All-star cilantro lime chicken recipe! Chicken thighs, prepared Mediterranean-style with a special spice mixture and cooked to tender perfection in a tasty garlic, lime and cilantro sauce. You can cook this in the oven (my preference) or in the slow cooker (see notes for instructions.)

Cilantro Lime Chicken Recipe

Preheat your oven to 375 degrees F.

In a small bowl, mix the spices. Pat the chicken thighs dry, and season each thigh on both sides with the spice mix. Be sure to season underneath the skin as well. Let the chicken thighs sit in room temperature for about 15 minutes.

Brown the chicken. When ready, heat 1-2 tablespoons of olive oil in a cast iron skillet (with a lid). Brown the chicken thighs deeply on both sides in the heated oil. Remove from skillet and set aside briefly. Brown the chicken thighs deeply on both sides in the heated oil. Remove from skillet and set aside briefly.

Lower the heat and deglaze the skillet with the white wine. Let cook to reduce and then add the broth. Bring the liquid to a simmer then add the lime juice and garlic.

Now. return the chicken to the skillet and toss in the cilantro. Bring to a high-simmer for about 5 minutes or so.

Cover the skillet with the lid and transfer to the heated oven for 45 minutes or until the chicken is fully cooked through.

Remove from the oven and let sit for 5 minutes before serving. Garnish with more cilantro, if you like.

Great recipe! Easy and quick! I did a few things differently ... I used chicken breasts and cut them in half to keep them thick. I also doubled the marinade and marinated the chicken for four hours. I seared with the marinade and added the leftover marinade when I baked the chicken. The cooking time was as listed on the recipe. I baked uncovered!

It was wonderful! I made it with white rice and we had a nice sauce to pour over. Not a heavy meal, yet super tasty! Was a hit with the family and will be made again!

I.made this recipe with skin on bone in chicken thighs.  I followed directions to the letter.  This time around I made it with boneless, skinless chicken thighs on the stovetop. I put the marinade in after browning one side and added a splash of chicken stock.  Cooked it for about 5-7 minutes. It was delicious.

Made this and it is very good. I added chicken stock and thickened the drippings for more gravy. I felt like the drippings were too greasy otherwise.

Cilantro lime chicken thighs are perfectly juicy, just a little crispy, and full of flavor. Not only is this recipe delicious, it is incredibly easy to make and will take you no time to whip up. Meal prep these chicken thighs in advance for an easy lunch or make them for a quick weeknight dinner.

Cilantro Lime Chicken Thighs

Add all of the ingredients, except the chicken thighs, to a small mixing bowl and whisk until well combined.

 Next, add the chicken thighs to a large mixing bowl. Pour the marinade over the chicken and use kitchen tongs to toss the chicken until it is well coated in the marinade. Let the chicken marinate for 15 minutes uncovered or for up to 2 hours, covered, in the fridge.

Heat a skillet over medium-high heat. Once the skillet is hot, add a teaspoon of oil to the pan.  Next add the chicken thighs and cook for five to six minutes per side or until no longer pink and the internal temperature reaches 165 degrees.

Once the chicken is finished cooking, transfer it to a serving dish. Squeeze extra fresh lime juice and sprinkle chopped cilantro over the chicken before serving. Enjoy!

+ 1 tablespoon freshly squeezed orange juice, (divided)

+ 2 tablespoons freshly squeezed lime juice, (divided)

lime zest, (divided)

honey

+ 1/4 teaspoon cumin, (divided)

soy sauce

cilantro, (divided)

jalapeno, (optional)

salt and pepper

MARINADE: Whisk together all of the marinade ingredients in a medium-sized bowl: 3/4 cup orange juice, 1/2 cup olive oil, 1/3 cup lime juice, 1 teaspoon lime zest, honey, 1 teaspoon each cumin, soy sauce, garlic, and 1/4 cup cilantro. Add salt and pepper to taste (I use about 1 teaspoon salt and 1/4 teaspoon pepper). Reserve about 1/2 cup of marinade, and pour the rest into a large resealable bag.

