Finely dice the onion. Add the olive oil, onion, and ground beef to a large deep skillet and sauté over medium heat until the beef is fully browned and the onion is soft and transparent. Drain off any excess fat, if needed.

Add the flour to the skillet and continue to stir and cook for one minute more. The flour will form a paste that may coat the bottom of the skillet. Be careful not to let the flour burn.

Add the tomato sauce, broth, and pasta to the skillet. Stir to combine the ingredients and dissolve any of the flour off the bottom of the skillet.

Place a lid on the skillet, turn the heat up to medium-high, and let the liquid come up to a boil. Once it reaches a boil, give it a quick stir, replace the lid, and turn the heat down to medium-low. Let the pasta simmer, stirring occasionally, for 10-12 minutes, or until the pasta is tender and the sauce has thickened. Turn the heat off.

Add the cheddar, a handful at a time, and stir until it has melted into the sauce. Stir the hot dog relish into the sauce and then top with sliced green onions. Serve hot.

Peel and dice the potatoes into 1-inch cubes. Peel and slice the carrots. Dice the onion and mince the garlic. Add the potatoes, carrots, onion, garlic, rosemary, thyme, and pepper to a slow cooker (4 quarts or larger).

Brown the ground beef in a skillet, then drain off the excess fat. Add the browned and drained beef to the slow cooker along with the can of stewed tomatoes (with juices). Finally, add the beef broth, Worcestershire sauce, and soy sauce to the slow cooker.

Give the contents of the slow cooker a brief stir to make sure everything is evenly combined (the broth may not fully cover the other ingredients). Place the lid on the slow cooker and cook on high for four hours, or low for eight hours.

After cooking on high for four hours or low for eight hours, remove the lid and stir the stew. Use the back of a spoon to slightly mash some of the potatoes, which will help thicken the stew.

Add the frozen peas (no need to thaw) and stir to combine into the stew. Taste the stew and add extra salt if needed (I did not add any, this will depend on the salt content of your beef broth). Serve hot with bread for dipping!

Vegan Hamburger Helper Cheeseburger Macaroni

Chop soaked chickpeas in a food processor until you get a nice crumble.

Saute onion with broth or oil until it gets translucent. Add the rest of the meaty crumble ingredients and mix well.

Cook over low heat for about 15-20 minutes or until the liquid has evaporated and the beans are cooked, stirring often. Watch closely because the beans can stick, especially if not using oil. If they begin to stick, lower heat and continue to mix.

Once done, add cheese sauce and mix well. You can add less or more cheese sauce to make it as cheesy as you prefer. I added 1 1/2 cups

Meanwhile, cook your favorite pasta according to package directions. Drain and rinse, then add to the hamburger cheese mix. Stir to incorporate, plate and serve fresh!

Simple Truth rotini pasta (or pasta of your choice)

Heat a large skillet over medium high heat and add in the oil, onions and garlic. Sauté for 3 to 4 minutes, or until the onions have softened and the garlic is fragrant.

Add in the emerge grinds  (vegan ground beef alternative) and break them up with your cooking utensil. Cook, stirring often, for about 6 minutes. Drain any excess fat in the pan if needed.

In a small bowl, mix together the cornstarch, oregano, chili powder, paprika, salt, and pepper until uniform. Sprinkle the mixture over the mixture in the pan and stir well to distribute.

Mix in the almond milk, broth and pasta, and bring everything to a boil. Once boiling, cover with a lid, reduce the heat to a simmer and cook for 10 to 12 minutes, or until the pasta is al dente. Remove from heat. Keep in mind that it will thicken as it cools.

Sprinkle the shredded vegan cheese over the cooked pasta and stir until it has melted through.

Garnish with freshly chopped parsley as desired. Enjoy!

I made this tonight and it is better than cheeseburger macaroni hamburger helper! I added the half a cup of tomato sauce like suggested at the bottom and turned out amazing.

I’m very bad in general at cooking, so I was unsure about having that “much” chilipowder. But I trusted the recipe and WOW. I don’t think I’ve ever made anything this tasty for myself!

This was AMAZING! Taste just like the real deal. I used flour instead, impossible meat,  and a box of Annie’s vegan cheddar mac instead seeing I didn’t have any cheese on hand. It was perfect and easy. Even my non vegan family (who usually doesn’t like any of my vegan dishes) loved it!

This recipe is addictive! I have made it twice in two weeks. I am 6 months pregnant and am really loving this right now. My vegan dad loved it when I made it for him and my omni husband loves it too! I make this regularly, it really is like the standard Hamburger Helper! I use a full can of puréed tomatoes/tomato sauce and powdered veggie broth bouillon. So far unsweetened plain cashew milk works well.

My vegan daughter really enjoyed this!   I used precooked vegan crumbles and added two tablespoons of tomato paste.  I probably added 2 cups of cheese, but stayed true to the original recipe otherwise.  I used artisan pasta, which I don't recommend ... this dish needs nice, soft, cheap elbows to get that hamburger helper vibe.  I plan to make this often.

This was a great, flexible recipe.  I used what I had on hand:  impossible burger and gluten free quinoa macaroni; and arrowroot to thicken.   The pasta held up well but I did check on it a few times to make sure it didn’t turn to mush.   Next time I’ll use unsweetened cashew milk as I prefer it in vegan sauces; neutral taste with  a little more fat.  The omnivores in the family really liked this and I can’t wait to make it again. On Instant Pot, press Saute and wait until display says Hot. Takes 3-5 mins. Swirl oil to coat if cooking ground chicken or turkey. No need for oil if cooking with ground beef.
