Step 1
Quarter the peppers and remove the seeds and the pith. The easiest way to do this is to hold the tops of the peppers and slice off each quarter.
Step 2
Lightly drizzle the peppers with olive oil and season with salt and pepper.
Step 3
Lay the pepper pieces in the air fryer basket in a single layer, though if a few are overlapping that’s okay. They will shrink as they cook.
Step 4
Cook at 400°F/200°C for approximately 12-14 minutes. Halfway through the cooking time, shake the air fryer pan to flip the pepper pieces.
Step 5
If leaving the peppers unpeeled, they can be served right away. If peeling the peppers, let them sit in a covered bowl or container to lightly steam after cooking. Once cooled to room temperature, the skin can be peeled off.
Step 6
Store in the refrigerator in an airtight container for up to 4 days.
