Step 1

Start off by adding diced onions, peppers, garlic, and cilantro into processor and blend

Step 2

Now add cumin, oregano, chicken bouillon cube, lime, and orange and blend

Step 3

Transfer sofrito into bowl and add olive oil. Optional: you can blend olive oil into sofrito while in food processor

Step 4

In a large baking tray, season chicken liberally on both sides with sofrito leaving some behind to stuff chicken

Step 5

Create a pocket between skin and meat and stuff chicken with sofrito

Step 6

Cover with seran wrap and marinate overnight or for at least 4 hours in the fridge

Step 7

Preheat oven to 375 degrees Fahrenheit

Step 8

Remove chicken and sprinkle salt on skin part (if you're leaving the skin on. Optional to take it off)

Step 9

Cover chicken with aluminum foil and place into oven at 375 degrees Fahrenheit. Bake for an 1 hour and 15 minutes COVERED

Step 10

After an 1hour and 15minutes, baste chicken and cook chicken UNCOVERED at 425 degrees for 30 minutes

Step 11

After 30 minutes, baste chicken again and remove half of the liquid. Place back into oven and bake uncovered for an additional 10-15minutes until skin reaches desired crispiness

Step 12

Remove chicken and let rest 5 minutes before serving

Step 13

Enjoy with your favorite side dish, rice, beans, tostones and freshly squeezed lime!
