Vegan Quinoa Broccoli Tots

broccoli florets (2 cups steamed + chopped)

flax eggs (2 tablespoons flaxseed meal + 6 tablespoons water)

nutritional yeast

quinoa flour

garlic powder

miso paste

hummus

Add broccoli to a steamer basket and steam until tender, about 5 minutes.

While broccoli is steaming, whisk together flaxseed meal and water and set aside.

Allow broccoli to cool for 5 - 10 minutes and transfer to a cutting board and finely chop. Transfer to a large bowl.

To the mixing bowl, add the remaining ingredients, including the flax eggs, and starting with 1 tablespoon of hummus. Stir together until it forms a dough. If the mixture seems a bit dry, add the other tablespoon of hummus.

Line a baking sheet with parchment paper and form the dough into small balls or tots. Chill in the fridge for at least 30 minutes to chill.

When ready to bake, preheat the oven to 400 degrees F. Bake for 18 - 20 minutes, flipping halfway through.

Allow tots to cool for 10 - 15 minutes before transferring to a plate and serving.

Great taste, unnecessary steps. Instead of steaming, ricing and then squeezing out the water from the cauliflower, chop and rice it while it's raw. Then spread out evenly on a baking sheet and bake for about 20 minutes, stirring halfway. This steams out the water from the cauliflower. Then do everything else as written, although I do suggest flipping halfway during baking.

Great recipe i just finished making these and they were very tasty. Since I'm keto I sub the panko with ground pork rinds.

I was disappointed.  I added lots of minced onion and these did not crisp as I’d hoped.  My daughter assures me that the packaged/frozen are better and I’d have to agree having spent 3.99 for the head of cauliflower.  I’ve made amazing purée and will stick with that.

Cauli Tots Are More Addicting Than The Real Thing

Spaghetti Squash Tots are an addictive crispy snack that will have you reaching for more! These little tots are so tasty it will be hard to believe they are healthy and low-calorie too!

Spaghetti Squash Tots

Preheat the oven to 425°F. Spray 24 count mini muffin tin with olive oil cooking spray.

Prick squash several times with a fork, place on a microwave safe plate and cook in microwave on high power for 7-8 minutes, or until slightly soft with pinched. Remove and let cool.

Halve squash lengthwise and scrape out the seeds. Using a fork, remove the spaghetti squash strands. Discard the skins. Place the squash on a large clean kitchen towel, roll up the towel and wring out as much moisture as possible from the squash. Place squash in a large bowl. Run a sharp knife thru the bowl a few times to cut the squash strands into smaller pieces.

Add the scallions, salt and pepper to the squash and stir to blend.

Using an ice cream scoop or spoon, drop tablespoons on the mixture into each mini muffin cup, filling each about half full. Flatten down with your fingers. When all cups are filled, spray the surfaces of each tot lightly with olive oil spray. Place the tin in the oven for 10 minutes.

After 10 minutes, remove the tin from the oven. Each tot should be golden brown on the bottom. Flip each tot over carefully, spray again lightly with cooking spray and return to the oven for an additional 10 minutes. The tots are done when both sides are golden brown.

Allow the tin to cool on a rack for 5 minutes, then invert to release the tots.Dust the tots with Kosher salt to taste and serve warm.

Preheat the oven to 400°F. Coat an oven proof pan with olive oil or vegetable oil spray.

Sprinkle both halves of the squash with salt and pepper. Spritz each half with olive oil spray. Place squash cut side down on the pan. Bake for 45 – 60 minutes or until the squash feels soft when squeezed.

Remove pan from the oven, allow the squash to cool slightly before handling. Using a fork, scrape the squash from the skin to loosen and remove strands.

Tater Tot Sausage Breakfast Casserole

lb sausage

(30-32 ounces) bag frozen tater tots

salt

tsp pepper

onion powder

cheddar cheese

mozzarella cheese

eggs

milk

Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.

In a large skillet, cook sausage until no longer pink. Drain fat.

