Peel taro, cut into ½ inch cubes, place in a large pot with 10 cups of water and cook on medium high heat until taro is soft, approximately 30 minutes.

Rinse and drain.

Add onion, bell pepper and garlic, cook for 5 minutes, stirring frequently.

Heat a skillet on medium high heat.
Step 8
Form taro into 4 equal patties and saute until golden brown on each side, approximately 4 minutes each.
Step 9
Flip occasionally.
