45 Healthy Breakfast Ideas - Breakfast Sandwich

eggs (large)

chicken sausages

onion

bell pepper (finely chopped)

kale leaves

tbsp oil (for frying)

milk

tsp baking powder

whole wheat burger thin buns (English muffins or bagels)

any cheese

Salt (to taste)

Cooking spray (I use Misto)

Preheat oven to 375 degrees Fahrenheit and spray large 16 x 11 rimmed baking sheet generously with cooking spray.

Veggies: Preheat large skillet on medium heat and add oil. Add onion and saute for 3 minutes, stirring occasionally.

Then add bell pepper and saute for another 3 minutes.

Add kale or spinach, a pinch of salt and pepper, and saute for 1 more minute, stirring occasionally.

Eggs: In a large bowl, whisk the eggs, milk, baking powder, a pinch of salt and pepper.

Add cooked veggies, sausage and combine with spatula.

Pour egg mixture onto previously prepared baking sheet moving sausage and veggies around to even them out. Bake uncovered for 25 minutes.

Remove eggs from the oven, loosen them up from the edges with spatula and cut into 12 squares (I use same spatula). Then gently separate squares from the baking sheet on the bottom.

Assembly: Cut 12 pieces of parchment paper 1 inch wider than a bun. Cut 12 pieces of aluminum foil twice wider than a bun. Place egg on the bottom part of bun, top with cheese and then top part of bun. Wrap tightly first in parchment paper followed by aluminum foil.

Reheating: Option #1 (crispy): Remove wrapping and bake in preheated oven to 425 degrees F: fresh - 10 minutes, frozen - 15-20 minutes. Option #2: Place wrapped sandwich onto preheated panini press and cook for 10 minutes - if fresh, 15 minutes - if frozen. Option #3: Remove foil and microwave in 45 seconds increments. Microwaves vary, so you will have to experiment how long. Option #4 (crispy): Bake uncovered in a toaster oven – watch closely for time as ovens vary.

So much better than I expected! I had to flip it to cook it a tiny bit on the other side. We put this over a Southwest chicken bowl we made. Delicious.

i put a piece of crumbled bacon in the ring, then add pepper jack, then the egg. Bake until the white is just set. so yummy

was great, changed a few things: beat my eggs 1st and seasoned w/Adobo w/ pepper before pouring inside of the bell pepper. Garnished with parsley but then I wrapped it in 2 slices of bacon! So DELICIOUS

Process rolled oats in a food processor or blender into a fine flour. Pour into a big mixing bowl.

Add baking powder to mixing bowl and mix well.

Add the rest of the ingredients into blender and blend until smooth. Add mixture to mixing bowl and mix well until no lumps of flour remains.

Heat up a non-stick frying pan over low heat. Add a ladle of batter and cook for 2-3 minutes, flip, and cook the other side for 2-3 minutes. Repeat until all batter is used up.

Stir

Stir together chia seeds and milk in a bowl. Let the chia seeds sit for 10-15 minutes, then give them another stir.

Chill

Place in the refrigerator for at least 3 hours or overnight to chill and gel up.

Cook and Mash

Make the blueberry puree by adding one pint of blueberries and one tablespoon of honey to a small pot on medium heat. Cook for 10 minutes, stirring frequently and use the back of a spoon to mash the blueberries up and break them down. 

Store and Chill

Transfer the puree into a storage container and let it chill in the fridge.

Assemble

To assemble, add half of the chia pudding to a bowl. Top with about 2 tablespoons of blueberry puree and 2 tablespoons of almond butter. Then garnish with fresh berries and pistachios.

In a large/wide bowl, whisk to combine egg, milk, cinnamon, stevia and vanilla extract.

Slice bread into halves (so it's in the shape of a triangle).

Heat up oil in a non-stick skillet over low heat.

Dip one piece of bread into egg mixture for 1-2 seconds on each side, and transfer to skillet immediately. Cook for 1.5-2 minutes on each side or until golden.

Repeat steps for remaining slices of bread.

Plate up your French toasts and top them off with yogurt, fruits and maple syrup (if using). Enjoy!

In a mixing bowl, add all of the ingredients (except the oil/butter) and mix until fully combined.

Separate ground beef mixture into 6 equal parts, roll into a tight ball, and press into a patty shape to about 1/2 inch thick.

Add oil/butter to a large skillet over medium heat.  Place patties into the skillet and cook on each side until fully cooked through and browned around the edges.  *Feel free to cover with a lid to help it cook faster.

Place a paper towel onto a large plate.  Once the sausages are done, transfer them to this plate to allow the paper towel to soak up any excess grease.
