Chocolate Chip Granola Bars - Snack Recipes - Weelicious

These chewy oatmeal cookies are soft, packed with texture, and have a delicious caramel flavor with a hint of cinnamon.

Chewy Oatmeal Cookies

unsalted butter (softened)

white sugar

brown sugar (packed)

tsp vanilla extract

tbsp honey

all-purpose flour

cinnamon

tsp baking soda

tsp salt

quick oats*

oats*

Preheat the oven to 350F degrees. Line baking sheets with parchment paper or silicone baking mats.&nbsp;

In a large bowl beat together the butter and sugars until fluffy.&nbsp;

Beat in the egg, vanilla extract and honey. Scrape down the sides of the bowl as necessary.&nbsp;

With the mixer on low speed carefully beat in the flour, cinnamon, baking soda and salt.&nbsp;

Mix in the quick oats and large flake oats.&nbsp;

Form the dough into balls about 1 to 1.5 tablespoons in size and place 2 inches apart on the lined cookie sheets.&nbsp;

Bake 1 cookie sheet at a time in the middle rack of your oven for 9-11 minutes, or until the tops look just set.

Cool the cookies on the baking sheet for at least 5 minutes before transferring to a wire cooling rack and continue cooling.

Warm and comforting, this quick and easy microwaveable oatmeal is perfect for a chilly morning!

Cinnamon Coffee Microwave Oatmeal

water ((or use milk

instant coffee ((use regular or decaf))

sugar

Combine all ingredients in a large microwaveable bowl.

Microwave on high for 2 minutes. Watch carefully during the whole cooking process in case the oatmeal starts to boil over.

Stir, and microwave for another minute.

Test the oatmeal for thickness. If you would like it a little thicker, keep microwaving at 30 second intervals.

Oatmeal will also thicken a bit upon standing.

I used to rely on instant oatmeal packets, but then I realized that making oatmeal from regular oats is really not that much more effort. This recipe for Cinnamon Coffee Oatmeal is one of my favorites! Warm and comforting, this quick and easy microwaveable oatmeal is perfect for a chilly morning!

Chocolate baked oats packed with chocolate chips and a boost of protein powder are the cake-like breakfast treat you need to make this week!

Chocolate Baked Oats with Protein Powder

c. Old-Fashioned Oats

⅓ c. Non-dairy Milk

Banana

¼ c. Chocolate Protein Powder

Baking Powder

Eggs

Vanilla

Tbsp. Cocoa Powder

Tbsp. Honey

Salt

Tbsp. Chocolate Chips

Preheat the oven to 350°F. Spray two 10-oz ramekins with non-stick spray and set aside.

Add oats, non-dairy milk, banana, chocolate protein, baking powder, salt, eggs, vanilla, honey, and cocoa powder to a blender and blend until smooth.

Stir chocolate chips into the blended batter and pour into the ramekins. Top with additional chocolate chips if desired.

Bake for 30 minutes until entirely baked through.

Remove from the oven and allow to rest 5 minutes before scooping in!

Sweet and Sour Meatballs

brown sugar (depending on how sweet you want the sauce)

apple cider vinegar

yellow mustard

barbecue sauce (my favorite homemade version here)

Worcestershire sauce

rice

lean ground meat (see note)

quick oats or old-fashioned oats that have been lightly pulsed in a blender

eggs, slightly beaten

onion

milk

salt

pepper

Preheat the oven to 350 degrees F.

For the meatballs, combine all of the ingredients...

For the meatballs, combine all of the ingredients and mix well. Form into about 12 meatballs (right around 2-inches each). Place in a lightly greased 9X13-inch pan.

Pour the sauce over the meatballs and bake...

Pour the sauce over the meatballs and bake for 30 minutes or until the meatballs are cooked through and the sauce is slightly thickened.

Serve over hot, cooked rice, if desired.

Pressure cooker oatmeal is an easy breakfast! The best Instant Pot oatmeal is made with rolled oats, toasted until fragrant then cooked for just 3 minutes. 

