Step 1

Line a baking tray with wax paper. If you don’t have a baking tray, lay the wax paper on a flat, clean surface. (Countertops or tables will work just fine.)

Step 2

Add two inches of water to the bottom of a double boiler or tall saucepan. Bring it to a boil, then turn it down to a low simmer.

Step 3

Place the top of the double boiler or a heatproof bowl over the simmering water. (the bowl shouldn't touch the water)

Step 4

Add the butterscotch chips and peanut butter to the top of the double boiler or bowl.

Step 5

Use an oven glove to hold the pot and stir with a rubber spatula, scraping the bottom and the sides of the pan frequently to prevent burning.

Step 6

Stir for about 5 minutes or until the mixture is fully incorporated and smooth.

Step 7

Remove the pot or bowl from the heat, and add the chow mein noodles and peanuts to the butterscotch mixture.

Step 8

Gently stir until the noodles and nuts are fully coated.

Step 9

Use a fork or spoon to drop evenly-sized clumps of the mixture onto the wax paper-lined tray.

Step 10

Allow to cool at room temperature until they’re set and no longer sticky. Enjoy!