In a large bowl, toss together tater tots, cooked sausage and cheeses. Pour into a lightly greased 9x13-inch pan.

Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over tater tot mixture.

**Cover and refrigerate at this point if baking later.**

Bake uncovered for 60 - 70 minutes, or until eggs are set.

Weird or not, it is kind of&nbsp;an amazing burger. A burger that your gotta eat at least once in your life time......

coconut milk (or heavy cream)

chipotle chile (minced)

To make the crema mix together the greek yogurt, coconut milk, chipotle peppers in adobo, lime juice, salt and pepper. Taste and adjust seasonings to your liking. Refrigerate until ready to use.

Cook tater tots according to package directions, but make sure to cook the tater tots until very crispy. I cooked mine for about 30 minutes.

Meanwhile preheat a grill or griddle over medium-high heat.

Combine the beef, chorizo, red pepper, chili powder, smoked paprika and pepper in a medium size bowl. Mix until just combined and then divide the meat into 5-6 patties. Grill the burgers for 4 to 5 minutes per side for medium rare or longer if you prefer. Add a slice of cheese right on top of the burgers. Let the cheese melt and then remove from the grill or griddle.

Preheat the broiler to high.

To assemble the burgers spread a little bit of the chipotle crema on the bottom of the buns. Add the burgers and place them on a baking sheet. Top each burger with a few slices of bacon and some tater tots. Sprinkle the tater tots with shredded cheese. Place the pan back in the oven for 30 seconds to 1 minutes, but watch them closely!! Remove and top with guacamole, crumbled bacon, salsa, green onions, cilantro and then a drizzle of the chipotle crema. Add the bun and EAT.

Cut the head of cauliflower in half, remove the stem, and chop into small pieces. Set aside.

Heat the oil in a large cast-iron skillet over medium heat.  Add the garlic and onion and cook until fragrant, about 2 minutes.

Add the corn, carrots, black beans, and 2 cups (600 g) of cauliflower and cook, stirring often, for another 3 minutes, until the corn starts to brown around the edges.

Add the flour, chili powder, and salt and stir until the vegetables are evenly coated.

Add the milk and diced tomatoes and cook, stirring constantly, until thickened, about 3 minutes.

Add the mozzarella cheese and stir until melted.

Turn off the heat and arrange the tater tots on top of the vegetable mixture.

Transfer to the oven and bake until browned and bubbling, about 30 minutes.

Garnish the casserole with tomato, red onion, jalapeño, and cilantro, if using.

Shred the potatoes by hand or in a food processor with the shredded blade. The latter takes about 2 seconds to complete the task, so if you want to make short work of things, put that box grater away for another day. You can keep the skins on the potatoes, to make even shorter work of it all.

Combine the shredded potatoes with the eggs and panko crumbs. Season to taste with salt and pepper.

Once you’ve combined all of the ingredients, you need to blend them just a little more. Back to the food processor, this time fitted with the steel blade. Use a couple of quick on/off pulses to get it all blended and chopped up just a bit more. This blending will make the mix easy to shape.

Shape the mix with your hands into bite-sized “tots”. Place them side by side on a parchment paper covered baking sheet. Bake in a preheated 425 degree oven for about 15 minutes or until golden brown.

Once the baked tots are cooled, they freeze beautifully. Freeze them in a single layer on a baking sheet. Once they are completely frozen, transfer to a plastic freezer bag. To reheat, place frozen tots on a baking sheet at 325 for about 30 minutes.

A delicious twist on classic Chicken Pot Pie. From scratch gravy mixed with shredded chicken breast, mixed vegetables, and finished off with cheese and crispy tater tots.

Tater Tot Topped Chicken Pot Pie

celery ((about 4 ribs of celery))

yellow onion

garlic

tbsp light butter (i use land o' lakes brand)

white all purpose flour

chicken broth (low sodium if available)

unsweetened & plain almond milk

chicken breast

frozen mixed veggies (lightly thawed)

tsp thyme, dried

reduced fat shredded sharp cheddar

60 frozen tater tots

salt and pepper

cooking spray

Preheat oven to 400 degrees.