Easy Instant Pot Oatmeal

unsalted butter or coconut oil*

oats

2% milk or almond milk

water

Toppings: Milk, maple syrup, banana, toasted walnuts, etc.

Turn on Saute mode and add the butter to the Instant Pot. When it is heated, add the oats and toast for 3 minutes, stirring often, until fragrant. Add the milk, water, salt and cinnamon.

Cook on High Pressure for 3 minutes

Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time. Note that it takes about 4 minutes (or 10 minutes, if the recipe is doubled) for the pot to “preheat” and come up to pressure before it starts cooking. During cooking, avoid touching the metal part of the lid.

Quick release

Vent the remaining steam from the Instant Pot by moving the pressure release handle to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. Open the pressure cooker lid and stir the oatmeal. Serve immediately with desired toppings.

Molasses Bread {Outback Knock-off}

water (about 110 degrees)

instant yeast

+ 1 tablespoon unsulphured molasses

(natural cocoa powder)

oil (see note)

honey

vital wheat gluten

white whole wheat flour

butter (melted)

In the bowl of an electric stand mixer fitted with the dough hook (or in a large bowl with a wooden spoon if powering through this by hand), combine the water, yeast, molasses, cocoa powder, oil, honey, salt, gluten (if using), and 2 cups of the whole wheat flour. Mix until combined.

With the mixer running, slowly add the rest of the whole wheat flour. Start adding the white flour gradually until the dough pulls away from the sides of the bowl. Knead for 5-7 minutes (about 10-15 if kneading by hand). The dough should be soft and slightly tacky but shouldn't leave a lot of residue on your fingers if you grab a piece.

Turn the dough into a large, lightly greased bowl, cover with greased plastic wrap or a light towel, and let rise until doubled, 1-2 hours.

Lightly punch down the dough and divide into three equal pieces. Form into tight oval loaves and place on parchment-lined or lightly greased baking sheets (I fit two loaves on one large, rimmed 11X17-inch baking sheet and the third loaf on another baking sheet). Lightly cover with greased plastic wrap or a light towel and let rise until puffy and doubled in size. Optional: right before baking, using a very sharp razor, knife or bread-slashing lame (I use this one from King Arthur Flour), cut three deep slashes in the top of each loaf.

Preheat the oven to 375 degrees F. Bake the loaves for 25 minutes. Remove from the oven and lightly brush with about a tablespoon of butter. Sprinkle with the oats and bake for another 5-7 minutes.

The Best Blackberry Crisp

old-fashioned or quick oats (I prefer the texture of quick oats here)

butter,

blackberries

lemon juice

In a medium bowl, whisk together the oats, flour, brown sugar, and salt.

Add the butter and cut it&nbsp;into the dry ingredients with a pastry blender or a couple forks until the mixture is crumbly and the butter is evenly cut in. Set aside.

In another bowl,&nbsp;add&nbsp;the blackberries, sugar, flour and lemon juice. Stir until combined.

Lightly grease a 9X13-inch pan and spread the fruit mixture on the bottom.

Sprinkle the crisp topping evenly over the top.

Bake for 45 minutes until the fruit is bubbly and the crisp topping is golden (add time, if needed).

Remove from the oven and let the fruit crisp rest for 10-15 minutes before serving (the fruit layer&nbsp;will thicken as it cools). Serve warm or at room temperature with ice cream (or lemon frozen yogurt!) or sweetened, whipped cream, if desired.

Thin and Crispy Oatmeal Cookies

baking powder

baking soda

butter (I use salted) (softened but still slightly cool)

vanilla extract

Adjust an oven rack to the middle position and heat the oven to 350 degrees. Line large, rimmed baking sheets with parchment paper and set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large bowl (of a stand mixer or with a handheld electric mixer), beat the butter, granulated sugar and brown sugar together until just combined, about 20 seconds. Increase the mixer speed to medium and continue to beat until light and fluffy, about 1 minute longer. Scrape down the sides of the bowl with a rubber spatula.

Add the egg and vanilla and beat on medium-low until well mixed, about 30 seconds. Scrape down the sides of the bowl again. Add the flour mixture and mix until barely incorporated, 10-20 seconds. It&#39;s ok if there are a few dry spots.

