Easy Slow Cooker Chicken Taco Soup

Place salsa, black beans, pinto beans, corn, diced tomatoes, taco seasoning, and chicken broth in slow cooker. Stir to combine. Nestle chicken into the slow cooker so that it’s completely covered by the liquid and other ingredients.

Cover and cook on low for 6 hours. Remove chicken and shred or cut into bite-size pieces. Stir chicken back into the soup.

Serve with toppings as desired.

Easy Low-Carb Keto Taco Soup

14.5 ounces can diced chilis and tomatoes

I like to use a Dutch Oven so that I can cook the whole recipe using one pot. Heat a Dutch Oven on medium-high heat. Add the olive oil, onions, green peppers.

Cook for 2-3 minutes or until the onions are translucent and fragrant.

Add the ground beef and taco seasoning. Break down the ground beef using a meat chopper.

Cook for 3-4 minutes or until the ground beef is no longer pink. Drain any excess fat if necessary.

Add the broth, diced tomatoes and chilis, and tomato sauce to the pot and stir.

Lower the heat to Low. Cover the pot and cook for an additional 10-15 minutes.

Open the pot and pour in the heavy cream and stir. I like to taste repeatedly here and add salt and pepper as necessary.

Serve with toppings.

Press the Sauté button on Instant Pot, add 2 tbsp olive oil and 1 chopped onion. Cook for about 5-7 minutes or until the onion is translucent and caramelized.

Add diced red bell pepper and cook for another 4-5 minutes, until it’s softened.

Add 1 pound ground turkey, break it into smaller pieces and cook until it’s cooked through.

Add the seasoning (2 tbsp chili powder, 1 tsp paprika, ½ tsp dried oregano, ½ tsp onion powder, ½ tsp garlic powder, and 1 tsp salt). Then turn off the pot.

Then add drained and rinsed 15 oz black beans and 15 oz pinto beans, 15 oz crushed tomatoes, 8 oz tomatoes sauce, 4 cups chicken stock, and 2 cups water. Stir everything.

Cover with the lid and make sure that the valve is sealed. Cook on manual high pressure for 15 minutes. When done, do 10 minutes natural pressure release.

Open the lid, stir, and press the Sauté button again. Bring to boil, add 1 cup frozen corn, and cook for 5 minutes.

Perfect recipe and very forgiving. I am a lazy “chef”, had a series of small errors, and this dish still turned out fantastic. I had 2.25 pounds of ground beef instead of 2. I also used beef stock, not broth ...I also used the entire carton which was 4 instead of 3 cups. My kid ate three ounces of the cream cheese during prep, and then I could only find a 14oz can of diced tomatoes/chili’s so I eyeballed how much to dump in. And then....I used my instapot on the soup setting instead of a slow cooker. I garnished with a blob of sour cream, sprinkles of cheddar, and a lot of cilantro because cilantro is my favorite with tacos. I feel like you could easily alter the recipe to fit your tastes (more/less creamy, spice level, more/less broth) without changing the great flavor. I think I’m going to pre-measure the spices to have packets on hand so my kids can even throw this together real quick!

In a large pot add the diced tomatoes, corn, black beans, pinto beans, cream of chicken, chicken breast, green enchilada sauce, chicken broth, and homemade taco seasoning.

I switched it up a bit.  I also omitted the Cream of Chicken Soup.  I substituted a can of creamed corn for the regular, substituted two 10oz cans of diced tomatoes with chilies 🌶️ for the 15oz plain tomatoes, and I had a can of chili seasoned black beans with cumin and lime so I used that and omitted the taco seasoning.  It was perfect, with just the right amount of heat for our family!

I made this but substituted Pork Roast leftovers and added a can of Tomato Salsa in place of the Cream of Chicken soup, everything else is the same.  Taste test while cold as the soup was warming was great already.  Can't wait to try it once it's hot and all the flavors peak.  Got a winner here.
