Step 1

Preheat oven to 400°F

Step 2

Rinse the potatoes.  Then Cut the potatoes lengthwise (about 4 slices per fingerling potato)

Step 3

Add the oil to the potatoes and mix well

Step 4

Transfer to a baking tray and spread them evenly (one layer only)

Step 5

Place the tray in the oven

Step 6

Roast them for 40 minutes or until they pass the knife test(see notes)

Step 7

Remove them from the oven and set aside

Step 8

Heat a heavy bottom pan on medium heat

Step 9

After 30 seconds, add the butter to the pan

Step 10

Add the garlic, onions and sun-dried tomatoes to the pan.  (feel free to add a couple of tablespoons of the juice from sun dried tomatoes jar.

Step 11

Add the salt and fresh oregano

Step 12

Mix well

Step 13

Gently transfer the potatoes to the pan

Step 14

Mix the sauce and potatoes well before serving

Step 15

sprinkle additional fresh herbs over the top before serving.
