Whole30 Breakfast Hash

sweet potato, peeled and diced ((about 2 cups))

lb compliant sausage (or ground turkey)

diced bell peppers (any colors)

olive oil

Preheat oven to 400 degrees.&nbsp; Line a baking sheet with parchment paper.&nbsp; Toss sweet potatoes, yellow potatoes, and olive oil together on the baking sheet, stirring to coat.&nbsp; Season with salt and pepper if desired.&nbsp; Bake for 20-25 minutes, until potatoes are tender and slightly browned.

Meanwhile, in a large skillet, brown sausage over medium high heat.&nbsp; In the final few minutes of cooking, add the peppers and onions&nbsp;to the pan, cooking until softened.&nbsp; Set aside.

Combine cooked potatoes with sausage/pepper mixture.&nbsp; Serve immediately or cool and refrigerate.

Cheesy Bacon and Egg Hash for breakfast, brunch, lunch or dinner! Easy to make and ready in 30 minutes!

Cheesy Bacon And Egg Hash (Breakfast Skillet)

olive oil, ((or coconut oil))

oz (200 g) diced bacon, ((trimmed of fat))

scallions or spring onions, ((shallots) trimmed and finely sliced)

mozzarella cheese ((or cheddar))

Cheesy Bacon and Egg Hash (Breakfast Skillet)

Dice potatoes into small 3/4-inch cubes.

Heat the oil in a large cast iron skillet or pan over medium heat. Fry the potatoes in the hot oil and cook while stirring occasionally, until golden and crispy (about 20 minutes). To speed up cooking time, cover pan with a lid, checking the potatoes every 4-5 minutes or so to stir them (this takes about 15 minutes).

Add the bacon pieces to the pan and fry while stirring occasionally for 10 minutes until crisp. The potatoes will be golden with crisp edges, while soft on the inside. Add the spring onions; stir them through and season with pepper (optional).

Using a wooden spoon or spatula, make four wells in the hash, crack an egg into each well and arrange the mozzarella around each egg. Fry until the whites are set and the eggs are cooked to your liking. Serve immediately.

Stove Top:

Preheat oven to 400°F | 200°C. Arrange the potatoes in a single layer in a cast iron skillet or oven proof pan (or baking sheet). Spray with a light coating of cooking oil spray and bake for about 30 minutes, mixing them around halfway through cook time, until they are crisp and golden.

Remove from oven, add the bacon, and place back into the oven for a further 10 minutes or until the bacon is crispy.

Make four wells in the hash, crack an egg into each well and arrange the mozzarella around each egg. Place skillet (or pan) back into the oven until the whites are set and the eggs are cooked to your liking. Serve immediately.

Tex Mex Skillet Sweet Potatoes

lbs sweet potato (cubed)

onion

garlic

tbsp coconut or avocado oil

red bell peppers (diced)

black beans (drained & rinsed)

corn (frozen

tomatoes (undrained)

tbsp cumin (divided)

tbsp taco seasoning

salt (divided)

lime (juice of)

4 oz Tex Mex cheese, shredded

avocados (diced)

green onions (chopped)

cilantro (chopped)

Greek yogurt and salsa (for garnish (optional))

Preheat large deep skillet on medium heat and swirl oil to coat. Add sweet potatoes, 1/2 tbsp cumin, 1/2 tsp salt and cook for 5 minutes, stirring occasionally.

Add onion, garlic, bell pepper and cook for another 3 minutes, stirring occasionally.

Add black beans, corn, diced tomatoes, remaining 1/2 tbsp cumin and 1/4 tsp salt, taco seasoning and pepper; then stir. Bring to a boil, reduce heat to low, cover and cook for 15 minutes or until potatoes are soft.

Turn off heat. Add avocado, green onion, cilantro, lime juice and stir. Sprinkle with cheese, cover and let stand until cheese has melted.

Serve hot with Greek yogurt and salsa if desired.

This corned beef hash breakfast is filled with chopped crispy potatoes and bell peppers with corned beef mixed together and a large sunny side up egg to complete the meal. Breakfast just got better with this hash!

Preheat oven to 400 degrees.  In a medium sized skillet, melt butter then add diced potatoes. Cook 5-7 minutes, until the potatoes are tender and slightly crispy. Add bell peppers and onions, and cook 4-6 minutes until tender. Add the Corned beef and cook until warmed and slightly brown.

Crack the eggs on top of the hash. Place the skillet in the oven and bake for 8-10 minutes until eggs are set.  Season with salt, pepper and pinch of red pepper flakes.

Simple and comforting corned beef hash made with leftover corned beef and potatoes.

Easy Corned Beef Hash

butter

lbs boiled potatoes

Dice onions, potatoes, and corned beef and set aside. 

Preheat a large pan over medium heat and add 2 tbsp of butter to melt. Saute diced onion in butter until browned.

Add diced corned beef and cook it together until corned beef is heated through.

Add diced potatoes and remaining 2 tbsp of butter. Season with salt and pepper and once butter is melted, stir everything together. Let is saute for a few minutes before mixing again. 

Cook for about 15 minutes but don’t mix too often, so it gets crispy on the bottom before you stir.

Stir in some chives and parsley and serve. 

Lower the heat to medium-low.

Make four little wells in cooked hash and crack and egg into each well.

Season each egg with a some salt and pepper, cover the pan with a lid, and cook until the eggs are cooked as desired.

Sea salt and cracked black pepper

Butter beans, (large) drained and rinsed or use

Gently heat the oil in a heavy-based saucepan then add the onion and cook for 5 minutes until the onion begins to soften.

Add the garlic and smoked paprika and cook for a further 30 seconds.

Add the oregano, chopped tomatoes and sugar and season with salt and freshly ground black pepper. Simmer the tomato sauce until it thickens, about 5 minutes.

Add the drained and rinsed butter beans and stir to combine. Simmer gently until the beans are heated through. Stir through the parsley.

Serve hot with any of the suggestions below.

Chorizo & Sweet Potato Breakfast Hash

lb Mexican Chorizo Sausage

bacon, chopped

potatoes,

cinnamon

red bell pepper

green onions, thinly sliced

mozzarella cheese, shredded

avocados, sliced

sour cream

smoked tomato, or 1/4 cup halved cherry tomatoes

Remove the casing from the chorizo and brown in a large skillet over medium heat, about 5-10 minutes. Drain grease and remove onto a plate.

Rinse your skillet and wipe dry. Return to medium heat and add chopped bacon. Cook bacon until the edges start to brown (about 5 minutes), then add sweet potato and continue cooking another 10 minutes.

Add salt, pepper, and cinnamon then add red bell pepper. Cook another 5-7 minutes until red bell pepper is soft and the sweet potatoes are cooked through. Add the chorizo back in and stir to combine.

Make 4 &quot;wells&quot; or holes in the hash and crack 4 eggs, one in each well. Cover and cook until the whites are cooked.

While the eggs are cooking, combine tomato and sour cream in a food processor to combine. Set aside.

Once the whites of the egg are cooked, top with mozzarella and place lid back on top until the cheese is melted. Serve hot and top with avocado slices, green onions, and sour cream topping.

The perfect use of that leftover steak that is too small to make an entire meal out of, but too good to go to waste! The best hash I have EVER had. So easy, and so satisfying!
