This salad is a simple mix of ingredients, a delicious balance of crunch, freshness and flavors.

Mexican chopped salad

romaine lettuce (approx, sliced)

black beans (approx 180 grams)

corn (approx 160 grams)

jicama (, diced = approx 150 grams)

tomato (, diced (med/large))

avocado (, peeled and diced)

lime (juiced)

olive oil

cilantro/coriander leaves (, finely diced)

salt and pepper

Slice and dice the ingredients needing cut up as above then put the lettuce, beans, corn, tomato and avocado in a bowl.

In a small bowl whisk together the lime juice, oil and salt and pepper to taste. Add the chopped cilantro and mix well then pour over the salad and mix well but carefully so you don't break things up, then serve.

Cut all the tomatoes in half and place in a large salad bowl. Tear 12-15 basil leaves into pieces and add them to the bowl. Then add the mozzarella balls, garlic and sliced shallots to the bowl.

Place the butter in a large skillet over medium heat. Once it has melted, add the bread cubes to the skillet and toss to coat in butter. Toast the bread cubes on all sides until they are golden and crispy.

Add the toasted bread cubes to the salad. Toss, and salt and pepper to taste. Drizzle with olive oil and balsamic glaze and serve immediately.

This chopped salad is packed with fresh veggies and marinated in a red wine vinegar dressing.

Marinated Chopped Salad

grape tomatoes (chopped)

carrots (diced)

yellow bell pepper (chopped)

cucumber (chopped)

green cabbage (or red cabbage*, chopped)

red wine vinegar

dijon mustard

Italian seasoning

Combine all dressing ingredients in small bowl or jar. Whisk (or shake) to combine.

Chop all ingredients and place in a large bowl. Toss with dressing and refrigerate at least 2 hours before serving stirring occasionally.

For the vinaigrette: Pour all the ingredients in a jar. Add 1 teaspoon salt and 1/2 teaspoon ground black pepper.&nbsp; Screw the lid on tight and shake to combine.

Drain the can of hearts of palm, then chop into 1/4-inch rounds. Cut the tomatoes in half. Cut the stems off the fennel bulb. Then cut the bulb in half and remove the core. Lay the fennel bulb halves flat, and slice into thin "shaved" pieces. Cut the avocado into chunks. Cut the onion half, in half again, then slice into thin strips. Finally, chop the fresh mint.

Place the shaved fennel on a large platter (or in salad bowl.) Top with tomatoes, hearts of palm, onion, avocado, and mint. Drizzle the salad dressing over the top and toss.

Romaine heart (3 cups)

lettuce

English cucumber (2 cups chopped)

green olives, halved

jarred sliced pepperoncini

Parmesan shavings

Chop romaine and lettuce. Thinly slice the shallot. Peel and chop cucumber. Slice tomatoes and olives in half.

Mix together all the ingredients for the salad, including the dressing, and toss to combine. If making in advance, refrigerate the components separately; bring the dressing to room temperature before serving.

Whisk lime juice, honey, garlic, vegenaise (or mayo), olive oil, salt and pepper in a medium bowl until smooth.

For the Dressing

 In a saucepan over medium heat, lightly toast the pepitas, tossing constantly, until fragrant and golden brown. Turn the heat off and add the coconut oil, chipotle powder and salt; toss well, transfwer to a bowl and set aside. 

For the chipotle pepitas

Combine the lettuce and other salad ingredients in a large bowl. Toss gently to combine. Drizzle about half of the dressing and toss carefully to coat all ingredients. Garnish with cilantro leaves and chipotle pepitas, if using. Taste and drizzle with a little more dressing if needed. Top with feta cheese, if desired.
