Instant Pot chicken thighs are so basic, yet so handy and versatile. You can enjoy them as a main dish, as well as in salads and casseroles.

Instant Pot Chicken Thighs

1.3 pounds boneless skinless chicken thighs ((I've done 1 to 2 pounds with this method))

garlic powder ((about 1/4 tsp per chicken thigh))

oregano ((about 1/8 tsp per chicken thigh))

basil ((about 1/8 tsp per chicken thigh))

salt and pepper

cooking spray

water

Season the chicken thighs on side one first.

Spray the pot with some cooking spray, and set the sauté function to medium.

Once the display says "Hot," place the thighs (seasoned side down) into the pot. Season the second side.

Brown the chicken thighs on each side for about 3 minutes.

Remove the chicken thighs with tongs, and place them on a plate.

Add water, and use a wooden spoon to scrape up any brown bits.

Add the trivet and the chicken thighs back on top.

Cook at manual high pressure for 10 minutes, and allow the pot to do a full natural pressure release (NPR - mine took 15 minutes to depressurize, FYI).

Serve with simple side items, or use in casseroles, on top of salads, etc.&nbsp;

Instant Pot Teriyaki Chicken is healthy, sticky and flavorful made with any fresh or frozen chicken. Tastes just like your favorite Asian take-out but with less sodium, clean ingredients and ready in only 30 minutes. Easy pressure cooker dinner entire family will love!

Instant Pot Teriyaki Chicken {Better than take-out!}

chicken breasts

maple syrup

soy sauce (I used Bragg's liquid aminos)

tbsp rice vinegar

garlic

ginger

Sesame seeds and green onion (for garnish)

In Instant Pot, add water, maple syrup or honey, soy sauce, rice vinegar, garlic, ginger and chicken.

Close the lid, set pressure vent to Sealing and press Pressure Cooking on High for 10 minutes if using boneless chicken or 20 minutes for bone in chicken.

Display will say ON, Instant Pot will take about 15 minutes to come to pressure, you will see a bit of steam coming out from a valve, then float valve will rise and countdown will begin.

After 10 or 20 minutes, Instant Pot will beep and display will say OFF. Wait 5 minutes and then turn pressure valve to Venting position to release remaining pressure.

Open the lid, shred chicken right in the pot and press Saute (cancel Keep Warm if it’s on).

In a small bowl, whisk cold water and cornstarch with a fork, pour over chicken and stir gently. Cook for a few minutes until sauce has thickened a bit.

Serve with brown rice or quinoa, garnished with sesame seeds and green onion.

Fresh and juicy peas are ideal for a side dish, but are just as comfortable as the star ingredient in this aromatic chicken pilaf.

Place the oregano leaves, parsley, parmesan and first measure of olive oil into a kitchen processor. Pulse until all are well combined. Season with salt and pepper.

Heat the tablespoonful of oil in a frying pan. Add the red onions and garlic, cooking slowly for 10 minutes to soften. Add the balsamic and chicken stock, stirring through.

Spread the onion mixture into an ovenproof baking dish. Place the chicken thighs on top, snuggling them among the onions. Place a spoonful of the oregano mixture on to each thigh.
