Step 1
Place the chicken in a container that can be air tight.
Step 2
In a bowl, combine all of the marinade ingredients and pour over top of chicken.
Step 3
Seal container and shake well to coat chicken entirely.
Step 4
Marinate in the fridge for at least and hour or up to overnight before slow cooking.
Step 5
Drain the chicken and place into a 6 quart slow cooker. No additional liquid is needed. Chicken will produce its own juices.
Step 6
Cook on low for 4-6 hours or until fork tender.
Step 7
Drain chicken and place back into slow cooker.
Step 8
Mix together dressing ingredients except cheese and pour over top of chicken.
Step 9
Stir chicken to coat.
Step 10
Top with cheese and cook on high until sauce is heated through and cheese melts.
Step 11
Serve with lime wedges to squeeze over portions before eating.
