Peel taro, cut into ½ inch cubes, place in a large pot with 10 cups of water and cook on medium high heat until taro is soft, approximately 30 minutes.

Rinse and drain.

Form taro into 4 equal patties and saute until golden brown on each side, approximately 4 minutes each.

Flip occasionally.
