Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.In a large bowl, combine the mixed nuts, rosemary, olive oil, salt, and pepper.

Toss until the nuts are well coated.Spread the nut mixture out on the prepared baking sheet in an even layer.

Step 3

Roast for 10-15 minutes, or until the nuts are golden brown and fragrant. Be sure to stir the nuts halfway through the cooking time to ensure they roast evenly.

Step 4

Let the nuts cool completely on the baking sheet before serving. They will continue to harden as they cool.
