As a meat that is best served medium rare, duck breast makes an ideal candidate to cook sous-vide. By cooking it at 135°F for two hours, much of the fat under the skin begins to soften and render out while the proteins in it begin to set, making it much easier to crisp without shrinking on the stovetop just before serving.

Sous Vide 101: Duck Breast Recipe

Season duck generously with salt and pepper. For best results, place on a plate and refrigerate uncovered overnight before proceeding.

Seal duck in vacuum bags. Place in 130°F (54°C) water bath for at least 45 minutes and up to 4 hours. Remove from bags and dry thoroughly with paper towels.

Place breasts skin side-down in heavy-bottomed 12-inch non-stick or cast iron skillet and set over high heat until sizzling, about 2 minutes. Reduce heat to medium and cook, moving and pressing breasts to ensure good contact between skin and pan until golden brown and crisp, about 5 minutes. Flip and cook second side until barely colored, about 30 seconds. Transfer to paper towel-lined plate and allow to rest for 5 minutes.

Slice breasts crosswise into 1/2-inch strips and serve.

Pan-Seared Steaks with Red Wine Pan Sauce Recipe

For the steak:

thyme

shallot, sliced thin

For the pan sauce (optional):

shallot,

chicken broth

dry red wine

dijon mustard

parsley

unsalted butter

lemon juice

Salt and pepper

Season steaks generously on all surfaces with kosher salt and black pepper. Add vegetable oil to 12-inch, heavy-bottomed cast iron or stainless steel skillet. Heat over high heat until oil just begins to smoke. Add steaks to pan, and cook without moving until deep golden-brown crust develops on first side, three to four minutes. Flip steaks over.

Add butter, thyme sprigs, and shallots to pan. Turn heat down to medium-high. Continue to cook, occasionally basting steaks by tilting pan towards you and spooning hot fat over surface of steaks. If steaks start to become too dark, turn lower heat. Continue to cook until instant-read thermometer inserted in to center of steak registers 125°F for medium-rare (between three and seven minutes, depending on how powerful your range is). Remove steaks from pan, place on rack set in rimmed baking sheet, pour fat, shallots, and thyme from pan over steaks, tent loosely with aluminum foil, and allow to rest for until center of steak cools to 120°F (about ten minutes). Meanwhile, make pan sauce if desired.

Artichauts à la provençale

Pour parer les artichauts, retirer les feuilles à la base. Si la tige y est encore, la casser.

Couper environ 5 cm (1 po) de la partie supérieure des artichauts.

À l'aide de ciseaux, couper le bout piquant des feuilles (bractées). Tout au long de l'opération bien citronner les parties coupées avec 1/2 citron. Couper les artichauts deux sur la hauteur, retirer le foin et bien citronner de nouveau.

Dans une casserole suffisamment grande pour juste contenir les artichauts, verser de l'huile d'olive pour couvrir généreusement le fond de la casserole.

Déposer les artichauts les uns à côtés des autres.

Ajouter le reste des ingrédients et suffisamment d'eau ou de bouillon pour couvrir jusqu'au 2/3 de la hauteur des artichauts.

Couvrir la casserole, mijoter 20 à 30 minutes.

In a large pot of salted boiling water, cook the pasta until slightly tender. Keep about 125 ml (½ cup) of cooking water aside. Drain the pasta and oil lightly. Set aside.

Meanwhile, in a large skillet, heat the truffle paste in the butter for about 1 minute. Add 60 ml (¼ cup) of the reserved cooking water, the Parmesan, and mascarpone cheese. Stir to combine. Cook gently until the cheese has melted. 

Add the pasta and coat thoroughly with the sauce. Add cooking water, as needed. Generously season with salt and pepper. Divide among four plates. Garnish with slices of fresh truffles.

Absolument éblouissant! La pâte de truffes étant introuvable, je l'ai remplacée par de l'huile de truffes, coûteuse mais combien bonne!

Riche, velouté et surtout parfumé, cette pâte est tellement décadente, c'est du dessert. J'ai ajouté pratiquement une tasse complète d'eau de cuisson, mais c'était parfait. Une recette digne des grandes occasions!

pots de 170 ml (6 oz) d’artichauts dans l’huile, égouttés et hachés

oignons verts, hachés finement

g (1 tasse) d’épinards frais, hachés finement

200 g (2 tasses) de fromage mozzarella râpé

piment jalapeño, épépiné et haché finement

Sel et poivre

Dans une mijoteuse, mélanger tous les ingrédients. 
Saler et poivrer.

Couvrir et cuire à basse température (<i>Low</i>) 2 heures. 
Au moment de servir, mélanger et rectifier l’assaisonnement.

Servir avec des croustilles, des croûtons ou des crudités. 
On peut maintenir à réchaud (<i>Warm</i>) jusqu’à 6 heures.

Puis-je utiliser des cœurs d'artichaut en conserve (dans l'eau) à la place ? Étant donné qu'il y a d'autres matières grasses dans cette recette ?

J'ai fait la recette sur la cusinière car je n'ai pas de mijoteuse. J'ai mélangé le tout jusqu'à ce que les fromages soient biens fondus. Ensuite, j'ai transferé le mélange dans un plat de cuisson et j'ai mis la trempette au four à 400F pour environ 20 à 25 minutes. C'était vraiment super et très facile à faire!

Pouvez me donner un exemple de fromage à la créme?
