Keto Chinese BBQ Pork - "Char Siu Pork" - Simply Delicious!

Pork Butt (cut lengthways into 3 even pieces)

Low Carb Sweet Soy Sauce

Sesame Oil

Garlic Powder

Chinese Five Spice Powder

Red Food Coloring (optional)

In a small bowl, combine the Low Carb Sweet Soy, sesame oil, garlic, five spice and a few drops of food colouring (if using).

Place the 3 pieces of pork neck into a suitable dish for marinating - glass or ceramic will prevent the transfer of the coloring to the dish.

Pour half the marinade over the pork and, wearing foodsafe disposable gloves, massage the marinade into the pork.

Cover and leave to marinate in the fridge overnight. Store the remaining marinade in the fridge to be used for basting when the pork is cooking.

Preheat oven to 200C/390F.

Line a roasting tray with foil, add the roasting rack and spray lightly with oil.

Place the strips of pork onto the rack, baste with the leftover marinade and place into the oven.

Cook for 30-45 minutes (depending on the thickness of your pork), turning and basting with the marinade 2 or 3 times.

Remove from the oven and rest for 10 minutes before slicing and serving with Asian greens or Cauliflower Rice.

Steakhouse Pork Chops

(1-inch thick) Bone-In Pork Chops ((Ribeye Pork Chops))

Worcestershire sauce

Dale's Steak Seasoning, (low-sodium recommended)

Tbsp kosher salt

cayenne pepper

Tbsp cumin

onion powder

garlic powder

dry mustard

1½ tsp black pepper

Combine Worcestershire sauce and Dale's steak seasoning.

Place pork chops in a gallon ziplock bag. Pour marinade over pork chops. Seal bag and refrigerate at least 30 minutes.

Combine all ingredients for the rub.

Remove pork chops from the ziplock bag. Sprinkle with rub on both sides. Only use about one or two teaspoons per pork chop. You will have leftover rub.

Prepare grill. Cook pork chops until internal temperature reaches 145ºF.

Cantonese Style BBQ Pork over Rice (Char Siu with Rice)

Chinese rose wine

white pepper

five-spice powder

sesame oil

red food coloring ((optional))

sugar

water

ginger

onion

garlic ((peeled and smashed) (optional))

shallot

In a small saucepan, combine all BBQ sauce ingredients. Heat over medium-low heat. Stir and cook until the sauce is slightly thickened, about 5 minutes. Remove from heat. Pour about 1/3 cup to a small bowl and keep the rest in the saucepan. Set aside both to cool slightly.

In the meantime, work on the pork, trim off some the fat if needed, but don’t trim it all. Cut the pork into 4 - 5 (¾-inch thick) strips. Place them in the deep-dish plate or glass container. Add the garlic and then pour in the BBQ sauce from the saucepan. Rub all sides of the pork strips with the marinade and garlic. Best to place them flat in a single layer. Cover the plate with double layers of plastic wraps (so the smell doesn&#039;t get out to the fridge too much) and marinate for 24 hours.

For the BBQ sauce in the bowl, add 1 tablespoon vegetable oil and 1 tablespoon honey. Mix well. Cover with plastic wrap and keep in the fridge.

24 hours later, preheat the oven to 375˚F (190˚C). Line a rimmed baking sheet with aluminum foil, then top with a rack. If you don&#039;t have a rack, just it do on the baking sheet.

For the sweet soy sauce, in a small bowl, combine soy sauce, dark soy sauce, sugar, sesame oil and water.

In a small saucepan over medium-high heat, heat the pan and add the vegetable oil. Add the ginger, green onion, garlic, and shallot if using. Cook until slightly browned. Turn the heat to medium. Add the soy sauce mixture. Bring to a boil and reduce to simmer. Remove the ginger, green onion, garlic and shallot. Taste and adjust seasoning if needed. Turn off the heat.

Back to the pork, wipe off most of the sauce and garlic with your hands. Place the pork on the prepared baking sheet. Baked in the oven for 5 minutes. Brush the pork with a layer of BBQ sauce (the one in the fridge). Continue to cook for another 10 minutes. Brush the pork once more with the BBQ sauce. Turn the heat up to 425˚F (220˚C) and cook for another 12 – 18 minutes or until the pork is cooked through and a little charred on some edges. Transfer the pork to a cutting board and rest for 3 minutes.

