This simple and satisfying, melt in your mouth almond cookies recipe you&#x27;ll quite likely find irresistible!

Almond Cookies

all-purpose flour (120 grams)

almond flour (60 grams)

cornstarch

tsp sea salt

tsp baking powder

confectioners' sugar (+3tbsp)

Sift the flour, corn starch, salt, baking powder, and almond flour into a bowl then whisk together and set aside.

In a stand mixer fitted with a paddle attachment, beat butter and almond extract until creamed.

Add confectioners sugar; mix until combined.

Scrape bowl down and add flour mixture while beating on low. Scrape bowl once more and mix until combined.

Wrap in plastic and chill for 20-30 minutes.

Preheat to 400 degrees.

Use an cookie scoop to portion out 2 tablespoon sized dollops. Roll in your clean hands, place on parchment or silicon lined baking sheet then press down slightly and top with two almond slivers.

Bake for about 8 minutes, the cookies will have just begun to brown at the edge when ready.

Allow to cool completely on the baking sheet.

Add about 2/3 cup of powdered sugar to a bowl then drizzle in 1 tbsp water and one and a half teaspoons of almond extract. whisk together and add a few drops of water if needed for a thinner consistency.

Drizzle over the cooled cookies and enjoy!

Allow cookies to cool completely on baking sheet. They won&#x27;t be crisp until cooled.

Keep in mind that the lace cookie batter/dough will thicken as it cools, that is completely fine and won’t affect the outcome of the cookies.

How To Make Lace Cookies

Recipe video above. These lovely little Italian cookies have a beautiful chewy texture and bursting with almond flavour. And because they&#039;re gluten free and dairy free, everyone can enjoy them!The almond sliver coating is something I copied from an Italian bakery in Sydney. It gives the cookie a great textural finish and makes it less fragile. Without it, you need to handle the cookie with care, and to me it feels less like a cookie because the crust is quite soft.These cookies are traditionally studded with dried cherries but other similar dried fruit will work in a pinch eg cranberries, or even raisins.

Italian Almond Cookies (Ricciarelli) - gluten free!

almond meal almonds ((Note 1))

caster / superfine sugar ((Note 2))

tsp lemon zest ((1 lemon))

cherries (, chopped (Note 3))

egg whites (, at room temperature (from 2 large eggs, Note 4))

tsp honey

Preheat oven to 190°C/375°F (170°C fan). Line 2 trays with baking/parchment paper.

Combine Dry Ingredients: Place the almond meal, sugar, zest, almond extract and salt in a bowl. Whisk together until zest and almond extract is evenly distributed. Add the cherries and set aside

Beat eggs whites: Using an electric mixer or a whisk, beat the egg whites and honey to soft peaks (Note 5). About 2 minutes on Speed 8 of a handheld beater, or 1 1/2 minutes on Speed 6 of a stand mixer.

Fold the beaten egg whites gently into the almond mixture. You will seemingly knock most of the air out of the meringue, that&#039;s ok! (You actually haven&#039;t :) ).

Place Extra egg white in a small bowl and whisk with a fork until foamy. Place flaked almonds in another bowl.

Form 2.5cm/1&quot; balls: Scoop up about 1 tablespoon of the mixture and shape into a rough ball (2.5cm/1&quot; ball). I do this using 2 eating spoons - we don&#039;t need perfect balls here.

Coat in egg whites: Drop the ball into foamy egg whites. Use 2 forks to turn to coat, then pick up and place in the flaked almonds.

Almond coating: Coat cookies with the almonds, pressing them on to cover as completely as you can. Don&#039;t worry if you get some double layers or pieces sticking out - no need to be neat or thorough here!

Bake 13 minutes: Place on prepared tray 2.5cm / 1&quot; apart. Bake for 13-15 minutes until golden brown. Start checking at 12 minutes to be sure the nuts aren’t burning

Cool: Transfer to rack to cool completely before serving.

Store: Store in an airtight container. They last up to 10 days in a storage container or can be frozen

Greek Almond Crescents are sweet little crescent shaped biscuits infused with orange zest and cinnamon that make a delightful tea time indulgence.

KOURABIEDES - GREEK ALMOND CRESCENT COOKIES

butter, softened

(1 cup) icing sugar, sifted

orange zest

brandy

(2 1/2 cups) plain flour

baking powder

cinnamon

(1 cup) toasted almonds, finely chopped (I used coarse almond meal)

Preheat oven to 160C (315F). Line 2 large baking trays with non-stick baking paper.

Use an electric mixer to beat the butter, sugar and orange zest in a large bowl until pale and creamy. Add egg, egg yolk, brandy and cinnamon. Beat until well combined.

Add sifted flour, almond meal and baking powder. Using a wooden spoon, mix well. Shape tablespoons of mixture into crescents and place on trays leaving 5cm gaps between them to allow for spreading.

Bake in the pre-heated oven for 15 to 20 minutes until golden, swapping trays back to front after about 10 minutes to enable even cooking. Remove from oven at the end of the cooking time. Cool on trays for 5 minutes before gently transferring them to a wire rack. While still warm, dust heavily with icing sugar. When cooled completely, store in an air tight container. Will keep well for a week or longer in the fridge.

unsalted butter (soft but cold (you can make a thumbprint in it))

Preheat oven to 400 degrees. In a bowl, with a mixer cream the butter, sugar, and almond extract. In a separate bowl mix the flour, baking powder, and salt. Add the flour mixture 2 Tablespoons at a time to the butter mixture until completely combined (important!!)

Roll into small 1-inch balls and flatten slightly. They should look like a thick checker. Cook for 7 minutes (they will not look done) at 400 degrees on a parchment lined pan. Cool cookies until they are just warm and place sliced almonds on top of each cookie.

