Peel taro, cut into ½ inch cubes, place in a large pot with 10 cups of water and cook on medium high heat until taro is soft, approximately 30 minutes.

Rinse and drain.

Mash taro with a fork or masher.

While taro is cooking, place oil in a large sauté pan on medium high heat.

Add onion, bell pepper and garlic, cook for 5 minutes, stirring frequently.

Add to taro with remaining ingredients and mix well.

Heat a skillet on medium high heat.

Form taro into 4 equal patties and saute until golden brown on each side, approximately 4 minutes each.
