Girl, these were delicious. But 6oz of pork rinds is a ton, (would be more than 2 bags of the Epic Sea Salt Pepper flavor) so I used about a cup (~1oz) in the food processor + 1TB coconut flour to coat the full pound of shrimp. Convection baked to perfection.

These little mini cookies are simple to make and delicious.  With minimal ingredients need and minimal baking time.  These are sure to cure your sweet tooth.

Keto Magic Cookies

TB coconut oil Solid (Solid do not melt)

Tbsp unsalted butter (softened)

Tbsp erythritol (sweetener I used confectioners)

sugar chocolate

coconut flakes (Unsweetened)

pecans (chopped)

tsp vanilla extract

Preheat oven to 350F, and  place a silicone mini muffin tin on a large baking sheet.

In a large bowl stir coconut oil, butter, sweetener, vanilla extract,and egg yolks. Beat briefly until combined.  Mix in chocolate chips, coconut, and nuts.

I used a small spoon and got 24 cookies in my mold, or you can use an 8x8 baking dish.

Bake 12-14 minutes until light golden brown. Do not remove these for at minimum 30 minutes. They need to thoroughly cool before removing or slicing.

This Low Carb Roasted Almonds recipe makes deliciously salty, crunchy almonds, with a light smokey flavor. They are the perfect low carb snack!

Low Carb Baked Almonds - Roasted Smokey Flavor

½ cups Almonds (raw)

Salt

Liquid Smoke

Water

Avocado Oil

Preheat your oven to 175C/350F. Line a large baking sheet with parchment paper and set aside.

In a small bowl mix together the salt, liquid smoke, and boiling water. Stir until as much of the salt is dissolved as possible.

Add the almonds to a large bowl and pour over the salt mixture. Mix well to ensure all the nuts are coated. Leave to sit for 2 minutes.

Pour the almonds onto your prepared tray and spread out into an even layer.

Bake your almonds for around 15-20 minutes total. Give them a stir after about 8 minutes, and another stir every 5 minutes until nicely roasted. The check doneness, remove a nut and cut in half, the center should be a very light brown.

Remove the nuts from the oven and pour into a heatproof bowl. Drizzle over the avocado oil, and sprinkle with a couple of pinches of fine salt. Stir well to ensure all the nuts are coated.

Leave to cool completely, the almonds will soak up the oil as they cool.

Once cool, enjoy as a snack, or store in an airtight container!

Low Carb Baked Almonds Recipe Roasted to Perfection - Keto Snack

Cocoa cinnamon roasted almonds are a healthy, lightly sweet and salty snack that is simple to prepare.

Cocoa Cinnamon Roasted Almonds

almonds (whole)

coconut oil

sea salt

sugar

cocoa powder

Preheat oven.

Preheat oven to 375 F, and line a baking sheet with foil or parchment paper.

Bake almonds.

Place almonds on a sheet and bake for 7 to 10 minutes until just lightly toasted. Remove from oven to cool.

Heat oil in skillet. Add ingredients.

In a large frying pan over medium heat, melt 2 tbsp coconut oil. Add to coconut oil: 1 tsp cinnamon, ½ tsp sea salt, and 1 tbsp granular sweetener. Melt and stir together until combined and sweetener is melted into oil. Turn off heat.

Add toasted almonds.

Add toasted almonds to the frying pan and stir to coat with cinnamon mixture.

Saute and coat.

Once almonds are coated, return them to the lined baking sheet.

Sprinkle with sweetener.

Sprinkle almonds with the other 1 tbsp erythritol sweetener.

Sift cocoa powder over almonds.

With sifter or fine mesh strainer, sift cocoa powder over all the almonds.

Cool.

Preheat your oven to 150C/300F. Line a large cookie sheet with parchment paper and set aside.

Add the frozen cheddar to your food processor and pulse until it has broken down into small pieces.

Place the egg whites and cream of tartar into your stand mixer and whisk to stiff peaks.

Fold in the cheese, almond flour, and salt.

Gently scoop into a piping bag and pipe 1-inch tubes onto your prepared cookie sheet.

Bake for 30 minutes, until the cheetos are firm to the touch.

Turn the oven off and leave the door slightly ajar to dry the cheetos for 40 minutes.

Remove from the oven and enjoy warm, or allow to cool completely before storing in an airtight container.

Lay the prosciutto slices on a rimmed baking sheet lined with parchment paper so that they don't overlap, curling the edges like a nest so they don't get too brown.

Bake until the slices start to shrivel and turn golden, 10 -12 minutes. Keep your eye on it, as the prosciutto can go from crisp to burned quickly.

Combine. Melt unsalted butter (2 tablespoons) in a large heat-safe bowl. Stir in almond flour (1 1/2 cup), salt (1/2 teaspoon), black pepper (1/4 teaspoon), xanthan gum (1/2 teaspoon) and water (1/4 cup), and knead until fully combined.

Keto Crackers - Step 1

Shape. Form the dough into 4 small balls, and press each into a disk. Roll each disk between 2 pieces of parchment pepper until 1/8&quot; thick, or thinner. Remove the top sheet of parchment and sprinkle seasoning on top. Return parchment paper to the top, and roll 1 more time to press the seasoning into the dough. Cut the dough into squares using a pizza cutter (or ravioli cutter).

