With amazing flavors, this one-pot chicken recipe is a cinch to throw together and clean up, plus its made with healthy ingredients everybody will enjoy.

One-Pot Black Pepper Chicken

chicken breasts

red bell pepper

black pepper (freshly ground)

ginger root (fresh, peeled and finely chopped)

garlic

lite soy sauce

white vinegar (divided)

coconut palm sugar (or honey)

olive oil

Whisk together in a medium-sized bowl, half of the soy sauce, half of the vinegar, and the sweetener. Add the chicken and toss to coat. Place in the fridge to marinate for 30 minutes.

Add oil to a skillet and heat to medium-low. Add the garlic and ginger and cook for 30 seconds, just until garlic is golden and fragrant, but not burnt.

Add the marinated chicken with any juices in the bowl and cook for 3 minutes. Add the bell pepper strips, remaining soy sauce and vinegar, and black pepper and stir. Cook for about 10 minutes until peppers have softened and chicken is cooked through.

Spoon chicken over or alongside brown rice or quinoa.

Crab Stuffed Whitefish is made with succulent whitefish stuffed with creamy and dreamy crab filling and topped with a lemon butter drizzle...in just 30 little minutes. 

Crab Stuffed Whitefish

white fish

onion

garlic (minced)

crab meat

tbsp cream cheese

tsp Old Bay Seasoning (or to taste)

salt and pepper (to taste)

garlic chives (finely chopped (optional))

tbsp butter ((Use dairy free margarine if lactose intolerant))

lemon (or juice of one lemon)

Preheat oven to 190 degrees C (375 F)

In a medium sauce pan add olive oil and heat to medium heat. Add in onions until they begin to sweat down and even start to caramelise a little bit and then add garlic. Add chopped up crab meat/imitation crab meat, cream cheese (hold if lactose intolerant), old bay seasoning, salt and pepper and garlic chives and stir until well incorporated. Remove crab mixture from heat and allow to cool.

Lay out your white fish, remove all bones, skin and wash and dry and lie on cutting board with the back side up and top side facing down. Layer on a thick layer of crab meat mixture on to each fish fillet and spread until it is even.

Roll up each fish fillet and lay with seam side down on a greased baking pan. I did not use toothpicks to hold in place and all was fine.

Melt butter. In a small cup mix melted butter and lemon juice and if you like a tad bit of the old bay seasoning and a little salt and pepper and drizzle over the tops of the crab stuffed flounder.

Bake crab stuffed whitefish for about 20-25 minutes or until they flake easily with fork. It depends on the size of your fish. If you have a smaller fish start checking them after 15 minutes. Every 1o minutes, I drizzled the pan dripping of the lemon butter sauce over the crab stuffed whitefish during the cooking process.

Serve the crab stuffed whitefish hot out of the oven with a drizzle of the lemon butter sauce with extra wedges of lemon on the side with a nice tossed salad and vegetable.

Combine

In a large bowl, combine all ingredients and toss to coat the potatoes in all seasonings and oil. Spread in an even layer on a baking sheet.

Bake

Bake for 15 minutes, remove and stir the potatoes. Return to the oven and bake for 15 minutes more or until lightly browned.

Cheesy Sausage and Cabbage Casserole

tbsp grass-fed butter

quartered,

yellow bell pepper, chopped

onion, diced

garlic,

sea salt and black pepper,

14.5 oz can diced tomatoes

tomatoes

oz smoked sausage,

mozzarella cheese, shredded

Italian flat leaf parsley, rough chopped

Heat olive oil and butter in a large skillet over medium heat.

Once the butter is melted and the pan is heated, add the cabbage, bell pepper, onion garlic, sea salt and black pepper. Sauté until the vegetable are crisp tender and the cabbage is wilted. About 10 minutes.

Mix in diced tomatoes, crushed tomatoes and smoked sausage. Sauté for 10 minutes.

Transer to a large casserole dish, top with cheese and bake for 15 minutes.

We thought this was fantastic.... just goes to show, everyone has different tastes!

This was very simple to make! I added the sausage before the tomatoes to allow it to cook through first.