For the glaze: Combine powdered sugar, almond extract, and water. Drizzle a spoonful of glaze on top of the almonds and cookie.

What type of butter do you like baking with?

I made this recipe exactly as written and it was perfect!

I followed the recipe exactly, the dough was dry, would not come together and very difficult to roll. Extremely disappointed in this application. As a matter of fact I ended up tossing the bulk of the dough into the trash out of pure frustration. I inquired with my accomplished baking friends and the consensus is the ratio of fat to flour and using the almond flour which might have been the cause of the poor consistency in the dough.

These cookies were soo easy to make. Very happy with the outcome. Will be bookmarking this recipe.

Made the recipe exactly as written (except I made my own preserves instead of using store bought!) and these cookies came out delicious!! I did use blanched almond flour though, I’m not sure if that would make a difference as the recipe calls for just “almond flour.” I’ve never used almond flour before at all so I just picked up a random bag of red mill and it just happened to be blanched almond flour. 

I do want to mention one review on here that states the flour was too tough to work with and their “accomplished baking friends” had something to say about it. I believe that person definitely screwed something up and just likely didn’t notice. There isn’t a ton of moisture to this cookie dough so that may pose a challenge to some, however, my personal trade mark with baking is to *always* get something wrong or screw something up and even I thought this recipe was easy to follow and I’m impressed with my own work! I just hope that review doesn’t scare anyone away from this recipe because it’s 100% worth the effort!

For me the dough was easy to manipulate, roll, and cut with my cookie cutters even after being frozen, when I took the dough scraps and joined and rolled them again to cut more cookies. 

One last thing, the recipe ingredient list also just says “1 stick of butter” being  that the recipe calls for the butter and sugar to be beat together, I did make sure to use softened butter(unsalted). I’m sure it wouldn’t have worked otherwise.

I make these cookies every year, but substitute gluten free flour for the all purpose flour.  The jam will stay nice and bright if you put the powdered sugar on all the tops before placing on top of the jam.

Nothing Beats These Classic Raspberry Linzer Cookies

A fabulous recipe for classic lace cookies, full of almonds and oats.

Almond Lace Cookies

brown sugar

corn syrup

milk

oats

all-purpose flour

½ cup toasted (finely chopped almonds)

Preheat oven to 375 degrees F; adjust oven rack to the upper third of the oven. Line baking sheet with parchment paper; set aside.

Bring the butter to a boil in a medium saucepan over medium heat. Reduce the heat so the butter slows to a gentle boil, stirring occasionally, for 3 to 4 minutes, or until the solids on the bottom of the pan turn light brown. Remove from heat.

Add the brown sugar, corn syrup, milk and salt to the butter and stir to blend well. Stir in the oats, flour and vanilla, then fold in the almonds.

Drop teaspoons of the batter onto the baking sheets, spaced about 3 inches apart. Bake for 6 to 8 minutes, or until the cookies are golden brown all over and slightly darker at the edges. Transfer the baking sheets to a cooling rack and let sit until the cookies firm up, about 5 minutes. Using a spatula, gently transfer the cookies to wire racks until cool. Store the cookies in an airtight container at room temperature for 2 weeks, or freeze for up to 2 months.

Imagine biting into a warm and soft chocolate chip cookie, and you find chewy and gooey strands of mochi inside. These mochi stuffed matcha chocolate chip cookies are irresistible and can be ready under an hour.

Matcha Mochi Chocolate Chip Cookies

glutinous rice flour

½ cup (113 g) unsalted butter

egg, room temperature

½ cup all purpose flour

tsp baking soda

tbsp Matcha powder

chocolate chips

In a microwave-safe bowl, add glutinous rice flour, sugar, and milk together. Whisk together until no lumps.

Cover the bowl with plastic wrap,. Microwave on high for about 2 minutes. Then use a spatula to mix and separate mochi from the side of the bowl (very sticky and hot, be careful!). Let cool for 10 minutes.

Grease your hands with butter or cooking spray. Separate mochi into 12 equal portions and roll them into balls. Set aside.

Mochi

In a large mixing bowl, add butter, granulated sugar, and brown sugar. Using a electric mixer with paddle attachment, beat butter and sugars together until smooth and creamy. Then add egg, and mix until combined.

In a separate bowl, sift flour, baking soda, salt and matcha powder, and mix together.

Add the dry flour mixture into the wet ingredients, mix until just combined. Then fold in chocolate chips.

Chill the dough in the refrigerator for about 15-30 minutes.

Preheat the oven to 350°F. Line baking sheets with parchment paper or grease with cooking spray.

Matcha Chocolate Chip Cookies

Take 2 tbsp of chilled cookie dough, roll into a ball, flatten it out, and make a dent in the middle. Top with a mochi ball, then use your hands to seal the dough edges around mochi until it is completely covered. Add more chocolate chips on top if desired. Repeat until all dough is used (yield about 12 cookies).

Place cookies onto the prepared baking sheets.

Bake for 11-12 minutes or until the edges of cookies are set. Let cool for 10-15 on the baking sheet before transferring to the cooling rack. Enjoy!

Assembly

I made a mocha margaret with a soft texture with a subtle coffee scent.
Almond powder and peanut butter are added to the flavor, and the minced peanuts are chewy in the middle, so the texture is good.

I made a mocha margaret with a soft texture with a subtle coffee scent. Almond powder and peanut butter are added to the flavor, and the minced peanuts are chewy in the middle, so the texture is good. The texture is really crispy on the outside and very moist on the inside, just like margaritas. When making a pattern on the upper side, I think that the center line first and then the pattern on both sides can make a good balance. If you put it in the freezer for about 10 minutes before baking and then bake it, it doesn't spread too much and comes out better in a pretty shape. Enjoy watching~♬~