Meanwhile, place the hot rice on 2 servings plates. Spoon about 2 tablespoons of sweet soy sauce over each plate of rice.

Slice the pork into ¼ – ½-inch thick. Place over rice and serve immediately. Transfer the leftover sweet soy sauce to a small bowl and serve along with the dish.

Homemade soft and yummy steamed Chinese BBQ Pork Buns.

Chinese BBQ Pork Buns

leftover char siu dices

cornstarch

tbsp. light soy sauce

oyster sauce

300 g all purpose flour + more for dusting

g sugar

sugar yeast

160 g warm water

a tiny pinch of salt

Mix cornstarch with water and set aside for couple of minutes until well combined.

In a small sauce pot, add starch water, oyster sauce, hoisin sauce, light soy sauce, sugar and heat over slowest fire until there are big bubbles. Then mix with the char siu dices.

Cover the filling and place in fridge for 30 minutes.

Make the filling

In a stand mixer, place all of the dough ingredients in and then knead for 7-9 minutes at slow speed. Then cover and rest for 10 to 15 minutes.

Slightly re-knead the dough for another 2 minutes until the smooth becomes very smooth. Shape into long log first and then divide the dough into 12 equal portions. Re-knead each wrapper dough until the surface becomes smooth.

Roll each of the wrapper dough into a round wrapper around 10 cm in diameter with thin edges. Scoop around 1 tablespoon of filling in the center and seal the buns completely. Repeat to finish all of the buns.

Place the buns on baking papers and then place in steamer. Cover the lid and rest for another 20 minutes at a room temperature around 28 degree C to 30 degree C. In cold water days, heat water in a pot for several minutes until warm but not boiling and then place the steamer on the warm water, rest for 15 to 20 minutes.

Start the fire and steam the buns for another 20 minutes, turn off fire and stand for 5 minutes before enjoying.

Re-steam the buns if they are cooled. No changes for the taste.

Make the wrapper

Making Char Siu at home is very easy. This Chinese BBQ Air Fryer Char Siu recipe gets the pork perfectly charred, sticky, and moist inside! All you need is 30 minutes, and you can wrap your fingers around this restaurant-quality barbecue pork you are so used to ordering for Chinese take-out! 

Air Fryer BBQ Pork Char Siu 氣炸鍋蜜汁叉燒

C Lee Kum Kee Char Siu Sauce (for marinating)

tsp Lee Kum Kee Char Siu Sauce (for basting)

Wash pork and pat dry with a paper towel.

Trim excess fat off the pork shoulder or pork butt.

Portion and slice the pork shoulder or pork butt into large 2 to 3-inch strips in length and approximately 1.5 inches thick.

Add Lee Kum Kee Char Siu Sauce in  an extra-large freezer-safe ziplock bag. 

Add the portioned pork into the ziplock bag. Remove as much air as you can before sealing the bag.

Massage the sauce onto the pork through the ziplock bag.

Let the pork marinate in the refrigerator for at least 4 hours. Overnight is preferred. 

Marinating

Add the pork into the air fryer basket and baste the top of each pork with 2 tablespoons of char siu sauce, then spray cooking oil onto the pork and air fry at 400F for 8 minutes.

After 10 minutes, flip the pork over, repeat the step above and air fry at 400F for another 8 minutes. 

Cooking / Air Frying

Baste the top of each pork with 2 teaspoons of honey air fry at 400F for another 2 minutes. 

After 2 minutes, flip the pork over and repeat this step.

Honey Glaze

Carefully remove the barbecue pork from the air fryer with kitchen tongs.

Slice the Char Siu and test for doneness. 

Enjoy and Serve

Do you know a method to avoid charring the food? To me, it is a bit of a deterrent in using the air fryer a lot. I was thinking to cover the food with foil, but it might fly during the process. Char siu is one of those things I've wanted to try for so long, but I've always been a little intimidated.  It doesn't hurt that it's fairly easy to get good takeout char siu here too, lol.