Trim the chicken of fat. Pound the breasts to even thickness or slice in half to get evenly sized breasts and place in the bag with the rest of the marinade. Refrigerate for at least 30 minutes, making sure to flip the bag halfway through. I recommend marinating for 2-8 hours.

COOK CHICKEN: The instructions below are to grill the chicken. To see other methods of cooking chicken, read the portion of the post that is right above this recipe card. Lightly oil the grill grate or grill ridges on a grill pan or add 1 tablespoon oil to a skillet and then place the marinated chicken on the grill. Discard leftover marinade.

Grill for 10-12 minutes or until chicken juices run clear and internal temperature is at 165 degrees F. Flip the chicken halfway and brush it generously with the reserved 1/2 cup marinade.

MANGO SALSA:&nbsp;Take the remaining 1 tablespoon orange juice, remaining 1 teaspoon olive oil, 2 tablespoons lime juice, remaining lime zest, and remaining 1/4 cup cilantro and toss together.

(OPTIONAL: When grilling the chicken, also grill the mango. Brush with oil and grill on one side for about 4-5 minutes at medium-high heat.)

Chop the mango and avocado into bite-sized pieces. Add to the salsa along with the finely chopped red onion, red pepper, and jalapeño. Season the salsa to taste with pepper, salt, and remaining 1/4 teaspoon cumin and stir to mix.

Easy Cilantro Lime Chicken

Place chicken in a large gallon size ziploc bag and add the marinade. Close the bag, massage together to coat all the chicken and refrigerate for 2 hours or up to overnight.

Remove the chicken from the marinade and shake off any excess. Discard marinade and cook chicken using one of the methods below.

Preheat grill to medium heat (350°F-375°F) and prepare for indirect grilling. This means light the burners (or light your charcoal) on one half of the grill, and leave them off on the other half. This creates a zone of direct heat and a zone of indirect heat.

Grease the preheated grill grates to prevent sticking by wiping them down with a folded paper towel that&#x27;s been soaked in vegetable oil.

Grill chicken skin side down over direct heat for about 8 to 10 minutes with the lid closed as much as possible, until the skin is crispy and golden. Flip chicken over, move to indirect heat and grill for 15 to 20 minutes, until the meat is firm and the internal temperature registers 165°F. (Don&#x27;t have an instant-read thermometer? Here&#x27;s the one I recommend.)

Serve cilantro lime chicken with freshly squeezed lime juice and a pinch of chopped cilantro if desired.

Grilling Method

Preheat oven to 400°F. Place chicken on a baking sheet lined with parchment paper or foil for easy cleanup.

Bake in oven for 30-40 minutes depending on the thickness of the chicken. The internal temperature should register at least 165°F on an instant-read thermometer.

Oven Roasted Method

Preheat oven to 425°F. In a large cast-iron skillet, heat 1 tablespoon of cooking oil over medium-high heat.

Place chicken thighs in the skillet skin-side down and cook for 8-9 minutes until the skin is brown and crispy.

Flip chicken over and transfer skillet to the oven. Bake for 15-20 minutes, until the internal temperature registers 165°F on an instant-read thermometer.

Cast-Iron Skillet Method

Marinate the chicken for 1-4 hours.

Heat a grill or grill pan over medium high heat. Cook the chicken for 5-6 minutes on each side or until cooked through.

After the chicken is cooked, brush the remaining sauce over the chicken. Serve any leftover sauce on the side for dipping.

Garnish with lime wedges and cilantro sprigs if desired.

Slow Cooker Cilantro Lime Chicken

Combine the chicken, corn, black beans, bunch of cilantro, red onion, lime juice, garlic and cumin in a freezer safe ziplock bag. Label and freeze.

When ready to cook, spray the inside of a slow cooker with nonstick cooking spray.

Empty the contents of the bag into the slow cooker. Move the chicken into a single layer as much as possible.

Cook on low, just until the chicken is cooked through, 4-6 hours, depending on your slow cooker.

When the chicken is cooked, remove just the chicken from the slow cooker and shred using 2 forks. Return the chicken to the slow cooker. Add in the 1/2 cup sour cream and 1/2 cup cilantro and stir to combine. Season to taste with salt and pepper.

Serve the chicken over rice or with tortillas.