This is a keeper hubby says ! Only change was home can tomatoes . Keep up the great recipes .

I really enjoyed this recipe and took it upon myself to add some dried Italian herbs to enhance the flavor of this dish. Im not sure if anyone else had this problem, but my dish came out pretty watery. Are there any steps that I can take to prevent this?

This recipe was delicious.  I made mine w/ Jalapeno cheddar sausage and halved the recipe.  I will absolutely be making this again!

Thank you so much for posting this and so many other recipes on line.  As a result of chemo, my 13 year old has developed high blood sugar, but not quite diabetes.  They have had us switch him to a low carb diet to try to bring it under control without more medication.  His reaction to most recipes has been, "Wow, I thought chemo killed my taste buds.  Low carb must have destroyed all of theirs."  Thankfully, what we have tried from your site has been met with positive responses including, "Can we have that again?"  Money remains tight so I cannot run out and buy a bunch of low carb cook books.  So, all that said, I truly appreciate your site.  God bless.

Delicious!  Only thing I did differently was used sweet Italian sausage instead of smoked.  I cooked the sausage prior to adding it to the cabbage mixture and it was amazing!  My 13 yr old wants leftovers for lunch!

This was AWESOME! My husband (who doesn’t know I’m making him eat Keto lol) asked that it be on the weekly rotation. I’m practicing mostly OMAD Keto, so mixed in some smoked Gouda to up the caloric content since it is my only meal today and finished with a dollop of (this is going to sound weird) aioli. Also added some crushed red pepper for a little kick. 
It was a touch runny and the hubby doesn’t like anything runny, but I do, so used a slotted spoon to scoop his out and a soup ladle to scoop mine. 
Thank you for making dinner more interesting than chicken and broccoli.

Loved this casserole! Made it a couple nights ago and definitely will put it in our regular rotation. Leftovers heated up well also. It turned out a little watery but not enough to be a big deal - it appears the key there is simply to cook down the cabbage enough on the stove before transferring it to the casserole dish. I also added italian seasoning and browned the sausage pieces in the pot before adding the other ingredients.

If I could give this dish 10 stars, I would! I made this meal for my family (none of who follow a keto lifestyle) and they all absolutely loved it. A huge win for me of course and honestly at least once a month, my husband requests it for dinner: In fact, I have the ingredients ready to go for dinner tomorrow (per his request).

This dish is a household favorite! I’ve made it as the recipe is written, but I’ve also substituted the smoked sausage for andouille sausage. My Louisiana family prefers the andouille, but either way is delicious!

Creamy Chipotle Chicken Skillet is a one pan spicy, smoky and savory 30-minute dinner with just 7 little ingredients that you will love on your menu plan.

Creamy Chipotle Chicken Skillet

chicken breasts (skinless boneless breasts cut lengthwise to make thinner to reduce cook (or can use chicken tenderloins))

Onion (chopped)

Garlic (minced)

Fire roasted tomatoes

Full fat dairy cream ((or coconut cream

Chipotle peppers

Lime juice (optional)

In a large frying pan, add one tablespoon of olive oil. Turn on your stove burner to a medium heat. Season your chicken breasts with salt and pepper on each side. Add your chicken into the frying pan. Cook uncovered over medium heat until golden brown or about 3-4 minutes on each side or until the juices run clear. Set aside and keep warm. (Do not wash your pan!)

Add another tablespoon of olive oil into the pan. Add the onions and sauté for about 10 minutes until translucent and slightly golden. If you have the time and want to caramelize the onions, then this is even better. Add the garlic to the pan and sauté until translucent. Add the fire roasted tomatoes to the pan and break up a little with your wooden spoon. Loosen up all the little tasty bits on the bottom of the pan from the cooking chicken. Add your cream or nondairy coconut cream, chipotle peppers and adobo sauce and salt and pepper to taste. Stir. Add your cooked chicken back to the pan. Cook over low medium heat just until warm and bubbly.

Drizzle with a little lime juice and garnish with a little cilantro, if desired. Enjoy!

