Step 1

Place a thermal serving bowl or other large bowl onto mixing bowl lid and weigh couscous and oil into it. Pour boiling water onto couscous until just covered. Cover and set aside for 5-10 minutes to absorb. Meanwhile, proceed with recipe.

Step 2

Place ginger, onion, carrot and green capsicum into mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.

Step 3

Add apricots, raisins, cashews, chickpeas and curry powder and combine 15 sec//speed 2.

Step 4

Fluff couscous with a fork to separate grains, then add carrot mixture to couscous and stir to combine. Garnish with coriander before serving.