Gradually add the oats and mix until well-combined, about 30 seconds to 1 minutes. If needed, give the dough a final stir with a wooden spoon to ensure that no flour pockets remain and that the ingredients are evenly distributed.

Scoop out about 2 tablespoon-sized mounds of dough and roll them to form balls. Place the cookies about 2 1/2-inches apart on the baking sheet(s) - about 8 cookies per sheet. They will spread quite a bit. Lightly press each cookie to about 3/4-inch thickness (I found after baking one sheet of these that I didn't need to press them at all so use your best cookie judgment).

Bake 1 sheet of cookies at a time until the cookies are golden brown, edges are crisp, and centers are still very slightly soft, 13 to 16 minutes. Cooling the cookies completely on the baking sheet will yield crispier, more perfect cookies.

Classic Oatmeal Chocolate Chip Cookies

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper, silicone liners or lightly grease with cooking spray.

In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with a handheld mixer, cream together the butter and sugars until light and fluffy, 1-2 minutes. Add eggs and vanilla and beat until creamy and well-combined, 1-2 minutes. Add baking soda, baking powder, salt and mix well. Add flour, oatmeal and chocolate chips. Mix until no dry streaks remain (don't go crazy; just mix until evenly combined).

Scoop the cookies into balls (about 2 tablespoons each) and place a couple inches apart on the baking sheets.

Bake at 350 degrees for 9-11 minutes.

Cups Old Fashioned Oats

Scoops Protein Powder

Cup Maple Syrup

Cups Dark Chocolate

Mix dry ingredients (oats and protein powder) in a large bowl. Mix throughly, more than you need to, trust me, dry ingredients need more love to integrate.

Mix peanut butter and maple syrup in a Pyrex measuring cup and microwave in 15 second cycles until you can whisk them together. Then whisk them together.

Mix the wet ingredients into the bowl with the dry ingredients. Mix with a spatula until no pockets of dry powder or oats remain.

Press into an 8x10 glass pan lined with parchment by hand until an even layer is spread.

Warm chocolate in a double boiler or in a Pyrex measuring cup in the microwave (15 second cycles until melted throughout).

Pour warm chocolate onto cool bars, refrigerate until chocolate is fully set.

Remove from pan, remove parchment. Using a knife,trim the edges until an even rectangle forms. Cut into 12 even bars.

These sturdy, nutrient-dense burgers are quick, easy, and protein-rich! Top them with BBQ sauce or your own favorite toppings.

Black Bean Walnut Burger (Vegan, Oil-Free!)

walnuts

black beans

yellow onion, diced

tomato paste

Tbsp. tamari

Dijon mustard

onion powder

cumin

garlic powder

smoked paprika

Whole grain buns (GF if desired)

BBQ Sauce

Lettuce, onion, tomato, etc.

Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.

Prepare patties: In a large food processor, add walnuts and oats. Pulse until a medium-fine crumble forms. Dice onion and add to food processor. Then add all other seasonings &amp; ingredients except black beans. Pulse/blend to combine, scraping down sides if needed.

Add beans: Rinse and drain black beans. Gently pat dry with a paper towel to remove excess moisture. Add beans to food processor. Pulse a few times to incorporate. (The mixture will be very dense, and it&#39;s okay to leave the beans chunky.) It takes a little patience, and you may have to stop a few times to scrape down the sides with a spatula to help encourage the mixture. (If you don&#39;t think your food processor can handle this, slightly mash the beans in a separate bowl. Then add the pulsed walnut/oat/spice mixture to the mashed bean bowl and stir well to combine.)

Shape: Carefully remove the S-blade from your food processor. Then scoop out the mixture into 5 even balls. Shape into patties, and place on lined baking sheet. (For me, the mixture is about 1.4lbs. So I measure out five heaping &quot;quarter pounders&quot; of .28lbs each.)

Bake: Place in oven and bake for 15 minutes. Flip the patties, then bake 15 more minutes. Let rest 5-10 minutes before serving to firm up even more if desired. Assemble burgers on buns topped with BBQ sauce or other toppings of choice.