Slow Cooker Chicken Gyros

onion (small)

chicken

eggs (whisked)

breadcrumbs (plain)

lemon

thyme

cinnamon

nutmeg

extra virgin olive oil

whole-wheat naan bread (or pita bread rounds, 6 inch)

tomato (chopped)

cucumber (sliced)

Greek yogurt (low-fat, plain)

In a food processor, pulse onion and garlic until pureed.

In a large bowl, stir together onion puree, ground chicken, eggs, breadcrumbs, lemon (juice and zest), thyme, cinnamon, nutmeg, and salt. Mix together until well combined.

Form into a large ball and place in a 4-quart crockpot which has been drizzled with olive oil. Cover and cook for 4-6 hours on high, or 6-8 hours on low.

Unplug crockpot and remove lid 30 minutes before serving. This will allow the gyros to set and cut into nice slices.

When ready to serve, remove meat from the slow cooker. Slice and serve on warmed pita bread topped with tomatoes, cucumbers, yogurt, and fresh-squeezed lemon juice. Enjoy!

Wood Ear Mushroom Vegan Stir Fry

tbsp Light cooking oil

garlic (peeled and minced)

tsp ginger (fresh grated (or 1/2 teaspoon ground dried))

bamboo shoots

choi sum (chopped (or other leafy green vegetables

wood ear mushrooms ((rehydrated, washed

tofu (diced)

soy (tamari) sauce

tbsp Black Chinese Vinegar

sugar (or sugar substitute)

tsp sesame oil

Place oil in wok or frying pan, add in garlic, ginger and chili paste or chopped chili pepper and sauté for 1 minute or until spices are aromatic.

Add bamboos shoots, wood ear mushrooms, tofu,  choi sum (Chinese green leafy vegetable of choice), Tamari (soy), black Chinese vinegar, sugar or sugar alternative, sesame oil and stir fry until flavors are combined and your choi sum are bright green about 2-3 minutes.

Top with green onions to garnish and serve hot with a side of rice. Enjoy!

Slow Cooker Homestyle Potatoes with Garlic and Rosemary

extra virgin olive oil (remember evoo is a good fat)

rosemary (chopped fresh)

Add oil to the slow cooker, turn to high and allow to heat up while preparing potatoes...about 15 minutes of preheating is good.

Combine all ingredients in the slow cooker, toss potatoes in oil, cover and cook on high 2-3 hours (4-5 hours on low), or until potatoes are tender and browned.

Stay skinny with this pseudo fried rice that is appetizing and nutritious.

Crockpot Cauliflower Fried Rice

cauliflower

ginger-garlic puree (or fresh garlic and ginger root, peeled and minced)

vegetable broth

eggs

vegetable mix (frozen)

turkey ham (diced, optional)

onions

cilantro (optional)

soy sauce (lite (low-sodium), to taste)

Cut the florets off each head of cauliflower. Discard stems. Place the florets in a large food processor. Pulse until finely crumbled.

In a large crockpot, add cauliflower crumbs, ginger-garlic puree, and vegetable broth. Cover and cook on high for 2 hours, or on low for 3-4 hours.

Thirty minutes before serving, whisk the eggs together and scramble them in a skillet. Add eggs, frozen veggies, and diced turkey ham (if desired) to the crockpot. Allow to cook for 30 minutes more, or until the frozen veggies are warm. Stir in green onions and cilantro. Drizzle with soy sauce to taste. Serve and enjoy!

Oven-Crisp Fish Tacos

bread crumbs

lime juice (freshly squeezed, 1 medium lime)

taco seasoning

corn tortillas (6 inches or whole- wheat flour tortillas)

Greek yogurt (nonfat, optional nonfat sour cream)

Preheat the oven to 450 degrees F.

Line a baking sheet with foil. Place a cooling rack on top of the baking sheet and spray with olive oil or canola oil cooking spray.

Combine breadcrumbs, cornmeal and taco seasoning together in a shallow bowl.

In a separate shallow bowl, whisk the egg whites and lime juice until frothy.

Place flour in a shallow bowl.

Dip the fish strips gently into the flour to lightly coat on both sides. Dip into the egg whites and allow excess to drip off, then press the fish pieces on both sides into the seasoned cornmeal and breadcrumbs.