Melt butter in a large pot or dutch oven. Add onions and celery and cook over medium-high heat until tender. When they are cooked stir in garlic and cook until fragrant.

Sprinkle flour over onions, celery, and garlic. Stir very well and cook for one minute.

Add chicken broth while whisking constantly until the broth thickens like gravy. Then pour in almond milk and continue to whisk until combined and the gravy starts to bubble. It should be thick and remind you of gravy.

Reduced heat to low and add cooked chicken, mixed vegetables, thyme, seasoned salt, and pepper. Simmer for just a few minutes all together.

Pour Chicken Pot Pie mixture into a 9x13 casserole dish that&#x27;s been sprayed wth cooking spray. Top with shredded cheese and tater tots and bake for about 35 minutes or until tater tots are golden cripy perfection.

Would not make again. Took well over an hour to set. The tater tots completely dissentegrate into the egg mixture so you’re left with little potato bits throughout, rather than chunks of potatoes. I was not a fan of the texture. Taste was overall pretty good.

Used a 13x9 pan and it came out great! Baked for about 60 minutes rather than 45.

All of the delicious components of a savory breakfast rolled into one delicious and flavorful bake: eggs, cheese, bacon, potatoes. This lighter tater tot breakfast bake starts off with a base of sautéed bacon, pepper and onion; it is mixed with eggs, cheese, and scallions and topped with crispy tater tots.  This recipe leaves you wondering.. how on earth is this &quot;lighter?&quot; Look forward to breakfast every morning with this savory breakfast bake.

Lighter Tater Tot Breakfast Bake

center cut bacon (chopped)

red bell pepper (diced)

onion (diced)

egg whites

plain non-fat Greek yogurt

tsp kosher salt

fat free cheddar cheese

scallions (chopped)

oz mini tater tots (I used Ore-Ida brand, weighed frozen)

Preheat the oven to 350F.

Chop the bacon into bite-sized pieces.  Dice pepper and onion.

Add the bacon to a frying pan, and sauté over medium high heat for about 10 minutes.

The pieces will start to be crispy, but some will still be partially uncooked.

Add the diced pepper and onion to the pan (do not drain the bacon fat).

Cook the pepper and onion with the bacon pieces in the bacon fat for another 5 minutes.

Spray the bottom and sides of a 9x13 casserole dish with non-stick spray.

Add the cooked pepper, onion and bacon mixture to the bottom of the casserole dish, and spread it out on the bottom to cover the entire area.

Meanwhile, in a mixing bowl, combine the eggs, egg whites, yogurt, garlic powder, and kosher salt.

Whisk the mixture together to get rid of any clumps, and add 1 cup of the cheese (reserve 1/4 cup for the top) and the chopped scallions.

Pour the egg mixture evenly over the bacon, pepper and onion mixture.

Add the still-frozen tater tots to the top of the casserole, covering the entire surface area.

Add the remaining cheese on top.

Bake for 35-40 minutes or until the egg is set up.

To reheat from the fridge: microwave to warm through (the tater tots might still be crispy this way) and then use the air fryer, toaster or oven to get it crispy again if needed.

Lots of factors influence outcome of how the tots or puffs cook. They all vary in size,  thickness, and sometimes the coating so you’ll have to adjust timing. For smaller air fryers (less than 5qt.) 1 pound is about the max without overcrowding the air fryer. The more you fill the basket the more frequently you’ll want to shake the basket to help them cook evenly. If you have a larger air fryer, you can cook more so long as the basket isn’t filled more than 1/2 full. All air fryers are different and some cook much hotter than others. Once you cook your first batch, you’ll know more of what works for your model of air fryer and size of food. These  were tested on basket style air fryers. Read more recipe notes below the recipe.
