a>. Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender.

Put the chicken on a <a href="https://www.bbcgoodfood.com/review/best-chopping-boards">board</a> and shred into bite-size pieces using a couple of forks. Return the chicken to the stock with the noodles, sweetcorn, mushrooms, spring onion and soy sauce. Simmer for 3-4 mins until the noodles are tender.

Ladle into two bowls and scatter over the remaining spring onion, mint or basil leaves and chilli, if using. Serve with extra soy sauce.

Healthy pad Thai

sesame oil

Make the meatballs. Gently warm the honey in a non-stick frying pan, add the fish sauce and stir to make a syrup. Leave to cool.

Put pork in a bowl and fold in honey syrup, spring onions, garlic, lemongrass, cornflour, mint and coriander. Mix and season with salt and lots of black pepper.

Shape into 20 balls and put on a tray lined with greaseproof paper. Chill for 30 mins. To make the sauce, mix all the ingredients together, then set aside.

Brush the balls with olive oil and fry for 3-4 mins each side. Serve with the sauce.

Low fat but so impressive - you can find the wrappers in freezer cabinets of Asian food stores or speciality food halls

Steamed pork & prawn wontons

spring onions, chopped small

garlic cloves, crushed

tsp grated root ginger

tbsp oyster sauce

water chestnuts

lettuce leaves,

dry sherry

tsp grated fresh root ginger,

shreds of spring onion

Mix together the pork, prawns, spring onions, garlic, ginger, oyster sauce, oil and water chestnuts.

Peel off a wonton wrapper and, with a pastry brush, lightly brush round the outside with cold water. Place 1 tsp of mixture in the centre and scrunch up into a pouch, squeezing to seal. Do not overfill. Repeat until you have around 35-40. (These can be chilled for up to 1 hr on a tray lined with baking parchment.)

For the sauce, mix together the soy sauce, sherry and ginger in a small bowl. To steam, bring a large pan of water to the boil. Line a bamboo or metal steaming basket with lettuce leaves to fit.

Arrange half the pouches in the basket (without them touching), cover and steam for 5 mins. Remove with tongs to a platter and steam the rest – check the water level. Serve, sprinkled with spring onion or sesame seeds, with the bowl of sauce.

Tex-Mex baked veggie frittata

spring onions 4, finely chopped

olive oil 1 tbsp,

spinach 100 grams, chopped

soft cheese 3 tbsp

eggs 6

cheddar 50 grams, finely grated

jalapeños 2 tbsp, drained and chopped

coriander a handful, chopped

Chicken & mango stir fry

Trim the roots and tops off the spring onions and slice diagonally. Peel and grate the ginger and crush or finely chop the garlic. Cut the mango lengthways on either side of the stone, then peel off the skin and chop the flesh into cubes. Slice the chicken into thin strips.

Heat half the oil in a large frying pan or wok. Add the chicken and stir-fry for 4-5 minutes until lightly coloured. Remove from the pan with a slotted spoon and transfer to a plate. Heat the remaining oil in the pan and add the spring onions, ginger and garlic. Stir-fry for 30 seconds, then add the mango and vegetables and stir-fry for a further 1 minute.

Return the chicken to the pan and splash in the soy and chilli sauces. Stir until evenly mixed, then cover and cook for a further 2 minutes until the chicken is tender and the veggies are slightly softened.

In an immersion blender add tahini, water, turmeric powder and maple syrup and combine until fully blended

Set aside to prepare bowl

Turmeric Tahini Dressing

Thinly slice radish and place into a bowl big enough to soak

Pour vinegar and maple syrup over radish

Sprinkle salt and mix all ingredients together. Cover with glad wrap and set aside in the fridge