Keto Crackers - Step 2

Microwave on high for 60 seconds. Flip the crackers and break them apart. Return crackers to the microwave, and microwave on high for 20-second intervals, until you reach your desired crispiness.

Keto Crackers - Step 3

Microwave Method (Crispiest+ Easier):

Prep. Preheat oven to 350 F.

Combine. Melt butter in a heat-safe bowl. Stir in the almond flour, salt, pepper, xanthan gum, and water, and knead until fully combined.

Bake. Place parchment paper and cut crackers on a baking sheet and bake in preheated oven for 8 minutes. Break apart the crackers and flip them. Return to the oven for another 8 minutes, or until the crackers are golden brown.

Oven Method (Crispier+ More Labor Intensive):

These simple Keto Maple Pecan Fat Bombs are a great fall-inspired treat. Just melt, mix, then left in the fridge to firm up.

Place all ingredients except the pecans into a small saucepan over low heat.

Whisk together until combined, then remove from heat. Allow to cool for 5 minutes.

Pour into a small heatproof dish lined with parchment paper.

Sprinkle over the pecans then put in the fridge to chill.

Cool for 1-2 hours until set firm.

Cut into squares and enjoy.

In a bowl, add the butter, cream cheese, and coconut oil. Beat with your hand mixer until smooth and well combined.

Chill the mixture for 1 hour, or until firm.

Using a small cookie scoop to make tablespoon-sized balls and place onto a lined cookie sheet. You can leave the balls like this or roll by hand into rounded shapes.

oz Erythritol

Heavy Cream

Put the cream cheese, vanilla and erythritol in a kitchen aid or put in a bowl and mix with a hand mixer on low speed for 2 minutes, pausing to scrape down the sides of the bowl with a spatula, so as to achieve a smooth consistent texture.

Add half of the Heavy Cream and mix for another 2 minutes. Let the bowl sit for 3-5 minutes as erythritol in its granulated form requires a little extra time to dissolve.

Add the other half of the Heavy Cream and mix on medium speed for 3 minutes until the mixture is thick with firm peaks.

Gently spoon the mixture into a piping bag and pipe into mini cupcake liners. Set in the fridge for at least 1 hour before enjoying.

Cheesecake Fat Bombs Recipe - Creamy Vanilla - "Easy to Make Keto Snack"

With a fudge-like texture, and a dark chocolate flavor, these homemade keto/low carb brownies live up to the title. They truly are the best we&#39;ve ever tasted! Hard to believe they&#39;re only 6 net carbs per brownie.

Best Keto Fudgy Brownies

tbsp unsalted butter (1 stick)

oz 85% cocoa dark chocolate (Lindt Excellence)

granulated sugar replacement (truvia Sweet Complete; Swerve)

eggs (room temperature)

cocoa (Dutch process)

tsp pure vanilla extract

salt

almond flour (blanched)

Preheat the oven to 350°F. Lightly butter (or use cooking spray) bottom and sides of an 8-inch square pan. Next, line with parchment paper, leaving a 2&quot; overhang on sides for lifting cooked brownies from pan. Using a double boiler or a heatproof bowl placed on top of a pot of simmering water, melt butter and chocolate pieces and stir until smooth. Remove from heat.

Stream in sugar substitute while whisking until combined. Add in eggs, one at a time, whisking well after each addition until completely incorporated. The texture should now appear smooth. Whisk in cocoa, vanilla and salt. Gently fold in almond flour until combined. At this point you may add in ½ cup chopped pecans for 0.22 additional net carbs per brownie.

Spread batter evenly into prepared pan. Bake 35 to 40 minutes on middle rack. 35 minutes was a perfect bake in our oven, but since individual ovens vary, you may want to test a few minutes earlier for doneness by inserting a toothpick into the center of the brownies. If the toothpick is wet, return to oven. A perfect bake is when the toothpick retains a few moist crumbs. Do not over-bake as the brownies will continue to cook while they are cooling.

Cool completely in pan on wire rack. Then place pan in refrigerator until chilled throughout (about 1 hour). Remove parchment before slicing into 9 squares. This cooling is necessary to produce clean edges when slicing keto baked goods.

These keto meringue cookies make the perfect sugar-free alternative to the classic meringue recipe. What is more, they are insanely easy to make, require only four simple ingredients, and are low-carb: one meringue cookie has only 2 grams of carbs.

powdered monkfruit sweetener

tsp cream of tartar

lemon juice (freshly squeezed)

natural food coloring dye (optional)

Line a baking sheet with some parchment paper and preheat your oven to 220 degrees F.

Place the egg whites into a bowl and, using a hand mixer, beat until stiff peaks form. In a separate bowl, mix the cream of tartar with powdered sweetener. Add a spoonful of the mix at a time add it into the egg whites while continuing to beat at high speed.

Add the lemon juice (and food coloring if you want) beat for a few more seconds.

Place the mixture into a piping bag and pipe out some of it onto the baking sheet into cookie-sized shapes. Place the baking sheet into the oven and bake the meringues for 45 minutes.
