Step 1
Combine the coconut oil and baking chips in a microwave safe bowl, and heat for 30 seconds at a time until the chips are completely melted and smooth.
Step 2
Add the regular and the toasted coconut flakes to the bowl with the melted chocolate and stir to combine well.
Step 3
Use a cookie scoop or small spoon to scoop out 12 portions of the coconut mixture onto a parchment-lined baking sheet.
Step 4
Chill in the fridge until the coconut clusters have hardened.
