Step 1
Heat an 8-inch nonstick frying pan to medium heat. Whisk together eggs, milk, garlic powder, and a dash of salt and pepper.
Step 2
Spray pan with cooking spray or brush with a little olive oil. Add egg mixture to the hot pan and swirl to coat bottom of pan.
Step 3
Use a rubber spatula to slowly scrape from the outside edge of the omelet inward, letting the runny eggs flow to the outside of the pan. Doing this a few times, inching your way around the entire outside of the omelet.
Step 4
Sprinkle feta cheese, spinach, artichoke hearts and parmesan cheese on top of the omelet and then place a lid on the pan and turn heat to low. Cook on low until top is just barely set, just 1-2 minutes. Season with additional salt and pepper, if desired. Fold omelet over, in half, and slide onto a serving plate. Enjoy!
